If you mean fountain-view, the grammar should probably be vue la fontaine. if you meant view (verb) fountain, it could be regarde or vois la fotaine, which are pretty clunky although not the weirdest and clunkiest French place names. Also, it seems unlikely that the city would be named after the fountains? The fountains would probably be a newer feature.
Anyway, French place names are kind of weird and all over the place. For example, If you ever thought Nice was kind of weird name for France, that’s because it is. Some Greeks settled in the area, named the region after the region of Greece that they were from (Marseilles), and then named their new settlement after they defeated some invaders in honor of Nike. Now almost a thousand years later, it’s Nice. Contrast Lyon which was named after a Celtic god.
So you have options! Do you have a god of rivers or springs? Or a patron saint associated with water or something that the fountains are all dedicated to.
Fontaine would be the old French word, from the latin fons. Courfons maybe? Valfontaine? Valeau Eauval? Mesnileau?
