To ensure consistent browning and cooking, continue roasting and stirring. Urad dal must be properly roasted. Urad dal that has been either partially or barely roasted may cause stomach pain. The dal must turn golden and develop a fragrant flavour. There will be a roasted urad dal aroma in your kitchen.
Keep on stirring without a break once the dal begins to get light golden. remove the dal in a plate and let it cool. Put the lentils in the grinder jar once they have cooled. Add three to four green cardamom pods.
Grind to fine flour. The texture should be fine and floury. Now, take the urad dal flour in a fine sieve. Begin to sift the flour on a plate, tray, large bowl, or pan. Grind 1/3rd cup of sugar to a fine powder and add the powdered sugar to the urad dal flour and mix it well.
Now, melt ⅓ cup of ghee in a pan. Add the melted ghee to the urad dal flour-sugar mixture. Mix well with a spatula. Now, let the ghee solidify and the mixture cool to room temperature so that you can easily shape the mixture into laddu.
You can store the remaining laddu in an air-tight box or jar and refrigerate.

Karupatti, is a popular sweetening agent in Tamil Nadu. An earthen pot is placed under a palm sapling that is skilfully sliced. In these pots, the sap that drips from the sapling is typically collected during the cooler seasons of the year. Slaked lime is applied to the pots to prevent the sap from fermenting. The unfermented juice is filtered before being heated in iron vats until it bubbles. Once it has cooled, it is put into moulds. Once it is 'set' in these moulds, the karupatti is ready for consumption. Karupatti has emerged as a popular sugar alternative among those who are health-conscious due to its high iron content. 
Karupatti Halwa is a melt-in-your-mouth dessert made with rice flour, modified palm sugar syrup, and ghee.
Ingredients you need for preparation:
Palm jaggery – 500g
Rice flour – 100g
Ghee – 300ml
Almond sliced – 50g
Procedure to follow:
Jaggery should be soaked in a litre of water before being boiled and strained to create the syrup.
Take rice flour in a bowl, add coconut milk and mix well. Take the melted jaggery syrup in a pan. Bring it to a boil. Mix thoroughly after adding the rice flour. Keep mixing until the mixture begins to thicken.
Start adding ghee little by little and keep mixing. At a point, the mix will get really thick and the coconut oil from the coconut milk will start to leave.
Heat little ghee in a pan, add cashews and kishmish, and fry till golden. Add this to the halwa and mix well. At one point the oil will come out completely.
Now pour this into a greased pan and let it set for 2 to 3 hours.

This classic North Indian-style dish, sometimes referred to as Chole Masala or Chana Masala in Punjab, is cooked with white chickpeas, freshly ground spices, onions, tomatoes, and herbs. Chickpeas is a legume that is relished all over India and are referred to as chole in Punjabi, chana in Hindi, and Konda kadalai in Tamil.
It is always preferable to soak the chickpeas overnight or for at least 8 hours before making any kind of chickpea curry, as doing so makes the legume simpler to prepare. Additionally, soaking chickpeas lowers the phytic acid content, which is what causes bloating and flatulence.

Rinse 1 cup of white chickpeas several times in clean water. Then soak them in 3 cups of water for 8 to 9 hours or overnight. After they've soaked, drain the water completely and give the chickpeas another thorough rinsing in fresh water a few times. 
Add the chickpeas to a 3-liter stovetop pressure cooker. Including 2.5 to 3 cups of water and Season with ½ teaspoon salt. Stir very well. Pressure cook the chickpeas for 12 to 15 whistles on medium heat. The chickpeas must be thoroughly cooked and made soft enough to mash with a spoon.
To make chole masala powder:
Add all the whole spices for the chole masala to a pan. Begin to roast them on low heat. The spices used for masala are the following:
2 cardamom
I inch cinnamon
3 to 4 pepper corns
1 medium sized Indian bay leaf
1 teaspoon cumin seeds
1 teaspoon coriander seeds
1 teaspoon fennel seeds
1 to 2 dry red chilli
The spices should be roasted until they are extra browned but not burned, keep stirring frequently. Even when they start to smell good, keep cooking them since they need to be brown more than usual. Let these roasted spices cool and then grind or powder them finely.
In a pan or kadai, heat 1.5 to 2 teaspoons of oil. Add 1/2 teaspoon of the ginger-garlic paste and cook for a few seconds to get rid of the raw aroma. Then add ⅓ cup finely chopped onions. Sauté stirring often till the onions soften and turn translucent or light brown. Add ½ cup finely chopped tomatoes. Sauté the tomatoes often until they soften and the oil starts to leave the sides of the onion-tomato mixture. Reduce the heat.
Then add all of the powdered spices together with ½ teaspoon red chili powder and Ÿ teaspoon turmeric powder.
Mix very well. Then add 2 to 3 slit green chilies to the onion-tomato masala mixture. Add the cooked and drained chickpeas. Stir and mix very well, season with salt as per requirement. Mix again.
Cover and simmer on low to medium heat for a thinner gravy. The gravy will thicken and diminish if you cook chickpeas without a lid.
Garnish with chopped onions and coriander leaves, Serve the Punjabi chole with fried Indian bread like bhatura or poori, together with a side of sliced onions.

Thooyamalli Manga Sadham
Ingredients
Rice-1 cup
Water-4 cups
Raw Mango-1 (Medium sized)
Onion-1 cup(chopped)
Groundnut-2 tbsp.
Oil-To cook
Salt-To taste
Green Chilly-2
Mustard seeds-1/4 tsps.
Split Urad Dal-1/4 tsps.
Gram Dal-1/2 tsps.
Curry leaves
Procedure
Wash and soak the rice for an hour. In an open pot add four cups of water and heat it. In the meantime, rinse the rice well and drain the water. When the water boils add the rice. Add a few drops of oil as we are making raw mango rice. Cook on low flame for 20 minutes. Use a holed plate and drain the excess water. The thooyamalli rice is cooked and ready. Wash and peel the raw mango. Grate it using a grater and set it aside. Dry roast groundnuts and peel the skin after cooling. Add oil to a pan and temper with mustard seeds, urad dhal, gram dhal, and curry leaves. When tempering is done add chopped green chilly and shallots and saute well. When shallots turn golden brown add the grated mango and saute till the raw smell vanishes (The mixture will turn non-sticky). Cool it and add the groundnuts, and salt and mix it with rice.
Thooyamalli Jeera rice
 Ingredients
1 bay leaf
2-inch cinnamon piece
4 cloves
4 green cardamoms
2 teaspoon jeera
Procedure
Heat 2 tablespoon ghee or oil in a pot or cooker, add 1 bay leaf, 2 inches of the cinnamon piece, 4 cloves, 4 green cardamoms, 2 teaspoons of jeera, thinly sliced onion, and one deseeded green chilli. Saute it on a medium to low flame until the jeera gets roasted well and begins to smell good. Add drained thooyamalli rice and fry it for 2 to 3 mins on high flame. Add water, if making in a pot pour 3 cups of water and if in a pressure cooker pour 2½ cups of water and add salt according to your taste. Cover it and pressure cook it on high flame for 1 whistle. If cooking in a pot, cover and cook it on low heat until the water gets absorbed and the jeera rice is fully cooked.
Serve it with your favorite curry or dal.
