Btw the Persian version of beef tongue 'tacos' is to boil it with salt, onion, garlic, and a fuckload of tumeric, then to dice it up and eat it wrapped up in sangak with mast o musir, preferrably with pickles or extra onions added in the wrap. You also dip bread into the broth left over from boiling the tongue, or drink it like a soup while scooping up mast o musir with sangak if you want it. Pretty good, just prepare for garlicy onion breath afterwards
