I made some Tempeh Fajitas today after my mom recommended them! Marinated tempeh, grilled onions and peppers, avocado, salsa, and Daiya cheese! :) It was a little sour for me, but otherwise SO good! Will make again! :)

Smokey sweet potato wrap turned into a taco! Sweet potato, garlic, onion, red pepper, tempeh, topped with avocado and daiya cheese! So much work but worth it! Recipe found on Connoseurus Veg!

This picture is SO blurry, but yesterday I got a piece of jewelry from Villalobos Pitbull Rescue! It was so nice of Tia Torres to add a piece of signed artwork to go along with it. This piece means a lot to me because I bought it on my late sister’s birthday. She and I were a lot like the sisters on the show Pitbulls and Parolees, very close and animal lovers above all else. I will treasure this piece forever. :)

My mom’s/best friend’s Birthday means banana cupcakes with peanut butter frosting! I love making these every year- fairly easy and very delicious! These were adapted from the Banana Split Cupcakes with the “Elvis” variation from “Vegan Cupcakes Take Over the World” by Isa Chandra Moskowitz and Terry Hope Romero, certified vegan geniuses in my opinion.

The kumquats I owned tasted so sour I had to brush my teeth after eating just ONE! So I decided to candy them! They taste SO good, and the process made a delicious simple syrup too! I see pancakes and waffles in my future! :)

In honor of this Trans Day of Visibility, I just want to say that any and all are welcome on my blog. This is a safe space for people of all races, ethnicities, religions, sexual orientations, and genders. I will respect you and everything you stand for to the best of my abilities. I will not post any hate speech or problematic images, and will use language that is respectful to everyone(well... except for swearing- never said I was a saint! Ha!).

That being said, and I am directing this especially towards the trans community today, I am not perfect. I have never actually met a trans person before, or at least someone I have known to be trans. If I slip up, if I use an incorrect pronoun to describe you, or post something that in any way disrespects the trans community, don’t be afraid to message me about it. I don’t listen to trolls or bullies on my blog, but I do listen to people who have been hurt by my own content, and I will correct whatever needs to be corrected, without retaliation or aggression.
