It’s a twist on a classic, but the @ChefJulien’s 🌟Choux Farci ($68) is the dish to order when you manage to snag a table at the new @ClaudineRestaurant. It’s a gorgeous space, infused with a countryside charm through the panels of pressed grass by @TheHumidHouse. This rusticity carries though the menu, featuring Chef Julien’s early food memories growing up in France and recipes inspired by mum’s cooking. Traditionally a dish of leftovers, the pork-stuffed cabbage ‘cake’ gets a Cinderella-esque makeover here. Artfully sliced, tender leaves encase layers of finely chopped cabbage and carrots, dried prunes (following mum’s recipe), indulgent foie gras and Gascon bacon. It’s topped with tiny croutons that are surprisingly crunchy and a beautifully intense, deep jus reduction.
