Great way to start prepping for the work week. This pressure cooker recipe is easy and efficient. Get 4 breakfasts out of this recipe. Sausage Egg Cheese & Spinach Sandwich (Meal Prep) @ninjakitchen Ingredients: 5 eggs 1/4 cup spinach 4 pre cooked sausage links 1 tsp olive oil English muffin 1 cup water ¼ cup cheddar cheese Directions: Spray or rub olive oil inside of a large ceramic coffee cup. Combined 5 eggs in the cup and stir thoroughly. Add spinach & sausage links (chopped in half) and stir. Add 1 cup of water to the pressure cooker pot. Pressure cook high for 20 minutes and natural release for an additional 5. Remove the cup and the egg combo onto a cutting board. Slice into 4 to 5 portions. Chicken Spaghetti Alfredo @ninjakitchen Foodi Ingredients: 1 lb. dried spaghetti 2-4 boneless, skinless chicken breasts 1 tsp salt, divided 1/2 tsp black pepper, divided 2 tbsp oil 8 tbls butter, divided 5 cloves garlic, chopped 1/2 chicken broth 1 cup milk 1 cup grated Parmesan cheese 1 cup frozen peas (thawed) Directions: Season chicken with salt and pepper. Bring a large pot of salted water to a boil. Add the spaghetti and cook until aldente, 8 to 10 minute, reserving 1 cup of the pasta cooking water, then drain the pasta. Meanwhile, heat the oil over sear medium-high heat. Add the chicken to the pot, and cook for 5 to 7 minutes, depending on thickness of chicken. Do not fiddle with the chicken, allowing a crust to form. Flip the chicken and cook for another 5 to 7 minutes or until Completely cooked through, adding more oil to the pan if needed. Remove chicken from pan and put on a plate, covering with foil and allowing it to rest for 5 minutes. Add the butter and sauté the garlic until Aromatic. Add in broth, scraping up any bits on the bottom of the skillet. Whisk in the milk and Parm and season with salt and pepper. Simmer for 3 to 4 minutes. While it's simmering, slice the chicken into 1/2" slices. If the sauce is too thick, add some of the reserved pasta cooking water, a few tablespoons at a time, to thin it out. Add the drained pasta, peas, chopped parsley, the chicken and any accumulated juices to the sauce and toss to coat. Pressure Cooker Stuffed Peppers @ninjakitchen Foodi Recipe Step 1: 1-2 lb ground beef One cup uncooked rice Half tablespoon Italian seasoning Three bell peppers 1 onion ¼ cup Bread crumbs 3 Garlic cloves 2 eggs ⅓ cup parmesan cheese Step 2: 1 tsp basil ¼ cup cheddar cheese 1 cup chicken broth Directions: Cut 3 been peppers in half. Combine all ingredients from step 1 into a bowl and mix. Stuff the halves with the step 1 mix. Add 1 cup chicken broth to the pot then place your stuffed peppers in the pot as well. Pressure cook high for 20-25 minutes high and which release. Remove from the pot and place on baking sheet and cover with cheddar cheese. Instant Pot Easy Lasagna Soup @ninjakitchen Ingredients • 1 1/2 lbs Lean Ground Beef or Sausage (or do 1/2 and 1/2) • 1 tsp Rosemary • 1 Onion, chopped • 2 tbsp Italian Seasoning • 1 tbsp Basil, dried • 1 tbsp Oregano, dried • 1 tsp Salt 1/2 tsp Pepper 3 cloves Garlic, pressed or minced • 1 (28 oz) can Crushed Tomatoes, with juice • 1 (14 oz) can Tomato Sauce • 4 cups Chicken Broth (use 1 for a thick soup) . 9 Lasagna Noodles, broken in small pieces, about 1.5" To Finish • 1 cup Mozzarella Cheese, shredded • 1 cup Parmesan cheese, grated • 1 cup Cottage Cheese* (or Ricotta) Garnish • Fresh Basil or Parsley Leaves • Parmesan Cheese Instructions 1. Turn pot on to Sauté function. When the display reads Hot, add the meat, rosemary, and red pepper flakes. Cook until you can't see any pink in the meat, stirring occasionally. Drain any fat if needed. 2. Add the onion, Italian seasoning, basil, oregano, salt, garlic and pepper. Cook for a couple of minutes, until onion starts to turn translucent, stirring occasionally. 3. Add the tomatoes, tomato sauce, pasta, broth and stir well. 4. Put the lid on and turn the steam release knob to the Sealing position. 5. Turn off cancel the Sauté function. 6. Pressure cook for 2 minutes. 7. When the cook time ends and the pot beeps, do a Quick Release of the pressure. 8. Stir the soup and separate any noodles that stuck together. Then add the Parmesan and the mozzarella cheeses. Stir well and let melt. Then add the cottage cheese. 9. Cheesy Spinach Chicken @ninjakitchen 2 large boneless skinless chicken breasts, cut horizontally 8 oz cream cheese, softened 2 cup spinach, rinsed 1 tablespoon olive oil 4 oz Mozzarella cheese, shredded The marinade: 3 cloves garlic, minced 1 tablespoon olive oil 1/2 teaspoon Italian seasoning, optional Directions 1. To prepare the Spinach chicken casserole Add olive oil, garlic, Italian seasoning, into a Ziplock bag along with 1 teaspoon of salt and teaspoon black pepper. Seal the bag and shake until mixed. Add the chicken breasts, seal and massage so the chicken breasts are covered in the marinade, set aside for 10-15 minutes while you prep the remaining ingredients. Position a rack in the center of the oven and preheat the Foodi Oven to 375°F. 2. Quickly wilt the spinach in a skillet with 1 tablespoon olive oil, set aside. (Or use canned spinach) 3. Arrange chicken breasts drained from the marinade in a baking dish. Spread the softened cream cheese over the chicken breasts and lay spinach on top of the cream cheese. Finally, sprinkle mozzarella over the top. 4. Bake the spinach chicken casserole for 20-30 minutes. Big game today so nobody's going to want to get up early enough to make breakfast before work in the morning. Try this recipe for freezer breakfast sandwiches. You can make 4 to 6 sandwiches in one quick meal prep. Meal Prep Freezer Breakfast Sandwiches @ninjakitchen Ingredients: 6-8 eggs Frozen precooked sausages English muffin American cheese Provolone cheese (Optional) Spinach Bacon Directions: 1. Add 6-8 eggs to a ceramic mug and stir thoroughly. 2. Pour one cup of water in the pressure cooker pot. Place the ninja foodi wire rack in the pot. Place the mug and frozen sausages on the rack. 3. Pressure cook high for 20 minutes and natural release for 5 minutes. 4. Remove the eggs from the mug and slice into 4 to 6 patties. Slice each of the sausages in half. Let all of the ingredients cool. 5. Build each of the sandwiches as desired. 6. Wrap each sandwich in a paper towel then wrap parchment paper around the sandwich and paper towel. Mark each sandwich with a description of the contents. 7. Place all of the sandwiches in a freezer bag and place in the freezer. 8. BBQ Turkey Meatloaf & Mashed Potatoes @ninjakitchen INGREDIENTS: Meatloaf: 1/2 cup panko breadcrumbs 1 small onion 2 large eggs 1 tbsp Italian seasoning 2 pounds ground turkey 1/4 cup BBQ sauce Mashed Potatoes: 2 cups chicken broth 5 medium potatoes 1 stick butter 1 tsp salt 1 tsp pepper Splash milk ½ cup cheddar cheese Directions: Combine the breadcrumbs, chopped onion, eggs, salt, pepper, ground turkey and mix together with your hands until the mixture holds together. Place the mixture into a bundt cake pans safe for the pressure cooker. Chop the potatoes into 1 inch cubes and place them in the bottom of the pressure cooker pot along with the chicken broth. Pressure cook high for 35 minutes then quick release. Remove the meatloaf and dump the chicken broth. Add potatoes, butter, milk, salt and pepper to a bowl and mix until desired consistency. Remove excess grease from the bundt cake pan and place the meatloaf right side up on a plate. Full the center of the meatloaf with mashed potatoes then cover the meatloaf in BBQ sauce. Protein Packed Ground Turkey Quinoa Bowl - @ninjakitchen Protein Packed Ground Turkey Quinoa Bowl is a healthy 30 minute pressure cooker one pot meal. Quinoa, meat and veggies all cook in same pot with delicious Asian flavored sauce. Prep Time: 10 minutes Cook Time: 20 minutes Total Time: 30 minutes Ingredients: 2 lb ground turkey (chicken or beef) 1 tbsp oil 1 tsp taco seasoning, low sodium 1 tsp oregano, dried 1 tsp salt Ground black pepper, to taste 1 1/2 cups Chicken broth 1 1/2 cups quinoa, uncooked 1 large onion, chopped 3 garlic cloves, grated (1 tbsp garlic powder) 1 bell pepper, finely chopped or 6 mini peppers 2 tbsp soy sauce 2 tbsp maple syrup or honey 2 cups mixed veggies, frozen 1 tsp chopped chives (garnish) Instructions: Press Saute and wait until display says Hot. Takes 3-5 mins. Swirl oil to coat and add ground turkey. Cook until no longer pink or for about 5 minutes, constantly breaking into small pieces and stirring. Add taco seasoning, oregano, salt, pepper and chicken broth. Stir to deglaze the bottom of the pot to avoid Burn. Press Cancel. Stir in quinoa, onion, garlic, bell pepper, soy sauce, frozen mixed veggies and maple syrup. Close the lid and move pressure valve to Sealing, and press Pressure Cook on high for 2 minutes. Release pressure using Quick Release method – turn pressure valve to Venting. Add chopped chives, stir and serve warm.
