Reposted from @shalimaskitchen (@get_regrann) - Tel “koi”(climbing perch) The word Tel means oil. This is a traditional fish curry that I only seen cooked in Bangladesh with mustard oil. Using Bengali version of pestle and mortar (best version). I used my spice grinder. I didn’t completely get it to fine paste just roughly broken it up. . My mum and my Nanu are amazing cook. I have always seen my mum cook fresh meals for the family which always involved fish!♥️😋. I have spent a lot of time in Bangladesh 🇧🇩 during the summer holidays with my family. I have always enjoyed cooking. I am grateful I have picked up quite a lot of traditional cooking from my in-laws. And since then, the love of traditional cooking has only grown!💚♥️ . Tel Koi recipe In small bowl soak 5 dried red chillis and 1 tsp cumin seeds in warm water roughly about (2 tbs warm water) let that soak for 5 minutes I used my spice grinder to paste (optional get it fine paste) 3 koi fish 🐟 washed and prepared also make incision across the fish on both sides so the spices work their magic Dry the koi fishes add salt to taste, I added 1 tsp turmeric and madras curry and hot chilli powder. Mix the powder then add the fish, making sure all the spices gone through the incision and coated all over the fish 1 tbs onion grated I used Bangladeshi onion 1/2 tsp turmeric powder 1/2 tsp madras curry powder 1/4 tsp coriander powder 1/4 hot chilli powder (optional) Add Salt to your taste Add fresh chillis also optional Fresh chopped coriander In a pan add 4 tbs of mustard oil (It has to be cooking mustard ) the best ones are either Bangladeshi or Indian mustard oil♥️👌 Once the oil is hot add the fish that’s been mixed in spices. Let that cook 2 minutes on each sides. Take koi fish out and add the grated onion in the same pan. Let that change pale gold colour. Add the chilli and cumin paste and salt to your taste let it cook for a minute add the dry spices and cook for further 2 minutes. Add the koi fish in the spices with fresh coriander. Give it a good mix. After 1 minute add 1/2 cup of water and let it cook on high heat about 3 for minutes until the water reduced by half. The Plankton Dance

It is the dead of night and we are drifting slowly and silently through a network of narrow channels. Sometimes we pause for the tidal waters to rise or to seek out the mangrove roots that mark the shoreline. Above us the blanket of night is resplendent with all manner of unknown constellations but it is the liveliness below that draws our gaze again and again. Each time I touch the passing water, a frenzy of light is brought into being. Hundreds of aquatic stars fire off in all directions, fizzing and fading, continuously replenished until my hand lingers no more.The idea that a crocodile might emerge from the depths and take me in for the death roll doesn’t really cross my mind. Surely even they would not ruin this show. It is mesmerising. For a moment I want to know why but I am hushed. Who cares? This is the plankton dance, fleeting and playful.

The Sundarbans is part of the vast Ganges Delta that straddles Bangladesh and India and channels the flow of four major rivers into the Bay of Bengal. It is characterised by countless waterways and islands covered in thick mangrove forest which survives regular immersion in saline waters brought by the tide. The region is also home to around 150 of the subcontinent’s most fabled creature, the Royal Bengal Tiger, feared and revered in equal measure. Early one morning we set out on a converted fishing trawler towards the designated National Park while our Government guide, Mono, runs through the seven reasons that we won’t see a tiger. The fact we are enveloped in thick white mist seems sufficient to me; we can barely make out the water’s edge.

We chug on, huddled for warmth, the odd clatter of plates ringing from below as breakfast is prepared. Gradually the sunlight fights through and by lunchtime we are eagerly scanning the forest for signs of life. But of course it’s Mono that first spots the great egrets launching from the riverside and the kingfishers perched atop lonesome branches. We follow his eyes to the spotted deer that graze in the mud and the wild boar that hurry through the undergrowth. He points to a white bellied sea eagle and to the pair of storks that fan their feathers beneath it. Sometimes he whispers “crocodile” and we all rush to one side, the trawler listing sharply. For a while it seems nothing more than driftwood, stranded on the bank, but we edge closer until that familiar bone crunching jawline is all too clear. And then it slips away into the water and out of view.

In the wider stretches we pass massive freight ships which transport coal ash to fuel Bangladesh's burgeoning economy. I find it hard to take issue with development projects in the world’s poorest countries but the huge Rampal Power Station under construction just 65 kms upstream has been widely condemned for the effect it will have on the local ecosystem. Environmental degradation needs no encouragement in this delicate region. Rising sea levels brought by climate change are swallowing vast tracts of Sundarban land and reducing the natural defence that the mangroves provide against tsunami and cyclones. There is another effect. As deer and boar populations struggle with dwindling food stocks, tigers are forced to seek out other prey. Fishermen and honey collectors are increasingly vulnerable and we solemnly pass a muddy clearing where two local villagers were fatally attacked just ten days prior. There are said to be upwards of 30 such incidents every year.

That night we settle into the comfort of our eco-village, clinking bottles of Kingfisher and reflecting on the day's events. The Royal Bengal Tiger never did show its face but I have seen and heard plenty enough. Conversation with our Indian companion worryingly moves onto British history and we are happy to finally climb our stilted bamboo hut and into bed. I toss and turn for a while, our mosquito net swaying in the soft breeze. Even here, on a small island towards the southern tip of West Bengal, there is not the stillness of night that one might imagine. Our sleep is instead accompanied by readings from the Bhagavad-Gita which are amplified across the island from a nearby village in honour of Saraswati, the Hindu goddess of learning and knowledge. Always there is life here. The villagers pray, the tigers watch, the plankton dance.

Lake Eola turtles need sunbathing perches, says club's petition

Lake Eola surely would tick off Yertle the Turtle, a character in a Dr. Seuss children’s story.

There is hardly any place in Orlando’s showcase lake where Yertle could order others of his kind to stack themselves in a column, which, as the story goes, Yertle would climb as king of his pond.

According to the real-life Turtle and Tortoise Club of Florida, there is precious little space at Lake Eola for any sort of perching by turtles, fabled or otherwise.

And that’s not good, say club members, who are petitioning for installation of artificial perch places.

“I don’t want to have any conflict with parks and rec on this,” said Marvin Bennett Jr., an Orlando resident and vice president of the turtle club, who stressed a desire to avoid friction even as he has reached out to city hall often.

His club has collected more than 500 signatures in support of the cause, with 300 of those during the Earth Day celebration at Lake Eola last month.

This city’s response this week amounted to: thanks, but we’ve got this.

“The turtles are doing fine,” city park manager John Perrone said.

A variety of turtles are visible on sunny days in the 28-acre lake in the heart of Orlando. There are native red belly and peninsula cooter turtles, exotic red-eared sliders and enormous softshell turtles.

Bennett, who has ponds at his home where he raises turtles, couldn’t disagree more with the city’s contention.

He is the author of “Turtles, Tortoises and People, A Turtle Conservation and Care Book.” In it are dozens of his own color illustrations of the reptiles.

Bennett said basking promotes absorption of calcium for bones and shells. Sunlight also helps them shed fuzzy algae off their backs.

But while Bennett’s perspective is mostly about turtle welfare, the city views a larger concern.

At Eola, there is an assortment of fish, dozens of swans from foreign places, ducks, rats, pigeons, squirrels and a lot of animal poop to be cleaned off sidewalks early each morning.

Also experienced at Eola are 3.5 million visits by people each year.

Managing such a crowd at Lake Eola Park is enough of a challenge and wildlife isn’t going to get much special attention, according to city officials.

As nature goes, Lake Eola is a mess.

Its wetlands were obliterated by sea wall along much of its 4,493 feet of shore.

Most of its water is rain that arrives via gutters with soda straws and lawn fertilizer.

The lake is dyed blue-green to block sunlight from stimulating algae growth.

Eola ranked last year near the bottom – at 72 of 94 – for healthiness among Orlando lakes.

As much a retention basin as lake, it doesn’t drain into a stream.

Excess water pours down deep wells to the Floridan Aquifer, a practice common in the city.

Yet Eola is appreciated for swans, skyline reflections, schools of little fish and the signature fountain.

“I think it looks nice,’ said Amy Chafey of Phoenix, who was with her husband, Brian, and their daughter for Central Florida cheerleading competition this week when they took their first look at Eola.

Bennett said turtles strongly prefer perches in open water and away from predators.

Perrone pointed to gnarly cypress roots and knees as potential perches.

“Would you want to sit on that?” said Bennett, who marvels that turtles survive in Eola.

The single piece of prime real estate for perching is the upper side of a drainpipe that juts through the sea wall.

The scene there is of turtles doing as Yertle the Turtle would encourage: piling upon one another.

They don’t succeed very well. When a turtle is able to claw up and into the scrum, another turtle usually is bumped back into Eola.

The spectacle often draws sightseers, taking pictures and, to Bennett’s dismay, tossing unhealthy snacks of bread crumbs.

Bennett said if the city installed artificial perches, they quickly would become popular teaching moments about nature – in an intensly urban place.

Standing above the drainpipe, Orlando resident Rosely Batista, 25, watched the turtles with delight.

“I think they are cute but I think they need more space to get out of the water,” Batista said.
