A delectably Delicate Food- Paruppu Urundai Kuzhambu
In this cool monsoon season, a spicy, tangy, and savory gravy is the ideal dish for steamed rice. One such dish is Paruppu Urandai Kuzhambu, which is extremely popular in Tamil Nadu. It is made up of tamarind-flavored gravy and steamed lentil balls. There are many recipes that we could have found for this dish, but how about adding a Chettinad twist? C'mon, let's make a tasty yummy Paruppu Urundai Kuzhambu with sunflower oil manufacturers in India.
Ingredients for urundai
3/4 cups of toor dal
2-tablespoons chana dal 
8 Shallots; chopped
Green chillies; as per your spice tolerance
2 garlic cloves; greeted
1 teaspoon of red chilli powder
1/4 cup of Grated coconut
1/2  tsp of poppy seeds
1/4 teaspoon  of fennel seed powder; 
1/2 or 1/4 inch cinnamon stick
Salt to taste
To make urundai
Wash and soak toor dal and chana dal for one hour. Grind the soaked dal into a thick, granulated paste.
Grind the dry-roasted poppy seeds and cinnamon stick, and then roast the grated coconut. Add them along with the grounded paste.
Finally, chop the shallots, garlic, and green chillies, dry roast them, and add them along with the other ingredients.
Along with lentil paste, add chilli powder and fennel powder. Once you've mixed well, make balls out of this mixture and keep them aside.
Ingredients for urundai
Sundew refined sunflower oil
Tamarind juice (a lemon size tamarind soaked in hot water)
10 sliced shallots
A chopped tomato
5 garlic cloves chopped
Chilli powder as per your spice tolerance
2 teaspoon of Dhaniya powder
1/2 teaspoon turmeric powder
1 teaspoon mustard seeds
1 teaspoon of vendhayam
1/4 grated coconut 
1/2 teaspoon of fennel seeds
Salt to taste
To make Kuzhambu
Grind the grated coconut and fennel seeds into a fine paste.
In a pan, add sundew refined sunflower oil, mustard seeds, and methi seeds. Seeds will pop once they're hot.
Add in the thinly sliced onions, garlic, and curry leaves and saute until light brown, then add the tomatoes. Once it turns soft, add in the chili powder, dhaniya powder, and turmeric powder, and sauté till the raw smell goes.
Along with the onion and tomato paste, add the tamarind juice and mix well. Once the onion and tamarind juices are well mixed, add the ground coconut and fennel seed paste, mix well, and let it boil.
Once the oil starts floating, gently add the paruppu urundai to the kuzhambu. Make sure to add them one by one, separately.
Cook on a low, simmering flame and cover the pan. Just a gentle shake is enough to make the urundai cook from all sides. Every 3–4 minutes, keep shaking the pan to make sure that it does not stick to the bottom.
Cook till the urundais are cooked.
Your yummy Chettinadu style paruppu urundai kuzhambu is ready to be served.

1.  Gatte Ki Sabzi

வெட்டி பேச்சு மற்றும் சுகி சமையல்   இணைந்து ���ழங்கும் சுவையான   பப்பு ரொட்டை   மற்றும் உளுந்து சட்னி செய்வது எப்படி?
தேவையான பொருட்கள்: 1) 250 கிராம்  பச்சரிசி   2) 1/2 மூடி துருவிய தேங்காய்
முதலில்  பாத்திரத்தில் தண்ணீர்  எடுத்து  அதில் அரிசியை போட்டு  ஊறவைத்துக்கொள்ளவும்.  
ingredients: 1) 250 gram rice 2) 1/2 shredded cocounut
Water and rice need to soak it in appropriate vessel.
தண்ணீரில் ஊறிய அரிசி மற்றும் துருவிய தேங்காய் இரண்டையும் மிக்ஸியில் போட்டு அரைத்து கொள்ளவும்.
Grind soaked rice and shredded coconut through the mixer grinder.
தேவையான அளவு உப்பு சேர்த்துக் கொள்ளவும்.
Add appropriate quantity salt.
மிக்ஸி கழுவிய நீரை ஒரு பத்திரத்தில் ஊற்றி  அதை அடுப்பில் வைத்து சூடாக்கவும்.
Mixi washed by water which need to collect a vessel and heat the water.
பின்பு அதை அரைத்து வைத்த மாவில் ஊற்றவும். தோசை மிருதுவாக இருக்க இது உதவும்.
Once boiled add into batter which will help to prepare soft dosa.
தோசை கல் சூடானவுடன் அரைத்து வைத்த மாவில் தோசை ஊற்றவும். ஊற்றிய தோசையை ஒரு தட்டில்  ஒன்றன் மேல் ஒன்றாக ஊற்றி வைக்கவும்.
Once dosa tawa heats, pour dosa and put it into a plate one by one on top.
ஊற்றிய தோசை ஒவொன்றாக கைகளால் பிய்த்து, மிக்ஸி கப்பில் போட்டு  பொடி செய்து கொள்ளவும். இவ்வாறு அனைத்து தோசைகளையும் மிக்ஸியில் போட்டு பொடி செய்து கொள்ளவும்.

தாளிப்பதற்கு:
1) வேகவைத்த துவரம் பருப்பு 2) புளிநீர் கரைசல் சிறிதளவு 3) இஞ்சி சிறு துண்டுகளாக சிறிதளவு 4) கடுகு மற்றும் சீரகம் சிறிதளவு 5)  பெருங்காயம் 6) பச்சை மிளகாய் 7) கறிவேப்பிலை 8) உப்பு  
For seasoning:
1) Boiled Toordal 2) Tamrind juice 3) Ginger (greated) 4) Mustard and Cumin seeds 5) Hing 6) Green Chilli 7) Curry leaves 8) Salt
பாத்திரத்தில் எண்ணெய் ஊற்றி அடுப்பில் வைக்கவும். எண்ணெய் சூடானதும் கடுகு மற்றும் சீரகம் சேர்க்கவும்.
Add oil in appropriate vessel and put it into the stove and heat it. Once oil started heat, add Mustard and Cumin seeds.
கடுகு வெடித்ததும், கறிவேப்பிலை, இன்ஜி துருவல், மிளகாய், பெருங்காயம், புளி கரைசல் போட்டு வதக்கவும். சிறிது நேரம் கழித்து வேகவைத்த துவரம் பருப்பு மற்றும் உப்பு போட்டு வேகா வைக்கவும்.
Once Mastard seed blasted, Curry leaves, Ginger (greated), Chilli, Hing, Tamrind juice need to add and heat it. Some time after boiled Toor dal and salt need to add and boil it.
சிறிது நேரம் வெந்தவுடன், மஞ்சள் நிற கிரேவி  போல கொதிக்கும்.
After boil and fried, will get yellow color gravy.
மிக்ஸி மூலம் சிறு சிறு துண்டுகளாக்கப்பட்ட தோசைகளை, கொதிக்கும் க்ரேவியுடன் சேர்த்து பிராட்டி எடுக்கவும். இப்பொழுது  "பப்பு  ரொட்டை" ரெடி.
take sliced dosa and mixed with gravy will get tasty "Pappu Rottai".
அடுத்த படியாக  சைடு டிஷ் "உளுந்து சட்னி"  செய்வதைப் பார்க்கலாம்.

How to make "Ulrddal chatni" ?
தேவையான  பொருட்கள்: 1)  1/3 கப் உளுத்தம் பருப்பு 2)  சிகப்பு மிளகாய் 3 3)  புளி சிறிதளவு 4)  பெருங்காயம் 5)  உப்பு 6)  வெள்ளம்
உளுத்தம் பருப்பு, மிளகாய், புளி  மற்றும் பெருங்காயம் போன்றவற்றை தவாவில் போட்டு வதக்கவும்.
Ingredients: 1) 1/3 cup Uraddal 2) Red Chilli 3 3) Tamarind 4) Hing 5) salt 6) Jaggery
Roast Uraddal, Chilli, Tamarind and Hing.
வறுத்த பொருட்கள் சூடேறியவுடன், அதனுடன் சிறிது உப்பு மற்றும் வெள்ளம் சேர்த்து மிக்ஸியில் போட்டு நன்றாக அரைக்கவும். சுவையான சிறிது காரமான "உளுந்து சட்னி" ரெடி.
Once heat reduced,  add salt and jaggery with roasted items and grind it in mixi. Now tasty and little spicy "Uraddal Chatni" ready.
சுவையான சிறிது காரமான "பப்பு ரொட்டை" மற்றும் "உளுந்து சட்னி" சாப்பிட தயார்.
Now tasty and spicy "Pappu Rottai" and "Uraddal Chatni" ready to eat.

I have been cooking from my teenage ,Most of the time i love to be in Kitchen Well i don't have a high-end kitchen still I like the most.
Soo Yesterday as it was 2nd Day of Eid Al Adha I cooked Mutton Daalchaa it's a most popular dish in Hyderabad and Lucknow and each place have there own way to cook you can't argue on which one is better soo I would like to share my recipe how it was
1. Wash the toor dal thoroughly and add it to a pressure cooker along 1-2 slit green chillies, approx 3tsp oil Add in 2 cups of water and let it cook for 10 minutes or till 4 whistles. Mash the dal a little bit.
2. In a pessure cooker, heat oil, add onion, Cinninmon stick, bay leaves and saute for a while, add ginger garlic paste saute well.
3. Add tomatoes garam masala powder,Cumin Powder, red chilli powder,haldi powder and salt and stir well.
4. Add half glass water and stir till oil get separate.
5. After 15 min of process add Mutton Add little water and pressure cook until the mutton gets soft.
6. To the cooked mutton, add bottle gourd(lauki) cook again for about 3 whistles for the lauki to get soft.
7. Lastly Combine evrything that is the dal and the mutton curry made with kaddu.
8. Take a pan add 3 tbsp Oil add slice onion had kashmiri red chilli let the onion get brown add gravy in pan garnish with coriander.

Specially made during fasting days, this Kuttu ki poori is so tasty and healthy apart from being gluten free. It can be made with or without boiled potatoes. In fasting days, Kuttu ka atta or buckwheat flour can be replaced by Rajgira or Singhare ka Atta as well. How to Make Kuttu Ki Poori recipes super suvai tamil
1.Take 2 cups of Kuttu ka atta in a large deep bowl.
2.Add boiled potato to this flour and mix well with a spatula.
3.Knead a smooth dough by adding sendha namak and required water. Make sure it does not get sticky otherwise pooris would not be rolled properly.
4.Cover the dough with a thin plastic sheet and keep aside for at least half an hour
5.After 30 minutes remove the sheet.
6.Now divide the dough into equal small size balls.
7.Sprinkle flour over the rolling board to avoid stickening of Poori and roll it in a round shape using rolling pin. Don’t make it too thin.
8.Gently slide one poori in the hot oil and deep fry till it puffs up. Fry on both sides till golden and crisp.
9.Repeat the process with rest of the pooris and place on paper towels to remove oil.

How to Make Luchi recipes super suvai tamil
1.In a deep bowl mix maida, salt, ghee and water to prepare a soft dough.
2.Gradually add water as required for kneading the flour.
3.Divide the dough into equal small portions and make balls to roll it out.
4.Before rolling each ball dip it a little in water or oil from one side to avoid stickening.
5.Now roll each ball into a circle of equal size.
6.Heat oil in a pan or kadhai on high flame.
7.When the oil is perfectly hot, slide the Luchi in the hot oil for frying it.
8.Luchi will begin to puff up. Cook on both the sides and avoid burning it.

How to Make Mysore Masala Dosa recipes super suvai tamil
1.Soak all the ingredients except semolina for about four hours.
2.Mix the semolina, salt and water. Make a batter and keep it aside overnight to ferment.
Prepare dosa masala:
1.Boil and peel the potatoes and mash them.
2.Grind the garlic, ginger, coriander leaves, green chillies and onions to make a paste.
3.Heat oil in a pan and add the mustard seeds to it.
4.Saute the remaining onions in it.
5.Add the paste and fry for some time.
6.Add the tomatoes, potatoes, salt and curry leaves.
Prepare red chutney:
1.Roast the chana dal, until slightly browned.
2.You could roast the onion, garlic and ginger for a minute also or just add them raw to the blender.
3.Mix all ingredients and blend to form a paste.
Prepare dosa:

10 pieces of white bread
2 liters milk
4 ordinary barfis
Badam and pistachio for garnishing
A pinch of saffron
Chandi ka vark
Rose petals
1 cup sugar
4 Tbsp desi ghee
How to Make Bread Rasmalai Super Suvai Tamil
1.With a small katori or with a tart mould cut out small rounds from the bread pieces, keep it aside.
2.Take half cup sugar and boil till a thin syrup is formed.
3.Boil milk and while thickening add the powdered barfi and the rest of the sugar.

5.Take a tava and heat it, on this heated tava saute the round bread pieces slightly brown on both sides.

Specially made during fasting days, this Kuttu ki poori is so tasty and healthy apart from being gluten free. It can be made with or without boiled potatoes. In fasting days, Kuttu ka atta or buckwheat flour can be replaced by Rajgira or Singhare ka Atta as well. These pooris recipes super suvai tamil are extremely crisp and taste as good as regular pooris.

How to Make Kuttu Ki Poori recipes super suvai tamil
1.Take 2 cups of Kuttu ka atta in a large deep bowl.
2.Add boiled potato to this flour and mix well with a spatula.
3.Knead a smooth dough by adding sendha namak and required water. Make sure it does not get sticky otherwise pooris would not be rolled properly.
4.Cover the dough with a thin plastic sheet and keep aside for at least half an hour
5.After 30 minutes remove the sheet.
6.Now divide the dough into equal small size balls.
7.Sprinkle flour over the rolling board to avoid stickening of Poori and roll it in a round shape using rolling pin. Don’t make it too thin.
8.Gently slide one poori in the hot oil and deep fry till it puffs up. Fry on both sides till golden and crisp.
9.Repeat the process with rest of the pooris and place on paper towels to remove oil.
