I read somewhere that Luffy is so keen on being friends with Law because Law is the first person in his life to ever approach him first. In every other relationship, it was Luffy asking, or demanding, to be friends first.

THIS, I can't emphasize enough. Sunny isn't Law's home and Straw hats aren't his family, how he behaves around them doesn't reflect his true personality. A closer equivalent to his situation is Luffy from Impel Down to Marieford with the ragtag rescue team. He befriended new people, but it was far from Luffy's place of comfort.

That said, I think he matured a little over the period. Early-Punk Hazard is probably where his current homeostasis lies.

thinking about how we only really see law (post timeskip) through the lens of going through a series of stressful tribulations. of course he's going to be grumpy and stressed out! especially when he's surrounded by the straw hats who drive him up a wall.

but i think law's homeostasis lies somewhere around what we see from pre timeskip law. for almost a decade he was just hanging out with his crew friends as they sailed around. and though i'm sure the inevitability of having to face doflamingo at some point and the horrors of his past weighed heavy on his mind, he was surrounded by love and support at all times (especially from shachi, penguin, and bepo who know in great detail everything he's been through).

and i think that on the whole, they were probably the happiest years on his life

one of the reasons i love law is that we have proof that he was always a creepy fucker. there's that panel from his early life that's a class photo for his elementary school where he's holding up a dead frog to the distress of his classmates. he's just Like That. sure a lot of horrible shit happened, but he was already weird and morbid.
