what do I do with my summer tomatoes?

okay as promised here is my tomato recipe post. i know tomato season is almost over but hopefully everyone can still make use of it. these are all from my large collection of cook's illustrated back issues. i have made all of these though! i really tried to make the text as readable as possible but i'm sorry if it isn't 😭 also i know this is not accessible for people who use screen readers and i'm sorry about that too! i just don't have time to type up all these recipes 😭😭

first of all, this is just a slightly upgraded version of the classic southern tomato sandwich, which is the best way to experience your big, hearty heirloom tomatoes or slicing tomatoes:

okay now for some dinner recipes. this following recipe for tomato tarte tatin is actually one of my all-time favorite dishes, i really look forward to making it every summer. one time i shared this recipe with a friend and they later told me it had become a household favorite that their family ended up making a bunch of times. i've also made it more than once for guests i want to impress. THIS IS A VERY GOOD RECIPE. you don't have to use plum tomatoes specifically—any medium-small variety that is firm and not too juicy will work. i actually always use juliet tomatoes.

next up is tomato cobbler! this is also very good, just imo slightly less good than the tarte tatin. the tarte tatin is like a 10/10, and this is a 9.5. it's great with fresh basil too!

if you're not in the mood to make a cobbler or tart and want something way simpler, you can whip up some pappa al pomodoro, which is extremely easy and very tasty:

finally, if you have pounds and pounds of tomatoes to use up, you can make this sauce and freeze it to get that fresh tomato flavor all year round.

this recipe uses a clever technique where you deseed the tomatoes, strain the seeds from the gel, reserve the gel, and add it back in after cooking so the sauce maintains its fresh raw summer tomato flavor. i have actually used this technique in other recipes as well. like the next time you make a tomato soup, even if you use canned tomatoes, you can throw in one fresh tomato, deseed it and add the gel at the end. it really does give a nice fresh flavor. actually, i've never done this, but it would be a good idea to freeze the tomato gel in ice cube trays so you can add it to your soups and sauces all year. just make sure you add it at the end of cooking, since the idea is for it to taste raw.

I love love LOVE the anticipation of a good Demon Invasion arc in a fic where Shen Yuan and Shen Qingqiu are different people. It feels like the author is hosting a game show!!! "Who will be poisoned today, dear readers!? Shen Yuan? Or his father/brother, Shen Qingqiu (Jiu)??? Cast your votes now folks!!" And either way it's always heart wrenching! I adore this moment every time!!!!
