Scooping a spoon of lukewarm macaroni salad — glooped in mayonnaise, studded with unidentifiable vegetables — onto a paper plate at a picnic or barbecue feels like a quintessentially North American experience. “I’ve always thought of pasta salad as a peculiarly American treatment of pasta, and not even necessarily Italian-American. Recipes have been printed in the U.S. at least since 1916,” summarized Chris Crowley for Taste. But the concept of eating cold, dressed noodles has a surprisingly rich Jewish history. 
It’s said that the Jews have an ancient connection to pasta; historian and archeologist Susan Weingarten claims that the first written mention of pasta appears in the Talmud, referencing a food called triqta. Prolific Jewish food writer Claudia Rodin takes this further, crediting Jews with being the first to champion eating cold pasta and inspire others to explore and invent variations. 
“Centuries before Americans popularized pasta salads Jews were the only Italians to eat cold pasta,” Rodin wrote in the Spring 2003 issue of Notes from Zamir. 
Cookbook author Marcia Freidman agrees, explaining that pasta salad evolved as a clever Italian Jewish invention intended to make cold pasta more palatable on Shabbat, when it is prohibited to cook. This prohibition has particularly shaped Saturday lunch fare, which traditionally consists of slow-cooked dishes assembled before Shabbat begins on Friday night, or cold dishes. It’s worth noting that pasta salads are very popular among Orthodox Jews in the U.S. for this reason, and often skew more American than Italian when it comes to flavor and ingredients (hello, mayo!). 
“In Southern Italy, Jewish communities often used a sweet and sour dressing made of vinegar and sugar, or sometimes lemon and sugar, to dress their pasta salad,” said Freidman. This not only added flavor but also served as a preservative. 
In “Jewish Flavors of Italy: A Family Cookbook,” for instance, Silvia Nacamulli includes a recipe for Tagliolini Freddi per Shabbat (cold tagliolini for Shabbat), where pasta is enrobed in a punchy tomato sauce laced with vinegar, sugar, lemon and chili. “The dish tastes slightly different when warm rather than cold, but it is delicious either way,”  writes Nacamulli. The tomato sauce is “actually better used cold,” she says. 
Part of the reason Italian Jewish cuisine is so distinctive is due to Italian treatment of the Jews in the 15th and 16th centuries. Jews were often discriminated against through social and economic restrictions, and were segregated in ghettos. In these ghettos, Jews crafted a cuisine that adhered to their dietary restrictions and incorporated local ingredients that were disliked by non-Jews (and thus cheap and plentiful), like eggplant, artichokes, fennel and onions. They transformed them into delectable dishes like caponata, fennel gratin and  — yes  — pasta salad.
Benedetta Jasmine Guetta, author of “Cooking all Guidia: A Celebration of the Jewish Food of Italy,” hasn’t found direct evidence of Jews inventing the concept of eating cold pasta in her research, though she sees why it would have been popular among Jews who observed Shabbat. Instead, Guetta suggests a cold rice salad, with recipes she’s seen dating back to the 16th century, could be the origin of pasta salad. Many of the vegetables and ingredients typical of Italian pasta salad feature in this cold rice dish. 
“As pasta gained more variety, it’s possible that people started treating it like rice. It’s possible that Jews, accustomed to serving their pasta cold, contributed to this evolution,” she hypothesized.
In Italy and beyond, pasta salad has become an integral part of the Shabbat table, with families passing down their unique recipes from generation to generation. Whether it’s a classic American macaroni salad or a sweet-and-sour Roman recipe, pasta salad symbolizes culinary creativity and tradition. And while the historical connection between Jews and pasta salad remains open to interpretation, its enduring presence reflects the richness of Jewish culinary heritage and its ability to adapt and evolve over time.

ingredients:
Vegan mayonnaise, ½ cup
Mustard, 1 tablespoon
Lemon juice, 2 tablespoons
Garlic, 1 clove, grated
Sea salt, ½ teaspoon
Freshly ground black pepper
Shaped pasta, 220 grams
Red onion, chopped, ½ cup
Red bell pepper, ½, chopped
Celery, 2 sprigs, chopped
Peas, ¾ cup
Pickled capers (caparis), 2 tablespoons (optional)
Fresh dill, ¼ cup chopped
Parsley, chopped, ¼ cup
How to prepare the best vegan pasta salad:

1 tablespoon fresh chives, chopped
1/2 red onion, finely chopped
2 stalks of celery, finely chopped
Pickled dill 1 finely chopped
Salt and pepper to taste
How to prepare vegetable salad
Place the halved or quartered potatoes in a large pot and cover them with cold water. Add a little salt to the water.
Bring the water to a boil over high heat and cook the potatoes until they can be pierced with a fork, about 10-15 minutes. Be careful not to overcook as you want to keep the shape for the salad.
After the potatoes are cooked, put them in a colander and let them cool for a few minutes.
In the meantime, prepare the sauce by combining vegan mayonnaise, Dijon mustard, apple cider vinegar, chopped dill, parsley and chives in a small bowl. Stir well until all ingredients are completely combined.
In a large bowl, add the cooled potatoes, chopped red onion, celery stalks and dill pickles.
Pour the sauce over the potato mixture and gently toss until all the ingredients are evenly coated.
Taste the potato salad and add salt and pepper to your taste. Adjust seasoning as needed.
Cover the bowl with plastic wrap or transfer the potato salad to an airtight container and refrigerate for at least 1 hour to allow the flavors to blend.
Before serving, gently toss the potato salad to redistribute the dressing and garnish with additional fresh herbs, if desired.

2- Vegan pasta salad

225 grams of pasta of your choice
1 cup cherry tomatoes, halved
1/2 cup chopped cucumber

Cover the bowl with plastic wrap or transfer the pasta salad to an airtight container and refrigerate for at least 1 hour to allow the flavors to blend.

tip:
You can add other vegetables like chopped zucchini, grated carrots or corn kernels to customize the pasta salad.
You can also add some protein by tossing in some chickpeas or cooked tofu cubes.
If you prefer a creamier sauce, you can add some vegan mayonnaise or dairy-free yogurt to the sauce mixture.
Leftover pasta salad can be stored in a sealed container in the refrigerator for up to 3 days. Stir again before serving to redistribute the sauce.

Pesto Pasta Salad
PESTO SAUCE:
Fresh basil leaves 
Fresh Parmesan/Reggiano 
Pine nuts 
Olive oil
Garlic
INGREDIENTS:
Pasta – Any short shape your heart desires! Shells, macaroni, wheels – go wild! I went spirals. I like to live life on the edge. 😂
Just a dab of MAYONNAISE – Not intended to make this a greasy mayo-laden pesto pasta salad! But a little dab goes a long way to give pesto pasta salad an edge of creaminess so it stays nice and “juicy” even the next day. It really makes a difference. Prefer to skip it? Just add a little extra olive oil.
Bocconcini, cherry tomatoes – My add-ins of choice, so it’s not just all pasta. Love the combo of juicy tomato and the soft bites of bocconcini. If you want to skip these, just add a little more pasta. Or, use other add-ins of choice!
Rocket/arugula – I like to add some type of leafy greens into me pesto pasta salads for a hint of freshness and pro
DIRECTIONS:
Cook pasta in salted water per packet time plus 1 minute so it’s extra soft, as explained above. Salted water is a must, else you will feel like your pasta salad is a little under seasoned. (BTW, I start my timer as soon as the pasta goes into the boiling water, not once it comes back up to the simmer. Just in case you’re wondering. 🙂)
Rinse the pasta under cold running water to remove excess starch (which makes it sticky, not what we want for pasta salad) and cool.
Drain well and cool.
Pesto & mayonnaise first – Mix the pesto and mayonnaise through the pasta first.
Tomato & bocconcini next – Then gently mix through the tomato and bocconcini. We don’t want to bash up the tomato too much.
Leafy greens last – And lastly, toss through the rocket/arugula. Just quickly, to disperse. Don’t mix too much else the rocket tends to get weighed down with pesto. In other words – the leafy greens hog the pesto, and we can’t have that!

Instruction:
Cook the macaroni: In a large pot of salted boiling water, cook elbow macaroni according to package directions until al dente. Strain it and wash it with cold water to stop the cooking process. Cancel.
Prepare Dressing: In a mixing bowl, combine mayonnaise, Dijon mustard, apple cider vinegar, honey, salt, and pepper. Whisk until well blended and the dressing is smooth.
Mix the ingredients. In a large mixing bowl, combine cooked and cooled macaroni, chopped celery, chopped red and green bell peppers, chopped red onion, chopped carrot, chopped parsley, and chopped green onion. Toss gently to distribute ingredients evenly.

As much as I love cooking, the summer months of high 90's have me looking for easy options to feed us. This Smoked Turkey Salad, which came from my take out shop, fills that need. A few easy to get ingredients with the star being the smoked turkey are easily assembled into this winner of an entree salad. Serve it with cold fresh cantaloupe or watermelon and a piece of good bread and dinner is ready! Lacking a home smoker, I visit my local barbecue/smokehouse and buy the smoked turkey from them. It's so much better than deli turkey which is usually pumped with water. A couple of other things to enhance the salad are toasting the pecans and soaking the dried cherries to plump them. I used to make this with the Hot Peppered Pecans we sold at the shop but simplified it by skipping that step and adding cayenne. What makes this salad so special The first thing is the smoked turkey. It adds a distinct flavor that roasted turkey doesn't, although I wouldn't turn down roasted turkey if that's all I could get. Bleu cheese brings a distinct taste to counter the sweetness of the turkey and cherries. Celery brings its crunch to the party. Either apples or dried cherries can be used for the sweetness they impart. If using apples, add them at the last minute as they have a tendency to turn brown. I have found that Gala or Pink Ladies don't brown as quickly. If using the dried bing cherries, soak them first to bring out all of their flavor. Cayenne gives this salad a kick that rounds everything out and makes this so special. Recipe Ingredients BACK ROW: Bleu Cheese, smoked turkey, pecans MIDDLE ROW: Dried cherries, mayonnaise, celery FRONT ROW: Worcestershire sauce, cayenne pepper, salt Be sure to see the recipe card below for the full ingredients list and instructions. Step by Step Instructions Special Note about the Turkey However, you buy your smoked turkey, have it sliced about 1/2" thick so it can be cubed into about 1/2 " squares. Step 1. Place the pecans on a tray and toast for 7 to 9 minutes until fragrant and slightly browner. If using smaller pieces, reduce the time. Cool and chop. Set aside. Step 2. Cut the dried cherries in half. It is easiest to do this with scissors. Step 3. Cover the cherries with really hot water and let them soak until they soften. Squeeze the water out of them before adding to the other ingredients. Step 4. Place the celery, bleu cheese, toasted pecans, cherries and turkey in a large bowl. Step 5. Place the mayonnaise, worcestershire sauce and cayenne in a bowl. Step 6. Whisk the dressing ingredients together. Step 7. Add the dressing to the bowl and mix everything together. If you're a bread baker, be sure to save the water the cherries were soaked in to use as the liquid or part of the liquid for rye, whole wheat or multi grain bread.  Freeze if not using in a few days.  Thaw in the refrigerator to use.  It's easier to toast pecan halves and chop them.  If chopped nuts are used, reduce the toasting time.   This salad should be consumed in 4 days or less.
