one problem with trying to level up in cooking is that 'next time you make [x], try adding a splash of wine' is intriguing advice but was written for and by people who are living a completely different kind of life than I am

#yeah? just splash in some of the wine I have just lying around and open already or that I'll drink today if I open it for this? #I buy wine special for recipes that call for it and freeze the rest pre-portioned for future use in those same recipes #the only wine I like to drink is moscato which is a sweet wine you don't really cook with :') #I should get some more of those sutter home mini bottles to just have around perhaps... #anyway my brother got me salt fat acid heat for christmas and it's got me looking at sauteed mushrooms going 'hmm... acid....' #I mean I'm eating them with tomatoes but the tomatoes are seared in the pan face down so the mushrooms aren't getting any of that #I could have thrown in some vinegar I GUESS but if I get too heavy handed that's the whole dish in the garbage for me #about me
