Ingredients 1 cup Rajgira Flour (Amaranth Flour) 2 Potato (Aloo) , boiled, mashed 1 cup Paneer (Homemade Cottage Cheese) , grated 2 Green Chillies , finely chopped 1 teaspoon Turmeric powder (Haldi) 1 teaspoon Cumin powder (Jeera) 2 sprig Coriander (Dhania) Leaves , finely chopped 1/2 teaspoon Whole Black Peppercorns , ground Salt , or rock salt to taste Oil , or ghee for cooking How to make Rajgira Paneer Paratha Recipe ๐Ÿ‘‰Begin by mixing all the ingredients together in a mixing bowl with enough water to a dough consistency. ๐Ÿ‘‰The rajgira flour is little hard to work with since it does not contain gluten so make sure to have enough flour to dust while rolling the dough. ๐Ÿ‘‰Divide the dough into equal portions and roll it onto a board. ๐Ÿ‘‰Heat a Flat bottomed pan and add the rolled paratha with some ghee and cook it on both the sides for about 2 minutes and it's ready to eat! Chickpea Salad ๐Ÿฅ—๐Ÿฅ— A versatile salad, which is one of my favorites on a hot summer day. I love chickpeas in any form - as a salad, as kababs, pindi chhole with bhature or rice, or blended as in hummus etc etc. Soaked the chickpeas overnight and boiled them the next day. Added tomatoes, red and yellow peppers, cilantro and mint to make this salad. Squeezed a lime and added some chaat masala, and relished it for lunch. . Somehow, salads loaded with raw greens are just difficult for me to take in. So, going big on lentils is the only way I love to have my salads. I am so crazy after chickpeas, that I boil double the batch required. The second half of this batch was used to make some Chaat recipes. Imam Bayildi with Amouls goats labneh. This is a nod to the famous Turkish recipe dating back to Ottoman Empire days. This is how I make it. Cut two large Aubergines lengthways skin on, season with salt, drizzle vegetable oil on the top and place in a hot oven for ten minutes or until the Aubergines are soft to touch. Heat a tablespoon of vegetable oil in a saucepan, add one onion diced, and 3 cloves of garlic chopped sweat over medium heat, add 4 whole peeled tomatoes which are diced,season to taste with salt and pepper add half a cup of water and let simmer until the liquid has reduced and the mixture is a thick sauce. Take the Aubergines out of the oven, top with the sauce until the aubergines are completely covered, scatter over the labneh or even leave it whole if you like, bake until the cheese has just melted, and Enjoy!!
