Hi! Vegans in the UK?
I’m taking a huge step and trying out selling some of my homemade and developed recipes, starting off with vegan brownies and cookies. For anyone looking to try vegan food which isn’t recognisably vegan or forcing you to eat flax seeds- sometimes it’s nice to eat vegan food that doesn’t feel like you’re missing out.

hey just wanted to ask if the flaxseeds in your bananabread recipe are meant for making flax eggs🤔i’m gonna try to make it tomorrow:)
Hi! Did you make it? Sorry if my response is late, the flax was just for health benefits, I didn’t make a flax egg. The oil and yogurt was to replace egg ☺️

Potatoes for breakfast ☺️
-
Boiled new potatoes until soft, then added to a pan with some sesame oil. In another pan, softened onion and cooked jackfruit with some garlic. Served with salad and added sriracha 🙈 So yummy.

My first meal that I’ve cooked so far in France! I had the mock chicken fillet, breaded and filled with ham and cheese, with red peppers and lettuce. Really delicious!

Some of the vegan options I’ve found so far in France ☺️ - - I thought (and was prepared for the idea) that coming to France I’d be very stuck for eating options, but going into one of the biggest shopping centres I found that there was a whole isle full of vegan things. More so than the amount I’ve ever seen in the UK 😅😅 But that’s alright. I found all of these so far that I’m really excited to try!

Went past a LEON takeaway place at a service station on the way to France and finally thought I’d try it~ - Had so many vegan options, I had the meatless meatball set (literally the most delicious vegan meal I ever had no exaggeration) and this rose and pistachio baked doughnut which was so so so good. - - I always avoided trying the place thinking I was saving it for an occasion haha but I’m glad it finally came.
- The doughnut, which was 310kcal, was so cake-like and soft. It wasn’t overly sweet so the icing on the outside was welcome. The rose flavouring came from the outside pink-y things which were crystallised and lovely. There wasn’t too much taste from the pistachio. The doughnut tasted mostly of nutmeg and slightly of cinnamon. I really liked it 🤗

Vegan Brownies- The Easiest Way Ever. 🍫🍫🍫 - Obviously not very healthy, but if you want to vegan-ify brownies without buying loads of specialty ingredients this is the easiest way for sure. - - I got a Betty Crocker brownie mix (the ingredients as they are are fine for vegans) and then made it as directed by the packaged instructions. However, I used Orgran vegan egg replacer for the eggs. - For this specific recipe I used their instructions to replace two eggs, which produces a very chewy batter. I like that, but if you use half that they’ll be more cakey. - - I cooked these on Gas Mark 6 for 35 minutes to get a very very nice crunchy top. - - Oh and to improve it a little bit I threw in some roughly chopped vegan chocolate which was a really welcome addition. Excuse the knife mark in the middle of the brownies where I was checking if they were done haha 😅

Vegan Black Bean Noodles- - Couldn’t ask for a better lunch than this here really. Used BareNaked protein noodles mixed with some Butternut Squash noodles for some variety. Added Jalapeños, Vivera-Pulled Veggie, Sriracha and Blackbean Sauce. Also, some Mushrooms and Spring Onions. -

A simple Miso soup from when I was on holiday. - Did anyone notice the pictures of pizza that uploaded like 10 times from my Instagram? Wow 😅 - I really like Miso soup because I think once you have the base down it’s really customisable. - - This is a pretty basic version with soft tofu and kale, but I just tried a version with chillis and sriracha that was really good! Recommend people trying sriracha in soup 🍜

Chocolate Stuffed Vegan Pancakes 🥞🍫 - - The same as my previous vegan pancake recipe but this time instead of chocolate chips I lay down a spoonful of batter, then a teaspoon of vegan chocolate spread (any would do, or a square of chocolate) and then covered that with more pancake batter. - They look super indulgent and turned out really nice. Obviously they don’t need any sauce or syrup added but I suppose if you wanted to then you could do so still 😁 -
Recipe: • 350g Self-Raising Flour • 1tbsp Sugar • 1tbsp Baking Powder • Pinch of Salt • 2Tbsp of Oil + More for frying •Jar of Vegan Chocolate Spread

Very Improvised Biscoff Brownie Bites as I try to get rid of everything in my kitchen, basically some vegetable oil, soya milk, baking powder, cocoa powder, flour, biscoff spread, peanut butter and coconut sugar. I didn’t write anything down..😅 Alsoooo- I didn’t put much Biscoff spread in the batter but put it in the middle of the batter before baking- (between the first and last layer). They turned out really good aha.

It’s only been three days but I already have some things to say about eating raw vegan- the main one being how thankful I am for raw vegan snacks from Holland & Barrett, Boots and Sainsbury’s. Not including the Deliciously Ella ball. They add a lot of necessary calories missed when only eating raw foods which is really helpful especially when working out a lot. Special mention to the Chocolate Goji Berries in the top photo from H&Barrett. So GOOD! Highly recommend anybody trying these. Also loving the Livia’s Kitchen products mainly the cookie dough and chocolate brownie. Absolutely delicious and unlike the nakd bars are something I wouldn’t be able to recreate myself. Yum!

Dinners on days 1 and 2 of being raw vegan 🙈- Left: Spinach and Lettuce leaf cups with sliced carrot and red peppers inside- mixed with some red pesto (homemade). With lemon juice and sliced garlic. In the small bowl is shredded courgette with olive oil and chilli peppers. So delicious! -125kcal Right: Courgette noodles in peanut sauce (homemade and not roasted) with carrot, white onions, chilli, bok choy and spinach. -110kcal Both really nice. The way they reflected usual dishes was an easy introduction to raw veganism- which there may be a lot of on here over be next few months hopefully haha.. 😁

Vegan Choc Chip ~🍌 Bread~ 🍌🍞~ I’m SO happy with this, one of my most favourite things I’ve made. ~I finished my exams today and for some reason the first thing I wanted to do was buy a loaf tin and make 🍌 bread 😁 I had never tried it before! - - I was going to look at a recipe but then I didn’t want to have to go buy ingredients so I just made one up with what I had and it went so well!
For the recipe, I used: • 225g Plain Flour • 44g Coconut Sugar • 66g (Vegan) White Sugar • 6g of Flaxseeds • 17g (3tsp) Baking Powder • 40g Vegetable Oil • 100g Alpro Soya Yogurt • 260g Ripe 🍌 • 12 Squares Dark Chocolate-
- It was really simple, being a student I don’t really have mixing equipment so I had to mix it all in two bowls which was the only problem 😂. I also blended the 🍌, yogurt and oil together to make it easier to mix, but you could just press them the bananas with a fork. Then I poured it into a 2lbs Loaf Tin. - - Bake at 200oC for 50 minutes, cover top with foil if it’s browning too fast! -Each slice is 150kcal, I really hope somebody tries this recipe, it’s really good and im super happy with it. To be more calorie specific, 100g = 327kcal.
As you can see I had it toasted with biscoff biscuit spread which was —>🤤
