 Veg Seekh Kabab
This is a vegetarian or vegan-lover's take on the well-known seekh kebab with minced meat. Basically an appetizer or starter from a tandoor thali that can be served with mint chutney or sauce.
The typical ingredient in Veg Seekh Kabab Recipe is minced meat, and it originates from Pakistan, Afghanistan, and Western Punjabi cuisine. Initially it was cooked in tandoor oven and grilled on skewers. Serve Seekh Kebab in roti or chapatti with fries or in rolls with other vegetables as a party starter.
I love paneer recipes and especially paneer starters like Achari Paneer Tikka or Paneer Ghee Cook. And some important tips to make the best seekh kebab recipe. firstly, i grilled the kebabs on a non-stick pan. But by applying a little spread or oil on it, it can also be roasted in the broiler. Also, apply oil on your palm giving the stick a kebab shape. If it is not of uniform size, the kebabs may not stick to the skewer. finally, if you don't have mint chutney or chutney, you can serve vegetable seekh kebab with curd and green or sandwich chutney.

Paneer tikka is an Indian dish made from paneer and veggies marinated in yogurt along with spice mixture and grilled in a tandoor. It is a dry version of tikka masala and veg version of chicken tikka. It can be prepared easily at home using tawa or grill pan. Paneer tikka is the perfect starter for a barbecue or a dinner party and even as a evening snack. Best thing is you can prepare variety of paneer tikka like pepper, aachari, mango mint, hariyali paneer tikka by doing some few changes. Even paneer tikka wrap or roll can be prepared using grilled paneer and veggies. Just keep marinated paneer and veggies ready, grill it and enjoy with family and friends.

Ingredients:
Paneer(cut into 1 inch cubes)                1 1/2 cup
Capsicum(cut into 1 inch squares)          1/3 cup
Onion(cut into 1 inch squares)               1/3 cup
Tomato(cut into 1 inch squares)              1/4 cup
Hung curd/Thick curd                          1/2 cup        
Gram flour(besan)(dry roasted)            2 tsp
Ginger garlic paste                                1/2 tbsp
Oil 2 tbsp
Butter 1 tbsp
Red chili powder                                    1 tsp
Turmeric powder                                   1/2 tsp
Cumin coriander powder                      1 tsp
Carom seeds(ajwain) 1 tsp
Kasuri methi                                           1 tsp
Garam masala                                         1/4 tsp
Chaat masala                                          1/2 tsp
Lemon juice(optional) 1/2 tsp
Salt to taste
Method:
Take curd, gram flour and 1 tbsp oil in a mixing bowl and whisk it well. Make a lump free mixture.

Add ginger garlic paste, red chili powder, cumin coriander powder, garam masala powder, carom seeds, kasuri methi, turmeric powder and salt to it. Combine it well.

Now add paneer cubes and chopped onion, capsicum and tomato to it. Stir it gently to coat paneer, onion, capsicum and tomato with marination.

Cover and allow it to marinate for at least 30 minutes in a refrigerator.
Take marinated paneer, capsicum, onion and tomato one by one and insert it into skewer gently.

Heat the tawa or grill pan and drizzle some oil and butter, now place skewers on hot tawa or grill pan.

Turn skewer to all the sides to cook it till nice golden brown in colour each side.
Take out skewers from grill pan and sprinkle some chaat masala.

Serve hot with pickled onion, lemon wedges and mint coriander chutney.
Notes:
you can use zucchini, mushroom, baby corn or red, yellow and green capsicum as per your choice.
If yogurt is not sour than add lemon juice otherwise skip it.
If you want make aachari paneer tikka then skip red chili powder and cumin coriander powder and add 1 tbsp masala of pachranga aachar to the yogurt mixture.
Marinate in a thick hung yogurt other wise mixture will become watery.
You can marinate the mixture for over night.

Lately, I have cut down on eating out but when an invite comes from such a beautiful place, only a fool would deny it!
The Wharf 2.0 – The Concept
How is The Wharf 2.0 different from the erstwhile The Wharf, you ask? Hear it from the Chef himself.
Apart from changes in the menu, you can notice a lot of changes in the ambiance. This place has become prettier with a lot of colors thrown in. Quirky skateboards are placed here and there, the live counter is now colorful, glasses have colors..in all, Wharf 2.0 is even livelier than Wharf was!

What we had?
Now coming to the most important part – the food! As it was an invite, menu was pre-decided by the Chef. A look into the menu and we knew we were in for a treat. What assured us even more was the Amuse Bouche and their refreshment!

DRINKS
In Chennai, whenever you have the opportunity to pair your food with your favorite poison, you shouldn’t miss it. We didn’t either. We ordered a Cocktail each.
Sunkissed – A concoction of Gin, Tender Coconut water, Vettiver, Lychee and Honey. This was my drink and it was the lightest of them all! The drink however missed the punch and I felt the distinct flavor of each ingredient was somehow missing.
Shark Attack – The pink drink. Stronger than mine. Tasted quite good!
Hurricane – This was the strongest one. Couldn’t go beyond one sip of this! if you like your drink really strong, this is recommended!
STARTERS

Crumbed Olives – Olives and Jalapenos crumb fried and served with Blue Cheese and Paprika Dip. Crunchy outside and juicy inside, I quite liked this one!
Angari Paneer Tikka – Soft paneer chunks marinated in spices and grilled to perfection! They were yumm, esp. with the mint chutney.
Sutta Kozhi Milagu – The catch here is, the chicken is first cooked in the tandoor and then sauteed in the pan with South Indian spices. Oh, they were extremely tasty!
Mangolian Fried Fish – Juicy fillets of fish crumb fried. Loved them.
MAIN COURSE
Unlike The Wharf where the accompaniments used to be included alongside the main course, here you need to order each separately!

Bhutte aur Gajar ki Sheekh – The corn and carrot sheek kebabs were an absolute delight, more so with the mint chutney!
Daastaan-e-Kumbh – The mushrooms were oh so creamy! It was love in every bite!
Panko Grilled Chicken – The Grilled chicken comes with a portion of sticky Rice and sauce. The rice is smoked for a while before eating! The smoky flavor from the rice elevates the taste of this entire dish!
Jumbo Prawns Skewers – The Jumbo Prawns served on skewers comes with a portion of blue cheese rice. The sauce is then poured on the prawns and grilled on the table. Prawn lovers, this is a must-have for you!

Post these, we were served with some desi khana – Black Dal, Balti Paneer, Coconut Spiced Fish Curry along with Naans and Rice.

Black Dal – Dal Makhani is usually one of those dishes I order for sure when I have to eat Vegetarian. Although the dal tasted fine, it lacked the creaminess and the consistency was pretty thin! Post heavy food, it was fine but otherwise I like my black dal creamier and thicker.
Balti Paneer – This was damn tasty! Paneer chunks were super soft.
Fish Curry Coconut Spiced – As the name says, the curry resembled Thai curry and thai curry being my all-time favourite, I devoured it with rice! Did not eat the fish as I am not too fond of fish.
DESSERTS
No matter how much you eat, you always have space for desserts, right?

Gulab Jamun Cheesecake With Candy Floss – The sweetness from the gulab jamun was beautifully balanced by the touch of liquor that was poured on it. The pics and the video says the rest!
Deconstructed Cappuccino Chocolate Marquise – This is essentially a jar containing alternative layers of Cappuccino and Chocolate marquise, topped with berry compote having a chocolate lid with a dropper containing vodka. Served with crushed red-velvet on the side. Hot chocolate sauce when poured on the chocolate lid dissolves it and there is your super yummy dessert! Not too sweet and it was perfect for my lesser-sweet tooth!
Hard Surprise – Let this be a surprise for you too! A lot of liquid nitrogen is used in this and a delight for dessert lovers!
