Last night's Yule dinner: Homemade brisket, mashed potatoes, and Yorkshire puddings! The brisket I made for Yule last year. The recipe is from Binging with Babish and is inspired by the brisket featured on the TV show, "The Marvelous Mrs. Maisel". It was just as yummy this year! The Yorkshire pudding recipe comes from John Kirkwood, a retired chef from the northeast of England in the U.K. If you haven't seen him, look him up on YouTube. His channel is like if Winne the Pooh had a cooking show and it's adorable. And these Yorkshire puddings were so easy to make, even for someone like me who'd never done so before and was nervous to try working with the hot fat. Traditionally, these are made with beef drippings, but you could use vegetable oil as a substitute, which is what I did and they were absolutely delicious! Spur-of-the-moment baking! This afternoon, I made a batch of John Kirkwood's wonderfully delicious chocolate muffins! There are fewer happier things in this world than the smell of baking chocolate filling your kitchen, and these muffins taste just as divine as they smell. Thanks, John! John Kirkwood's Chocolate Muffins 110 g / 4 oz. of butter, softened 1/2 cup + 2 T. (150 g / 5 oz.) sugar 3 eggs, room temperature 1/2 cup (110 mls / 4 oz.) milk 1 1/2 cups (180 g / 6.3 oz.) all-purpose (plain) flour 1 T. baking powder 4 T. (35 g / 1.2 oz.) cocoa powder 1/2 cup + 2 T. (100 g / 3.5 oz.) semi-sweet chocolate chips Milk chocolate chips, for the tops Preheat oven to 355°F (180°C, Gas Mark 4). Grease a muffin tin or line it with paper cups. Cream butter and sugar together until light, fluffy, and with a creamy, white appearance (three minutes by hand). In a separate, small bowl, beat each egg individually and add it one at a time to the butter and sugar, stirring between each addition. Add in the milk and stir to combine. In a separate bowl, combine the dry ingredients. Gently fold them into the butter mixture until a smooth, fluffy batter forms. Fold in the semi-sweet chocolate chips. Ladle the batter into the muffin tin. Top each muffin with 8-9 milk chocolate chips (or your choice of another chip besides semi-sweet). Bake for 25 minutes. Going to a small family social distancing social today and so I made these peanut and chocolate chip cookies to share with everyone. The recipe cones courtesy of John Kirkwood, a retired chef from the northeast of England in the UK. His YouTube channel has quickly become one of my favorites for great, delightfully simple and delicious recipes. These cookies are fantastic (yes, I've already taste-tested one). The peanut butter and chocolate chips make them the perfect sweet treat, and the salty earthiness added to them thanks to the roasted peanuts brings the cookies to a whole other level.
