This view is from a back alley at Kampong Glam in front of the Gentlemen’s Club. It was not opened when I started the sketch, so I conveniently used their table at the entrance. Halfway during the sketch, the owners came to open the shop, and let me continue to use their space. Handmade by chef Eric Ang, I watched the entire process of the Mah-Zhang making process in the pandan-aromatic filled kitchen. The Peranakans call this zhang kueh, but other commonly known names for the glutinous rice dumplings are Bak-Zhang (Hokkien) and Zongzi (Mandarin). Thank you for sharing your philosophies in life, and thank you for sharing your famous Zhang Kuehs.
