CHOCOLATE DEVIL’S FOOD CAKE Adapted from Zoë Bakes Cakes, by Zoë François (Ten Speed Press) Makes one 9-inch loaf (see above), one 8-inch double-layer cake, or 24 cupcakes 2 1/3 cups (280 grams) all-purpose flour 2 cups (400 grams) granulated sugar 2/3 cup (50 grams) Dutch-processed cocoa powder (sifted if lumpy) 1 teaspoon baking soda 1 teaspoon kosher salt 1 1/4 cups (300 ml) hot strong coffee 2 tablespoons rum or brandy 2 large eggs, at room temperature 1 cup (240 ml) buttermilk 1/2 cup (120 ml) mild-flavored oil (such as vegetable oil) 1 teaspoon pure vanilla extract NOTE: If you aren’t a fan of coffee and rum, substitute with a flat cola or stout. NOTE: To make 24 cupcakes, fill the well of a cupcake pan two-thirds full of batter and bake for about 20 minutes, or until a tester comes out clean. Preheat the oven to 350 degrees F. Generously grease a 9 by 4-inch Pullman pan - or a 9 by 5-inch loaf pan; see above (or two 8-inch round cake pans) – then line with greased parchment paper. Set aside. In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt until well combined. In a small bowl, stir together the coffee and rum. In a separate bowl, whisk together the eggs, buttermilk, oil, and vanilla until well combined. Add the egg mixture and half the coffee-rum to the dry ingredients and mix with a spoon until smooth. Slowly add the remaining coffee-rum and whisk until totally blended and smooth. The batter will be quite thin. Pour the batter into the prepared pan. Gently tap the pan on the counter several times to release excess air bubbles. Bake until a tester comes out clean, about 1 hour 10 minutes (30 minutes for 8-inch rounds). Let the cake cool completely before removing from the pan and inverting onto a serving plate. (If you want to trim the top of the cake – which will be the base – do it now; see above.) Using a metal decorating spatula, cover the cake with an even layer of the frosting (see below for recipes). Top with chocolate shavings, if you’d like. Serve at room temperature. CHOCOLATE FROSTING Adapted from Zoë Bakes Cakes, by Zoë François (Ten Speed Press) Makes enough to cover one 8-inch triple-layer cake or two 9 by 13-inch sheet cakes (you’ll need only about half of this recipe for a loaf cake; see above) Zoë says: This fudgy covering will set with a sugar crust, so spread it just after mixing. 1/2 cup (120 ml) heavy whipping cream, plus more as needed 1 cup (220 grams) unsalted butter 1 teaspoon espresso powder 1 pinch kosher salt 16 ounces (450 grams) bittersweet chocolate, coarsely chopped 2 1/2 cups (300 grams) confectioners’ sugar (sifted if lumpy) In a medium saucepan over low heat, combine the cream, butter, espresso powder, and salt and bring to a gentle simmer, stirring often until the butter is melted. Add the chocolate and swirl the pan until the chocolate is submerged in the hot cream. Let the mixture sit for about 3 minutes, then whisk until smooth. Pour the mixture into the bowl of a stand mixer fitted with the paddle attachment. Let the mixture cool to room temperature; it will become quite thick as the butter and chocolate set. Turn the mixer speed to low, add the confectioners’ sugar, a little at a time, and beat until smooth and spreadable. If the frosting is at all grainy, add additional cream, 1 Tbsp at a time, until it’s smooth. The frosting will be quite soft but firm enough to cling to the cake and spread evenly. Use immediately. CREAM CHEESE FROSTING Adapted from Zoë Bakes Cakes, by Zoë François (Ten Speed Press) Makes enough to cover one 8-inch triple-layer cake or two 9 by 13-inch sheet cakes (you’ll need only about half of this recipe for a loaf cake; see above) Baker’s note from Zoë: Golden syrup is like a light caramel but not as overpowering in flavor; it just adds a nuance that is exquisite. Golden syrup is a staple in most British kitchens, but if you happen to find it in your grocery in the United States, give it a try. 1 1/2 pounds (680 grams) cream cheese, at room temperature 1 1/2 cups (330 grams) unsalted butter, at room temperature 2 teaspoons pure vanilla extract 1/2 teaspoon pure lemon extract (optional) 2 teaspoons freshly squeezed lemon juice 5 cups (600 grams) confectioners’ sugar 2 tablespoons Lyle’s Golden Syrup (see Baker’s Note, above; optional) In the bowl of a stand mixer fitted with the paddle attachment, beat the cream cheese on low speed until it’s smooth and there are no lumps. Scrape down the bowl and paddle often. Add the butter to the cream cheese and continue mixing until smooth, scraping often. You want to make sure none of the cream cheese or butter is sticking to the paddle, or it may end up creating lumps. Mix in the vanilla, lemon extract (if using), and lemon juice. Slowly add the confectioners’ sugar and then the golden syrup (if using) and continue mixing until smooth. If the frosting is thin and soft, you may want to chill it to give it more body and allow you to fill and decorate with more ease. Just cover the bowl and refrigerate until the frosting is firm, up to 24 hours, then return to the stand mixer fitted with the paddle attachment and mix on low speed until smooth. Use immediately. College Football week 13
It’s the last weekend before conference championship games and this season has flown by way too fast. I had a decent week, going 3-1-1 ATS to push my record to 38-35-3. The money line underdogs didn’t fare as well, going 0-2. I’ve got a shot at hitting my 60% winners mark, but after how up and down this season has been, I’d be happy to just clearing 50%. I usually don’t pick games so early in the week, but do to travel (Vegas baby!) I have to put them out today. I’ll do my best to account for the inevitable “stale” lines that some of these will wind up being. Here we go… Ole Miss @ Mississippi State (-16, o/u 62.5) – Thursday Game Ole Miss has treaded water this season under an interim coach with the remaining talent Hooker Hugh Freeze left behind. A win over their rival would make them bowl eligible, which to some fans is important.  Mississippi State may be playing their last game under Dan Mullen who is again a mildly warm candidate to take whatever job Chip Kelly doesn’t want. This line opened at 17 and I think it’s going to come down another point or more. Most public money is landing slightly on Ole Miss. Ole Miss hasn’t been blown out for the most part in their losses and Mississippi State isn’t drubbing foes either. I think this game is way closer than the line says, so give me the Ole Miss plus the 16 and anything over two TD’s. USF @ UCF (-11, o/u 63.5) – Friday Game The Battle of I-4 in Orlando has huge implications. For those that haven’t lived in Central Florida like me (Go Lake Mary Rams!), this rivalry is a big deal. The winner takes the AAC East and a spot in the conference championship game vs Memphis. For UCF, they are two wins away from a New Year’s Six Bowl. I think UCF is the better team, but they are dealing with the distraction of whether coach Scott Frost leaving for Nebraska. They also have all the pressure on them being at home with more to play for. My lean is they get it done, but not sure by 11 points. I’ll take South Florida and the 11 and I’ll stay on them any line over 10. Iowa (-3, o/u 54) @ Nebraska – Friday Game Before I even start writing this, I’m already second guessing myself. Iowa has burned me the last two weeks and going on the road isn’t confidence inspiring. It helps they are heading to Lincoln where the Huskers are 0-6 ATS and only 2-4 straight up. This is not a very good Nebraska team and their really nice coach Mike Riley is a fired man walking. They also have zero to play for and are a dumpster fire defensively. Iowa should be able to run the ball down their throats and set up QB Nate Stanley for some big plays to the TE’s. In a better not screw me again Hawkeyes play, take Iowa minus the 3. Virginia Tech (-7, o/u 50) @ Virginia – Friday Game Both teams going bowling, though VA Tech has to feel a little disappointed in how this season finished. They were rolling prior to getting a beat down by the Canes, then dropped their next game to Georgia Tech. They struggled with Pitt last week, which makes me wonder how much this team has left in the tank. The Hoos looked like they were on their way to a massive upset last week; right up until QB Kurt Benkert didn’t see Jajuan Jackson waiting in the flat to pick 6 him. It went downhill from there, but they showed they are a much better team in year two under Bronco Mendenhall. I think they come out fired up in Benkert’s last home game and stick it to their in state rivals. I like UVA to cover the 7 and I’ll take them straight up as well. UNLV @ Nevada (-3 o/u 68) – Saturday Game- A very under the radar game for those outside of Nevada or who aren’t Mountain West fans, but this should really be a lot of fun. The Running Rebs need this one for bowl eligibility which is a massive thing for this program. The Wolfpack would love to ruin that dream for their down south rivals. Both teams can score and have really good QBs in Armani Rogers (UNLV) and Ty Gangi (Nevada). Neither team is what you would call stout on defense, so this should be shootout. Give me the over 68, an ice cold beverage and some snacks to enjoy the show. Washington State @ Washington (-9, o/u 48.5) – Saturday Game It’s Apple Cup time in Seattle, and since I live here, there was no way I can’t pick this game. The Huskies have owned this rivalry winning 7 of the last 8 and 4 in a row. The Cougs haven’t won in Husky Stadium since 2007 and they would love to end that streak on Saturday. If they do, Wazzu will win the Pac 12 North and set up a rematch with USC (who they beat) in the Pac 12 title game.  Being around town this week, Husky fans are a bit down and see this season as a disappointment. That is nuts and more based on last season and the lofty expectations they had for 2017. They are not as good as last year, but I’m not sure how much better this Cougars team is from the one that got pasted in Pullman last year by UW. QB Luke Falk has all the records, but hasn’t been spectacular this season. He’s been benched twice and still holds the ball way too long. If he does that on Saturday, the Husky pass rush will make him pay for it. Close game, I like Washington to find a way to win late, but give me the Cougs plus the 9. ��`�A
