I don't drink as much as I used to but when I do, I try to make it count. I'm lucky enough to live just a couple blocks from a wonderful brewery called Dovetail that brews continental lagers and ales, beers based on traditional German, Czech and Belgian styles. I visited Dovetail today to sample a couple half liters of their newest beer, simply called Pils. It's advertised as somewhere between a Czech and German pilsner beer. A new flagship from what I've been told. It is refreshing and crisp from the stichfass (wooden cask) and plenty bitter for its 4.6 percent alcohol by volume. It's really quite good. Future signature beer for Dovetail?
