People are always amazed at the beautiful "flower" an artichoke makes, but of course to a botanist this is truly an inflorescence - a head of flowers, just like sunflower, dahlia, chrysanthemum, or any other daisy. And the purple flowers aren't edible. What we consume is stem and bract (leaf), drowning in butter or mayo.
