#I say 'inadvertently' because I've been trying to talk myself into making this pie for... #well at least since I got back from vacation #so... two weeks? #it just so happens I finally got myself to do it today #didn't even think of it until I was putting it in the oven #(was - as usual - afraid I was going to screw it up) #(and actually I have messed up at least three things so far) #(hopefully none that have led to a total failure) #(pre-cooked the crust and one side caved in) #(somehow bits of egg white got into the pudding) #(and I apparently didn't whip the whites thoroughly enough) #(so I got limp meringue) #(I do love a lemon meringue pie) #(but I've only made it myself once) #(and that was years and years ago) #(my grandma always used to make me one for my birthday 🥺) #(so it's an emotional pie) #(I hope it's alright) #(cooling now) #free life
