Cherry Kiss Cookies

Ingredients
1 c. butter, softened
1 c. confectioners' sugar
1/2 tsp. salt
2 tsp. maraschino cherry juice (from the jar of cherries)
1/2 tsp. almond extract
6 drops red food coloring (optional)
2 1/4 c. all-purpose flour
2/3 c. chopped maraschino cherries
about 30 Hershey's chocolate Kisses, unwrapped
Directions
In a large mixing bowl, beat butter, confectioners' sugar, and salt on low speed until blended. Increase to medium speed and cream until light and fluffy, about 2 minutes.
Beat in maraschino cherry juice, almond extract, and food coloring (if using). Then on low speed, beat in chopped maraschino cherries. Gradually, on low, beat in flour until just combined.
Scoop and shape dough into 1-inch balls (with about 1 & 1/2 tablespoons of dough for each). Place on ungreased cookie sheets, about 2 inches apart. Bake at 350℉ for 8 to 10 minutes, or until bottoms are just starting to turn light golden brown.
Remove pan from oven and immediately place a Hershey's Kiss in the center of each cookie, pressing down just slightly. (Cookies will crack slightly around the edges.) Cool on pan for 2 minutes. Remove to a cooling rack to cool completely.

Raspberry & Coconut Scones
Ingredients
200g self-raising flour, plus a little for dusting
25g desiccated coconut, plus 1 tbsp for sprinkling
50g cold unsalted butter, cut into small cubes
25g golden caster sugar
100ml buttermilk
1-2 tbsp full-fat milk
50g frozen raspberries, any large ones halved
1 egg, beaten
clotted cream, to serve
jam or curd (passion fruit curd is nice with these scones), to serve
Instructions
Heat oven to 220C/200C fan/gas 7 and dust a baking tray with a little flour. Put the remaining flour in a bowl with the coconut and1/4 tsp salt. Add the butter and rub in with your fingertips until the texture resembles fine breadcrumbs. Add the sugar and mix again, then pour in the buttermilk and 1 tbsp milk. Mix with a knife until the mixture has almost come together, then add the raspberries and mix again, trying not to break up the fruit too much. Add the remaining milk if the mixture seems too dry.
Tip onto a work surface and knead the dough a little to bring it together and even out any dry patches – don’t overwork it or the scones will be heavy. Pat the dough into a square about 4-5cm deep. Cut into 4 pieces, roughly shaping them back into squares if they’ve lost their shape.
Place on a baking tray, brush with egg and bake for 15 mins until golden and risen. Leave to cool on a wire rack. Pack clotted cream and jam or curd to serve with the scones. Best eaten on the day they are made.

Ingredients
💖 1/2 c. (1 stick) unsalted butter, room temperature
💖 4 oz. cream cheese, room temperature
💖 2 tsp. imitation vanilla extract
💖 2 c. (230 g.) confectioners' sugar
💖 1/4 c. funfetti sprinkles
💖 Vanilla wafer cookies, pretzels, and/or strawberries, for serving
Directions
💖 In a large bowl, using an electric mixer on medium-high speed (or in the large bowl of a stand mixer fitted with the whisk attachment), beat butter and cream cheese until light and fluffy, about 1 minute. Scrape down sides of bowl. Beat in vanilla on medium speed, then gradually add confectioners' sugar and beat until combined, about 1 minute. Fold in sprinkles. Transfer dip to a serving bowl. Serve with cookies alongside.
