How do you explain your... attractions, I guess? I feel like I pretty much like anyone of any gender but it does change or fluctuate sometimes to my preferring certain genders and I don't want to come across as enbyphobic. Would I just stick to I like anyone and not worry or explain about specifics?

I honestly don't see how saying that you are bisexual with a fluctuating preference would come across as enbyphobic. I think you might be worrying too much here about something that isn't actually an issue.

First of all you can just say "I'm bisexual" or "I'm attracted to multiple/all genders" without having to go into more detail if you don't want to. You don't owe anyone a detailed analysis of your sexuality and how the attractions fluctuate for you. If you want to talk about it with someone in more detail then you can explain it whichever way you find the most accurate for you personally. For example you could say "at the moment I prefer [insert gender] but previously I had a preference for [other gender], my sexuality is kinda fluid like that". That's a totally normal experience for many bisexual people. Not all of us have a preference or fluctiating attractions but some of us do, so... it's really not that big of a deal. There's nothing wrong or x-phobic about having a preference. A bi person with a preference for men isn't inherently misogynistic either, so why would it be enbyphobic if you said something like "I currently prefer [binary gender] but overall I have the potantial to be attracted to any gender and that's why I call myself bisexual"?
