Thai red curry is such a comfort food for me omg. I mean I love Thai food in general (esp shrimp Tom Yum Soup) because it’s like not TOO spicy for my whitewashed Bengali ass, but it’s sooooo good and flavorful

Chatpata Bhujia for this Diwali
Fried aloo bhujia is a tangy, beloved snack that adds an extra zest to Diwali. It is a traditional dish that has mashed potatoes mixed with cumin, chilli, and other aromatic spices, which are then fried in oil till golden brown. Let us see how to make this zesty fried bhujia along with sunflower oil manufactures India.
Ingredients:
Potatoes (boiled 250 grms)
Oil
Mint powder - ¾ tsp
Gram flour - 2 cups
Salt as per taste
Chilli powder - ¼ tsp or as per taste
Pepper powder - ¼ tsp or as per taste
Chaat masala - ½ tsp
Ginger powder - ½ tsp
Garam masala - ⅓ tsp
Cumin powder - ½ tsp
Hing / asafoetida - ⅛ or ½ tsp
Method
In a pressure cooker, add a cup of water and place a rack or trivet. Place a bowl above it and add the potatoes. Cook it until 4 whistles.
Once it's done, remove it from the heat and let the pressure release. Once the pressure is released, remove the potatoes and cool them completely. As it cools down, peel it and grate it finely with a grater. Make sure that there are no lumps in the grated potatoes.
Now sieve the spice powder, add it to the potatoes, and mix it well. Do not worry; the mixture will be sticky.
Once it is completely mixed, add the besan flour. In a kadai, heat a tablespoon of oil and pour it. Mix everything until it is non-sticky and stiff.
Now on medium heat, heat the oil in the kadai. In the middle, grease the sev maker and fit the plate. Carefully divide the mixture into 2-3 logs.
Add a small piece of dough and check whether the oil is hot. If it comes up without browning, you are good to go.
Move your hand in a circular motion, release the aloo bhujia down the sev maker, and fry on medium flame. Once it's firm on one side, flip it to the other and fry until golden brown.
Remove it and place it in a kitchen towel or colander for the excess oil to drain. Once it drains, put it in an airtight container.
Your yummy and zesty aloo bhujia is ready to be served.

  Today, I'll share a fantastic recipe for homemade potato chips, ie, Dry Aloo Chips, that are not only delicious but also hygienic, free from artificial flavorings and preservatives. These sun-dried chips have an impressive shelf life of up to a year, making them perfect as a delightful side dish or a quick, crispy snack for kids.
Ingredients
Potatoes
1 tbsp Salt
Oil (For deep frying)
Instructions
To begin, it's best to choose good quality, large-sized potatoes for this recipe.
Start by peeling and washing the potatoes thoroughly.
While a slicer works well, you can also make thin slices using a knife.
Heat a pan of water and add approximately 1 tablespoon of salt.
Once the water begins to simmer, carefully add the sliced potatoes and cook them for about 1 minute.
Remove the partially cooked slices from the boiling water.
Next, spread the potato slices on a cloth and allow them to dry for at least a day.
Afterward, transfer them onto a plate and place them under the sun for an additional day.
Observe how the potato slices become wonderfully crispy and hard during this process.

Pazham pori recipe with step by step pics. Pazham pori also known as ethakka appam is a popular snack from Kerala made with ripe bananas. Banana slices are coated in an all-purpose flour batter and then deep fried. A tasty vegan banana fritters recipe that makes for a good tea time snack paired with a cup of hot chai or coffee.

The bananas used to prepare pazham pori are nendram pazham. These variety of bananas are long, large and are firm even when ripe. They are used not only to make the famous Kerala banana chips but also these banana fritters and some more sweets. Now this Nendram pazham or ethapazham is not easily available everywhere in India or outside India. So you can use firm ripe bananas. Do not use bananas that are too ripe or very soft. In the recipe also I have used ripe bananas which are sweet and yet firm. If using nendram pazham, then use the ripe ones. However the taste of these banana fritters is awesome when made with Nendram pazham. The mushy, soft, sweet texture of the cooked bananas pairs nicely with the crispy and soft texture of the all purpose flour batter layer. Whenever my parents go to Kerala, they get nendram pazham for me. I always steam them and have plain or at times with puttu. Its only me in our family, that has a special taste for these bananas. So I only cook it for myself 🙂 My mom used to prepare these sweet banana fritters on occasion like an evening snack for us. Also during my stay in Kerala, the hotel where we lived would serve pazham pori at least twice or thrice a week in their complimentary evening snacks menu. Apart from pazham pori, there would also be Paruppu vadai, sandwich and Aloo bonda. Preparing these banana fritters are very easy. All-purpose flour is used for the batter. So do try to use organic all-purpose flour or unbleached all-purpose flour. For health reasons, you can use whole wheat flour too. Also some rice flour can be added to the batter to make the fritters crisp. Serve pazham pori hot or warm as an evening snack with chai or filter coffee. You don’t need any other accompaniment with it. Step-by-Step Guide
How to make Pazham Pori (Banana Fritters)
1. In a mixing bowl, take ½ cup all-purpose flour, 1 tablespoon sugar (optional), a pinch of turmeric powder and a pinch of baking soda. You can also add 1 tablespoon of rice flour for some crispiness.

2. Mix very well with a spoon or wired whisk.

3. Then add water in parts. I used ⅓ cup of water. Depending on the quality of the flour, you can add less or more water. If the batter becomes thin, then add some more all-purpose flour.

4. Mix to a smooth batter without any lumps.

5. The batter consistency is slightly thick so that it coats the banana slices very well. Keep aside.

6. Peel two large bananas or 3 medium-sized bananas.

7. Then first slice them horizontally in half or quarters. Then slice each piece vertically in two equal parts.

Frying pazham pori 8. Heat oil for deep frying in a pan or kadai. When the oil becomes medium hot, then the banana fritters can be fried. Dip each slice in the batter and coat it well with the batter.

9. Gently place the batter coated banana slices in the medium hot oil. Fry the slices depending on the size of the kadai or pan. Take care not to overcrowd the kadai.

10. When one side is cooked, then turn over gently and fry the other side.

11. Fry till both sides are light golden. You don’t need to fry these fritters too much. stop once the bananas start oozing out moisture into the oil and the oil begins to splutter too much. We just need to fry till the outer coating is done. A light golden is fine.

12. Remove with a slotted spoon draining extra oil in the kadai itself.

13. Keep the fried banana fritters on kitchen paper towels. In the same way, fry the remaining banana slices. You may see some caramelisation happening on the remaining banana fritters. This is due to the moisture and sugars which have leeched into the oil while frying the first batch. Prepare the pazham pori in the same manner and keep them on kitchen paper towels, so that the excess oil is soaked up.

I got this simple Tendli Recipe from a Gujarati friend of my husband. Thanks to him and his mother, I now know a couple of Gujarati recipes too. There’s something about this particular food culture that may not woo a lot of people at the first go. But once you keep trying dishes from the Gujarati food culture, you’ll know the versatility and the real flavors, which are much more than just sweet. This Gujarati style Kundru ki Sabji is one of those recipes, which are not just super simple and quite basic at the very first look, but also packs super flavors in it and is very well textured too. The veggies ivy gourd (tendli) and potatoes (aloo) add to the texture bit as well as make the dish comforting too.

Ivy gourd has many regional names in India. For instance, it is ‘tendli or kundru’ in Hindi and Konkani, ‘tondli’ in Marathi, ‘tindora’ in Gujarati, ‘dondakaya’ in Telugu, ‘kovakkai’ in Tamil, ‘tonde kayi’ in Kannada, ‘kundri or toruni’ in Bengali, etc. It is small in size, but is considered as a wonder ingredient because of its medicinal and health benefits. You really don’t have to do much to prepare this Kundru ki Sabji. Just fry your whole spices like mustard seeds, cumin seeds, curry leaves, ginger, green chilies along with the chopped ivy gourds and potatoes in a pressure cooker. Then, spice it up with turmeric powder, coriander powder, cumin powder and red chili powder (if using), pour in some water and season it well. Next, just cover and pressure cook till well done. You can keep the Tendli Bhaji gravyish or simmer it further for a semi-dry version.

How to make Kundru ki Sabji
Preparation 1. Clean 250 grams of tendli or tindora or kundru (ivy gourd) in water. Then, wipe them with a kitchen towel and chop lengthwise into 4 pieces. Wash, peel and dice 1 large potato too.

Make Tendli Recipe 2. Heat 2 tablespoons oil or ghee in a 2 litre pressure cooker. Add ½ teaspoon mustard seeds. I have made Tendli Bhaji in my small pressure cooker. It saves time, fuel and is easy for me. However, you can cook this recipe in a heavy bottomed pan or kadai/wok too.

3. When the mustard seeds crackle, add ½ teaspoon cumin seeds.

4. Now, add 1 sprig curry leaves, 1 inch finely chopped ginger, 1 slit green chili and fry for a minute.

6. Add the following ground spices: - ½ teaspoon turmeric powder - 1 teaspoon coriander powder - 1 teaspoon cumin powder - ¼ teaspoon red chili powder, if using – the addition of red chili powder is optional.

7. Stir to combine the spices evenly with the veggies. Add ½ cup water and salt as required.

8. Pressure cook on medium heat for 1 to 2 whistles or till both the ivy gourds and potatoes are tender and cooked well. Check if there is any water still remaining. If yes, then keep the cooker on the stovetop, so that the water dries up. Also, the potatoes and ivy gourds should be completely cooked.

9. If you want a little gravy, then you can keep the water and no need to simmer the gravy. Since we like this Tendli Recipe as a side dish with roti, I prefer it with no water.

10. You can serve Kundru ki Sabji or Tendli Bhaji with Gujarati rotli or chapatis. This sabzi also goes well with plain paratha. You can also have it as a side dish with dal and rice.
