🥥 Coconut and mango flapjack 🥥 Looking for some healthy homemade snacks for your little ones? Try these coconut, mango and banana flapjacks - they are seriously good and only take 2 minutes to prep and get in the oven! ~ Ingredients: 1 banana ½ mango 50g raisins 50g coconut oil 3 tbsp desiccated coconut 100g rolled oats ~ Directions: 🍌 Preheat the oven to 200ºC/Fan 180ºC. 🍌 Chop the banana and mango and put them into a blender along with the raisins. Blend until you have a smooth puree. 🍌 Heat a pan and melt the coconut oil then remove from the heat. Add the puree to the pan and mix well with the oil. 🍌 Add the oats and desiccated coconut and combine everything together. 🍌 Line a baking tray with parchment paper and add the flapjack mixture. Smooth it around the tray so it is approximately 1 inch thick. 🍌 Bake for 25 minutes or until golden brown. 🍌 Allow the flapjack to cool completely before cutting, to allow the mixture to firm. I would suggest a minimum of 2 hours but ideally leave it overnight in a sealed container. Spiced roasted chickpeas 🍿 They may take a little longer to prep than opening a bag of popcorn, but these spiced chickpeas are seriously addictive and way more satisfying! A perfect healthy snack throughout the day - or add them to dips, salads or sprinkled over a good curry 🌿😃. ~ Ingredients: 1 can of chickpeas, drained and rinsed 1 tbsp olive oil 1 tsp paprika 1 tsp ground cumin 1 tsp ground coriander 1/2 tsp dried thyme 1/2 tsp sumac (optional) 1 tsp fresh ground pepper ~ Directions: 🌿 Heat oven to 200C/fan 180C. 🌿 Dry any excess liquid off the chickpeas with some kitchen roll. Put chickpeas in a roasting tray with the olive oil and spices. Chewy oatmeal raisin biscuits 🍪 There's more weekend baking going on in this house. Refined sugar free, toddler friendly, and dangerously moreish. Eat them with a pint of tea ☕️😋 ~ Ingredients: 1 cup all-purpose flour 1 tsp ground cinnamon 1/2 tsp baking soda 1/2 cup unsalted butter, at room temp 1/2 cup unsweetened applesauce 1/4 cup maple syrup 1 large egg 1 + 1/2 cups rolled oats 1 cup raisins ~ Directions: ➡ Whisk together the flour, cinnamon, and baking soda in a large bowl, then set to one side. ➡ In another bowl using an electric mixer, cream together the butter, applesauce, maple syrup and egg for a few mins until well combined. ➡ Whilst continuing to mix, slowly add in the flour mixture, then the oats and raisins until everything is fully combined. ➡ Cover the mixture with cling film and refrigerate for 30 mins. ➡ Preheat the oven to 180 C / fan 160 C and line two large baking sheets with parchment paper. ➡ Once the mixture is chilled, make heaped tablespoon sized balls and place onto the baking sheets.
