물의 중요함
요리를 하는데 있어서 물은 무척 중요한 요소다. 조리의 방법으로 물을 이용하는 방법 - 삶기나 찌기 - 도 무척 중요하지만, 그만큼이나, 재료 내부의 수분 함량과 이를 고려하여 조리를 하는 것이 중요하다. 물은 고맙게도 - 때론 아닐 수도 있지만 - 100도 언저리에서 증발을 하며, 이는 단백질 변성 온도와 카라멜 반응, 혹은 마이야르 반응의 중간 온도다. 좋은 점은 물이 있으면 재료는 어지간해서는 100도 이상의 높은 온도로 올라가지 않으며, 나쁜 점은 그렇기 때문에 물에 대한 전처리가 되지 않으면 온도가 올라가지 않을 것이란 점이다.
계란을 예로 들어보자. 계란의 흰자는 대부분 물이며, 알부민과 글로블린이 섞여 있는 혼합물이다. 구운계란이 더 작아지는 이유는 고온에서 수분이 단백질과 엉키지 전에 날라가기 때문이며, 삶은 계란은, 당연하게도, 수분이 날라갈 수가 없다. 더 높은 온도에서 수분 함량이 더 적은 구운 계란은 더 높은 탄성을 보인다. 당연한 이야기. 물론 이 물이 마음대로 다 밖으로 빠져나가서, 분리를 하면 단백질 파우더와 물로 나눠지는 것은 아니다. 상당량의 물은 결합을 이루고 있어 혼합물이라기 보단, 용액에 가까운 부분도 있으며, 이 비율은 단백질과 물이 어떤 형태로 존재하느냐에 따라 결정된다. 하나의 단백질이 몇개의 물분자에 영향을 주는지는 전기 이중층의 크기에 따라 결정되며, 이는 온도와 염의 농도에 따라 또 달라진다.
고기도 그러하다. 고기에 밑간을 필수적으로 하는 것은 여러가지 이유가 있지만, 이런 결합수를 최소화하여 (혹은 응고를 시켜) 물을 빼내고, 적은 양의 물을 통해 마이야르 반응르 더 쉽게 이끌어내기 위함이다.

강황 등 인도 향신료. - 가람 마살라 분말 등을 활용할 수도 있고, 싱가폴이나 말레이의 피쉬소스 분말 등을 이용해도 좋다.

마른 멸치.
조리순서
팬을 준비한다. 계속 저어줄 수 있는, 각이 없는 웍이 좋다. 중국식 알미늄 팬 (1만원선) 에서부터 스테인리스 웍 (4만원선) 을 활용할 수 있고, 그냥 후라이판도 되나, 그냥 후라이판은 균일하게 저어주다가 후라이판 밖으로 튀어나올 수 있다. 상대적으로 높은 온도에서 조리가 되고, 탈 수 있기 때문에, 코팅팬을 추천하지는 않으나, 신경을 쓴다면 상관없다.
기름을 뎁힌다. 올리브 유를 제외하고, 카놀라나 콩기름등이 좋다. 기름의 양은 적으면 나중에 보충하면 된다. 하지만 너무 많으면 처치가 곤란할 수 있다. 후라이판 등 실린더 형 조리도구는 기름을 많이 넣어야하니까 쉽지 않다. 만약, 튀김기를 사용한다면, 편리할 수 있는데, 조리법은 조금 달라진다. 일단은 웍을 기준으로 설명한다. 불은 중불로 시작. 초반에는 불이 좀 센 듯하게, 조리가 들어가면, 불을 작게 낮춘다. "타면 절대. 안된다."
라면을 부순다. 너무 잘게 하면 집어 먹기 어렵고, 너무 크면 먹기가 불편하다. 적당히 부수고, 큰 입자와 작은 입자를 분리한다.
기름이 덥혀지면 - 연기가 나면 안된다. 불은 중불인 상태에서 큰 입자를 넣는다. 튀겨지는 듯 하면 된다. 만약, 고요하게 있으면, 불을 살짝 더 키운다. 익숙해지기전까진 한번에 다 넣지 말고, 큰 입자 한두개만 넣어보고 판단한다. 만약 온도가 낮으면 기름을 라면이 다 먹는다. 온도가 좋다고 판단되면, 큐민 (씨앗, 갈지 않은 것) 을 시작으로 견과류 등을 넣는다. 파우더들은 아직 넣지 않는다. 튀김기를 썼다면, 라면 큰 덩이만 튀기고 건져낸다.
큰 덩어리들이 노릇노릇 튀겨지면, 작은 입자 라면을 넣는다. 이때쯤 거의 기름이 없어야한다. 튀김기를 썼다면, 묻은 기름을 굳이 다 털지말고 웍으로 옮긴다. 작은 입자는 거의 넣자 마자 익는다. 파우더 향신료 - 카레 가루, 라면 스프 등 - 을 넣는다. 잘 뒤섞이게 섞어준다. 불은 약불로 낮춘다.
물엿을 넣는다. 물엿은 뭉치게 하는 역할. 단맛은 크지 않다. 물엿은 일반 무색 투명한 콘 시럽 물엿과, 조청 물엿, 올리고당 등이 있고, 꿀을 넣어도 좋은데, 물엿은 기본적으로 입자끼리 뭉치게 하는 역할. 취향에 따라 넣으나, 조금만 넣거나, 안넣어도 무방하다. 주의점은 물엿은 온도에 따라 점도가 많이 바뀐다. 넣었을 때 물 같아도, 식어서 굳으면 끈적거릴 수 있으니, 시행착오를 겪으며, 원하는 농도를 맞출 것.
불을 끄고, 설탕을 넣는다. 물엿과 다르게, 설탕은 금방 타기 대문에, 불을 끄고 넣는다. 잘 뒤섞어주고, 식은 후 서빙.
