🇵🇭RECIPE🇵🇭 I couldn’t let Filipino American History Month go by without sharing a Filipino dish: my dad’s Pinakbet recipe! ☺️ Pinakbet is a must with rice 🍚 as it packs a big umami punch💥with the fermented shrimp paste also known as bagoong. What I love about it is that it’s a vegetable heavy dish! And of course you can’t go wrong with pork belly! 😛 ✨A little of my background: I grew up in a military family and was born in Oakland, CA. We then stationed in Yokosuka, Japan ➡️ Adak, Alaska ➡️ San Miguel and Subic Bay, Philippines and lastly ➡️ Everett, WA where my dad retired. Like many Fil-Am kids, my siblings and I did not learn the Filipino language, Tagalog. While I’m proud to be a Filipino American, I sadly still feel a little disconnect because I don’t speak the language but can understand “kaunti lang”. More can be spoken of of this topic another time. 🙂 So for now, my way of connecting to my culture is with family and food and I’m so very thankful that my parents are amazing cooks! 🥰 Pinakbet (Serves 4) 1 lb sliced skin on pork belly 1/2 onion diced 2 cloves minced garlic 2 roma tomatoes chopped 1 1/2 tbsp bagoong shrimp paste 1+ cup water 1 cup cubed kalabasa squash 1/2 bunch long beans cut 3 inch pieces 1/2 cup chopped shrimp Handful of okra 1 bitter melon seeded and sliced 1 Asian eggplant sliced Patis (fish sauce) to taste Black pepper to taste Directions: On medium heat, heat oil and add the onions and garlic. Sauté for 2-3 minutes then add the pork belly. Cook until the pork begins to brown, about 5 minutes. Add the tomatoes and smash them a bit and add the bagoong and 1 cup of water. Stir then cover and simmer on medium low heat for 25 minutes. Uncover, bring the heat back to medium and add the squash and cook for 3 minutes. Then add the long beans, shrimp, bitter melon, okra and eggplant. You may add a splash of water at this point if it needs a bit more broth. Lastly, season with black pepper and patis to taste. Cover and cook for 5-7 minutes or until the veg has cooked through but is still tender-crisp. Enjoy hot with rice! ❤️ https://www.instagram.com/p/CVoax8APCuy/?utm_medium=tumblr

So I hear tomorrow is World Egg Day! 🍳 I’m gonna throw it back to my visit to @shinyashokudous earlier this summer when I partnered with the American Egg Board in support of local restaurants and egg farmers for a egg campaign where a few other content creators and I did a fun play of which city has the best egg dish on TikTok. 🎶 If you know me, you know I love eggs, I love it on almost everything and I’m all about that #yolkporn pop! 😆 And Shinya Shokudo is famous for that with their egg yolk wagyu tataki donburi bowl! It was the perfect dish to feature! 🥰 Swipe left ⬅️ for my TikTok campaign video! So tell me, what is your favorite egg dish??? ✨RECIPE✨ Football season means game day food, so here’s one for you to try: homemade focaccia pizza! 🍕 I’ve made this just once before and as I’ve mentioned, I’m not much of a baker but practice makes perfect! ☺️ This time I have the written recipe below for you all to follow! 🙌 I basically took a focaccia recipe that I learned on TikTok last year and added pizza toppings… and voila! 😆 If the pizza connoisseur (aka husband @bradleyhouse) approves, then it must be that good! 🤣 Recipe Reel coming up next! Focaccia Pizza (Serves 2-3) 2 cups flour 1 tsp salt 1 tsp instant yeast 1 cup warm water 1/2 (divided) cup extra virgin olive oil Your favorite toppings: I did mozzarella, pepperoni cups, oregano, chili flakes and marinara Direction: In a bowl, mix the flour, salt, instant yeast and warm water together until the dough becomes sticky then pour a 1/4 cup of extra virgin olive oil around the sides and over the top of the dough. Cover and let it rise for 2 hours. Prepare your sheet pan by coating it with 1/4 cup of extra virgin olive oil (I used a 11x8in but you can use 9x13; use nonstick if you can). It sounds like a lot of oil but it is necessary for focaccia! Remove dough from the bowl and lay it in the pan and spread it out a bit to fit but it doesn’t need to be exact. Cover once more and allow to rise for 1 hour. Once done preheat the oven to 450. Begin dimpling the dough while spreading it to fit the pan then add your favorite toppings: I added oregano, chili flakes, mozzarella, pepperoni and marinara. Bake for 23-25 minutes. Let rest in the pan for 5 minutes then carefully remove onto cutting board. And lastly top with fresh basil and parmesan! Enjoy! https://www.instagram.com/p/CUvE-JPJC1W/?utm_medium=tumblr

Good morning! 🙌 Who needs an end-of-the-week caffeine kick?? ☕️ A few weeks ago I checked out the @starbucksreserve SODO for the first time… what a world of difference between the regular @starbucks coffee shops! We enjoyed espresso martinis, baked goods like croissants and cookies, tiramisu and cannoli desserts and pizza from @princi! Everything was really yummy, I mean just look at that spread! 😆😛 I highly recommend going to the SODO shop rather than the Capitol Hill location on the weekends because there’s no line! It’s been 2 years since our trip to Rome and we still dream about the food! 🤤 @bradleyhouse especially loves Roman style pasta and pizza so naturally I spoiled him with homemade Pasta Alla Gricia for his birthday the other day! 🥳 If you’ve never had this pasta dish before, it’s basically cacio e pepe with guanciale. It’s so simple and damn delicious! 💯 It’s amazing what pasta water aka liquid gold can do! 🥰 So don’t mind me while I pat myself on the back for recreating this dish with no fail (because I’ve had a few 😬)! 😮‍💨😅 Recipe below and check out the reel! You gotta try this!!! Pasta Alla Gricia 4 oz spaghetti 1/2 cup guanciale or pancetta sliced 1-2 tbsp reserved guanciale fat 1 tsp cracked black pepper 1 cup grated pecorino romano 2-3 cups reserved pasta water Top with more pecorino and black pepper https://www.instagram.com/p/CTDo1kTlAtE/?utm_medium=tumblr
