It's her hair.

When she was younger, it was straight, but now it's wavy.

How?

Does she style it that way on purpose?

It's not a maturity thing, like how Harlequin's hair changed a lot when he got his full wings. Cuz that younger version is her mature form. Her wings are fully grown there. Both images are adult...

I guess so. Helbram is my favorite character in the whole series, I feel like I know him pretty well. He's not selfish at all, but he is rather insecure. He cares what other people think of him and I do think he gets nervous about being ignored or overlooked.

The first and the last headcanon are certainly bang on. He'd remind people a lot because of his insecurity, and a big party is guaranteed since he's such a social butterfly.

I don't know if he's a big eater, or if he particularly likes sweets. His favorite food is listed as "bread containing figs" which I suppose would be sweet, as any other fruit bread is. I can see him as an over indulgent type though, so maybe.

The present one seems to be kind of against Fairy nature though. They're not really materialistic like that, I don't think. I think he'd be more interested in the party and the attention than the gifts.
