Nothing like a warming and healthy fall themed lunch 🍁🍁 These are @frommybowl’s rosemary lentils with beets and sweet potato and they’re absolutely amazing! I’ve made this like 5 times already and I find that my favorite thing to do is replace the sweet potato with butternut squash and use the whole mixture to stuff the squash skin, it’s super yummy!

Baked mini stuffed taco boats 🌮🌮
These were my lunch for today - I wanted something quick but I also didn’t feel like having the same old peanut butter zoodles I’d been having for like a week so! I quickly sauteed some veggies (🌰🌽🌶️ and 🍄) and threw in some white beans, cumin and salt. Then I stuffed these taco shells from @oldelpaso I got last week and popped them in the oven at 220°C for like 20 minutes while I got rid of the huge pile of dishes in the sink (oops).

Pumpkin Spice Baked Oatmeal
'Tis the season for everything pumpkin spice and I couldn't be happier. This is what I've been having every day for breakfast and it's quick, easy and warming. If you're not like... Completely desensitized to sugar, you might want to add some maple syrup or something.
Ingredients
200 g butternut squash (or any other type of pumpkin) 1/2 cup pumpkin puree (about 125 g)
200 g (~1 cup) non-dairy milk
1 tsp pumpkin spice
Sweetener of choice (optional and imo unnecessary)
20 g (a little less than 1/4 cup) protein powder
23 g oat bran (~1/4 cup)
Method
Bake the pumpkin for 20 minutes at 180°C (360F) if you're using the raw stuff
Blend pumpkin puree, pumpkin spice and milk in a blender or food processor
Pour mixture into your bowl of choice. Add protein powder and mix thoroughly with a spoon.
Add oat bran and mix again.
Store in the fridge overnight (optional but highly recommended if you don't want to do this in the morning)
The next morning, bake it at 190°C (375F);for 25-40 minutes (it honestly doesn't matter)

Just a final note, I personally find baked oatmeal to be extremely convenient because you can just go for a run while your breakfast cooks, which motivates you to work out in the morning. So even if you don't like pumpkin, I'd recommend finding another recipe for baked oatmeal and giving it a try!

I just made pumpkin pie almond cookie cups! And idk if there's already a recipe for something similar out there but I'm low-key gonna be pissed if there is because I probably could've followed that instead but oh well. Also they're just 76 calories per cookie cup and they're amazing and vegan and can you tell I'm excited. I mean I love anything pumpkin so I may be biased but ¯\_(ツ)_/¯

When it comes to pizza toppings, more is more am I right? I was feeling lazy so I just used two tortillas as my base, tomato sauce, some of my vegan potato cheese (recipe coming up), and topped it with peppers, black olives, mushrooms and tofu marinated in barbecue sauce (perfectly mimics bacon!).

I feel like the reason certain dog-lovers insist cats are evil is because they read their body language as if they were dogs. So here’s a very basic guide to common “mean” things cats do that actually aren’t mean at all if you know what they’re thinking.
Rolling and exposing belly- attacks you when touched Does not mean: Give belly rubs! - haha I tricked you!  Actually means: I’m playful! If you reach for my belly I’ll grab your arm and bite it because I think we’re playfighting! 
Lazily exposing belly - still attacks when touched Does not mean: tricked you again! Actually means: I’m showing you my belly because I trust you. Please don’t break that trust by invading my personal space. I might accept a belly rub if I’m not ticklish and I know you well. Snapping at you while being pet Does not mean: I suddenly decided I dislike you! Actually means: You’re petting me in a way that gives me too much restless energy. Please focus on petting my head and shoulders instead of stroking the full length of my back next time.
Is in the same room but makes no attempt to interact Does not mean:  I’m ignoring you Actually means: We’re hanging out! I’m being respectful by giving you space while still enjoying your company. Slapping/scratching your hand when you try to pet them Does not mean: I hate you! Actually means: You’ve failed to establish that we’re not playing, or the way you’re approaching me scares me. Be calmer, speak more gently, make eye-contact and blink slowly at me before you try again.

What I Ate Today - Food Diary 24/07/18
Breakfast
Vegan peanut-butter-filled chocolate pancakes (recipe in development aka a failure so far)
Finished the peanut butter granola from yesterday
Lunch
Two rice cakes with peanut butter (aka the only filling thing I could make in the five minutes I had before leaving for the mall)
A random candied strawberry my mom wanted me to try
Pre workout snack - a pack of mini oreos (lmao I know, so nutritious. But having sugar before running really helps).
Post workout snacks
3 rice cakes with peanut butter powder
An entire bag of spinach(!) with peanut sauce
A piece of dark chocolate with coconut
Some peanut butter straight out of the tub for good measure
Dinner
Rice noodles in peanut sauce
Carrots dipped in my chocolate dip
Some more coconut dark chocolate
Can you tell I have a problem with peanut butter. I don't know what it is about it but not only does it make anything instantly delicious but it also fills me up so much?? Idk.
Anyway today was a super nice day. My mom's been complaining that I wasn't spending any time with her so I decided to go shopping with her this afternoon and get some new clothes while at it. We ended up not having time to get ice cream which meh I really wanted to try this new chocolate cookie flavor but oh well, it was still fun. Best of all, she's going hiking tomorrow which means I'm home alone all day. Yas. I've been missing living alone so much since coming back from college, I just need one day to myself.
Oh side note I've been craving waffles lately and I'm thinking of getting a waffle mold instead of a waffle maker because I will be murdered if I purchase any more kitchenware (apparently the spiralizer I got last week already takes up too much space which like... true but also it's so useful??). Anyway have any of you tried those things and would you recommend them or am I better off holding off on my purchase for a while and getting a waffle maker in the future?

What I Ate Today - Food Diary 23/07/18
Breakfast
Some peanut butter granola I baked yesterday on a whim (total failure but edible) with soy milk. (lmao I had this in a rush before going to the gym to strength train because you shouldn't strength train with nothing in your body. Period.)
Finished the leftovers of my Weetabix Protein Chocolate as a post workout snack. Most likely won't be repurchasing.
Some more granola straight out of the jar because why not.
Lunch
Vegan mac 'n' cheese. I'm still working on the "cheese" part but I haven't seen this approach anywhere (could very well be wrong though) and it's the meltiest strechiest most cheese-like thing (texture wise) I have seen so far. But the flavor needs work.
Snacks
Apricots and dates dipped Chocolate dip (raw cacao powder + oat milk)
Dinner - nothing I passed out after coming back from my daily run and when I woke up it was like 4 am and like nope
I'm starting these again! I've noticed I've been stuck in a rut with my meals (literally been having the same thing for dinner for a whole week. On the bright side I've gotten really good at making it). In my defense, I've been focused on getting my room under control and my blog running (spoiler - it's not going well). Anyway I'm hoping this will force me to get a little more creative and maybe someone can get some inspo!
On a different note, I've been getting rid of my "old" clothes (they're too big on me now, although thankfully I was that person who always bought clothes a size down. Never been happier about that) and my mom has been taking most of them and like?? Dude she's like way taller than me. I get that she's lost some weight too but it kind of makes me feel like I was 'fat' before (which I was not by any means but you know what I mean). Anyway I guess it's good that she gets to have new clothes.

One of my biggest struggles once I come back home for the summer is seeing my mom's portion sizes. They are so small. And she's so much taller than me. And probably about as active. I know she has a much higher fat diet than me but it still makes me feel like I am overeating, even though I know I'm not. Plus she rarely wants to eat the food I make because it's "too carby and it makes her feel stuffed". It makes me wonder whether I should try increasing my fat intake. I mean it seems to work for her and maybe I'd feel more satiated for longer. Idk man idk

CREAMY ALFREDO NOODLES (PLANT BASED 🌱) 🍅🍝🍴 2 tbsp margarine (I used Earth Balance) ¼ cup GF flour* ½ cup hot water ½ tsp vegetable bouillon 1 ½ cup unsweetened almond milk 2 tsp Italian seasoning 1 tsp salt (more to taste) ½ tsp black pepper About 4 cups cooked pasta (may vary depending on what pasta you use) Tomato’s Fresh basil
Begin by melting butter in a saucepan over medium heat. Add flour and cook for about 30 seconds. Meanwhile stir bouillon into the hot water to make a veggie broth. Add the veggie broth to the saucepan. Whisk together. (The mixture will become very thick). Add almond milk and increase heat to medium-high. Whisk until the sauce is smooth while bringing sauce to a boil. Once boiling reduce heat and let simmer about 3-4 minutes. Meanwhile, bring a large pot of water to a boil for the pasta to be cooked in. Only cook pasta about 2/3, the outside should be tender but the inside should still be very chewy. Add salt, pepper and Italian spices to the sauce. Let sauce simmer over low heat until the pasta has cooked 2/3. Strain pasta and add to the sauce. Toss the pasta in the sauce and continue to gently fold pasta in sauce until the pasta cooks all the way. (During this time the sauce will also develop a cheesy/gooey texture just like real Alfredo) Top or fold in fresh basil and tomato’s.
*I used Bobs Red Mill GF baking flour. I haven’t tried this recipe with any other flour but I think the flour is important because it has different binders and thickeners in it that help to create that gooey texture as if it were cheesy.

Favorite Post Workout Snack - Peanut Butter Spinach
Soo some people like smoothies and don't get me wrong, I do too but sometimes I just want something a little more savory. This one's super filling, nutritious, low in calories and surprisingly high in protein (and obviously delicious!)

Prep time: 2 minutes
Ingredients
150 g spinach
2 tsp (4 g) powdered peanut butter (Do. Not. Use. PB2. It has tons of sugar. I use Peanut Butter&Co in Pure Peanut which is only peanuts and you can probably find something similar)
1 tsp ginger powder
1/2 tsp garlic powder
2 (20 g) tbsp soy sauce
1 tbsp (5-10 g) rice vinegar
Method
Put your spinach on a plate or bowl and microwave for 30-60 seconds (until it has wilted fam)
Meanwhile add the peanut butter powder, ginger powder, garlic powder, soy sauce and rice vinegar to a bowl. Mix throughly. Add water if you like your sauce thinner.
Pour the spinach onto the bowl in which you made the sauce and mix until the spinach is evenly coated.
That's literally it, enjoy!

Here’s my super yummy brunch from yesterday! Blueberry lemon overnight oats with chia seeds and some homemade hazelnut butter. Since I’ve gotten a new food processor, I’m literally making butter out of any nut I can get my hands on, it’s kind of bad tbh 😂 Anyway hazelnuts are probably my favorite nut and blueberries are my fave fruit so I just had to try them together and like, winning combo right there 👌👌

Long time no update so um, update I guess? First off, I stopped doing food logs because tbh I don't have time to type those things out and I don't feel like I need it to keep myself accountable anymore. Still at CW and still fine with that. I'm in the middle of my finals and I'm eating as well as I can manage (so basically a lot of meal prepped rice and curry).
I've also gotten really into cooking (as you might have noticed if you like... read any of my posts lmao) and I can't wait to set up a cooking blog once I'm done with finals! (looks hard af though).
Oh and I've become really good friends with this one girl who's also v much into fitness and nutrition and it's super nice to finally have someone to talk to about this stuff IRL. However, she's trying to go into modeling and I can see she's starting to obsess about her weight and overeating and idk if I should just stop talking about this stuff with her? I just don't want to encourage any unhealthy behaviors.
Last but not least, I've been trying to transition into a plant based diet for the last three months and I've come to the decision that, as the main thing for me is that I want to reduce my carbon footprint, I'll try to not purchase anything that contains dairy but I'll be more lenient about eggs (because the contribution of the egg industry to climate change is very minimal and also I can get eggs from a friend of my mom's who has a farm). At least for now. I tend to get stricter with myself the more I get into something so it probably will change in the future. Oh and I really want to post nutritionally complete meal plans for people who are looking to go plant based. Like stuff that's easy to meal prep but not boring and meets all your nutrient requirements. But idk whether to post them here or on the blog once I make it. I've even considered building an app that lets you input your height and weight, time you have for cooking and food dislikes or allergies. But that may be a little too difficult for now lmao
So yeah that's all. I know, so exciting 😂
