It’s Friday! Time for Mjadara Hamra/ or red Mjadara. A Burghul and lentil Mjadara originally a southern Lebanese dish. A very tasty vegetarian and vegan dish enjoyed with a Lebanese mixed salad seasoned with lemon and extra virgin olive oil. Cook one cup of brown lentils in a pot with 2 cups of water for 15 minutes, add 1/2 cup of coarse brown Burghul, and 1/2 a cup of water and salt to taste simmer over medium heat. Dice an onion and caramelise in two tablespoons of oil until dark brown in colour, add two tablespoons of water and let the colour infuse, add this onion mix to the lentils. This is what gives the Mjadara it’s dark red colour and hence it’s name. Please try it!
