4 Easy Broccoli Recipes

1. Broccoli Baked Potato
Ingredients:
- Large baking potato (or two small)
- Broccoli, chopped into florets, and steamed until tender-crisp.  Be sure to remove all water from the broccoli when you are done cooking it!
Instructions: Preheat oven to 450 degrees Fahrenheit. Scrub your potatoes clean with a vegetable brush, and prick with a fork. Bake the potatoes in their skins for about 45-60 minutes, or until tender when pricked with a fork.  Cut each potato lengthwise to open it up. Add broccoli florets and butter (or garlic butter) and salt & pepper to taste!
Recipe Notes:  This is a great way to make broccoli taste like it's come straight from the oven! Using this method for steaming your broccoli results in tender-crisp florets, which are full of flavor. When you're done cooking the potatoes and opening them up with slits across their tops, be sure to cut off any burned or hard pieces around the edges.
2. Broccoli Rice Casserole
Ingredients:
- Frozen chopped broccoli (or fresh if you prefer) (about two cups). If using frozen broccoli, make sure to thaw it out first!
- Cooked rice (you can use any kind of leftover cooked rice...brown or white both works well!). Cook about one cup of rice at a time and use the leftovers for other recipes throughout the week.
- Cheddar cheese (the sharper, the better!) shredded or cubed to your liking.
Instructions: Preheat the oven to 350 degrees Fahrenheit if it isn't already heated up from cooking something else!  Spray a glass baking dish with cooking spray and add your two cups of cooked rice to the dish. Top it with steamed broccoli, then top that with shredded cheddar cheese.  Bake for about 20 minutes or until all of the cheese has melted on top!
Recipe Notes: This is a great way to use up leftover cooked rice from other meals throughout the week.
3. Pasta and Broccoli
Ingredients: 
- One box of pasta (any kind you like, we prefer linguine). Cook according to the directions on the package and drain.  Set it aside for now!
- Frozen chopped broccoli (or fresh if that's what you have!) Just make sure that your frozen broccoli is thawed out first.
- Olive oil (enough to coat the bottom of a large skillet)
- Garlic cloves, minced. About three or four should do!  Any more than that, and you'll overpower your dish with garlic flavor...and nobody wants that!
Instructions: In a large pot or Dutch oven, heat some olive oil over medium heat. Add your minced garlic and cook it for about a minute or two until the edges start to turn golden brown.  Add in your steamed broccoli (thawed out if using frozen) and Sautee with the garlic for another minute or so.
-Then add in your cooked pasta & mix well! Serve immediately.
Recipe Notes: This is a great way to use up leftover cooked pasta from other meals throughout the week. If you're using fresh broccoli, be sure not to overcook it!  Add your thawed-out frozen broccoli with garlic and mix for about one minute before adding in your pasta. Overcooking veggies makes them soggy and not very tasty!  If you like your veggies crisp and crunchy, be sure to add them in at the last minute.
4. Broccoli Omelet with Toast
Ingredients:
- Whole wheat toast (two slices). Make sure to use whole wheat for this one, as the carbs in white bread won't keep you full very long!  You can also experiment with other kinds of bread if you like.
- Two eggs. Make sure to use whole eggs for this recipe, as egg whites alone won't provide you with enough protein and carbs to keep you satisfied until lunchtime!  You can also substitute egg whites if that's what your diet allows...just be aware that it has less protein than using the entire egg.
- A pinch of salt and plenty of pepper to taste.
- Frozen chopped broccoli (or fresh if that's what you have!) Just make sure that your frozen broccoli is thawed out first!  You can also use other veggies, like spinach or mushrooms, for a different twist on this recipe!
Instructions: Whisk together your eggs in a bowl with salt and pepper. Heat up your skillet over medium heat to cook everything evenly, then add some oil or cooking spray so that it doesn't stick! Pour half of your veggies into the egg mixture so they can start to cook while you fold your omelet...if you're not sure how to do this, check out a tutorial online!
- Fold your omelet in half and cook until the egg is cooked through, about three minutes per side. Repeat with other egg mixtures to make another full omelet. Serve hot!
