The appetizer I brought to Christmas Day dinner: Baked stuffed brie. This recipe is one that could be easy to play with; you could make a sweet filling with nuts and dried fruit or a savory one with meat and veggies. But for tonight, I went with cranberries and walnuts and it was AMAZING. And as if stuffing the brie wasn't enough, but then, it's baked in puff pastry. Needless to say, this didn't last long on the table. Thanks to Chef John of FoodWishes.com for the recipe! Baked Stuffed Brie 1 small (8-9 inches) wheel of brie Kitchen string 1/3 cup chopped dried cranberries 1/3 cup chopped walnuts Enough puff pastry to cover, plus more for decoration An egg wash (1 egg beaten with 1 t. water or milk) Using a knife, make a shallow cut around the wheel of brie, scoring the edges. Fit a piece of kitchen string into the groove, twist the ends a few times, then pull them in opposite directions so the string moves through the cheese, slicing it in half. On one half of the brie, place the dried cranberries. On the other, place the nuts. Flip the cranberry side on top, sandwiching the filling inside, and push back in any berries that fell out. Roll out your puff pastry and place the cheese in the middle. Brush the edges of the dough with egg wash. Wrap the pastry around it, pinching off any excess dough. Brush the wrapped brie all over with egg wash. Freeze the brie for 1 hour—don’t skip this step! Preheat the oven to 425°F. Line a baking sheet with parchment paper and place the brie on it. Bake for 20 minutes, or until the pastry is golden brown and some of the brie has leaked out. Transfer immediately to a serving platter.
