Sweet potato with goma dare and crispy tofu - OTK Extra Good Things Another winner from the Ottoldnghi test kitchen, featured in their newest book, #ExtraGoodThings by @noorishbynoor and @ottolenghi . Thick sweet potato wedges are baked alongside grated tofu seasoned with soy sauce. The wedges are then doused in goma dare (sesame sauce) and chilli oil and topped with the crispy tofu. Stir fried kale with tahini, chilli and soy Today is Halloween and there is nothing scarier than not knowing what to make for dinner! … Ok, maybe there is, but if you’re stuck for what to make tonight and have some leafy greens lying about this @otttolenghi creation might be for you. You can find the recipe in the link in my bio. 👆 If you don’t have tahini any nut butter would work well, just adjust the seasoning to your liking. If you don’t want to make the aromatic oil fry up the garlic and chilli along with the greens. Pair with a fried egg or tofu or any protein of your choice for a more balanced meal. Rosemary and thyme farinata with jammy onions My contribution to the #greatmindscookottolenghi cook along which all about OTK’s latest offering, Extra Good Things. Farinata is a chickpea tart hailing from Genoa. Chickpea flour is mixed with water and left to ferment to create a soft yet crispy ‘pancake’ of sorts. Pan fried mushrooms with butter bean mash and kale Adapted from @ottolenghi’s recipe for portobello steaks and butter bean mash in Flavour. The oven is for special occasions only now, so I cooked these mushrooms on the stove with some adjika. To create a ‘meaty’ mushroom with a crispy edge weigh them with a heavy bottom pan as they cook. Butter bean mash is deceptively easy, simply add a tin of beans along with some seasoning and a little olive oil to a food processor and blitz until smooth before warming up on the hob. The kale was cooked alongside the mushrooms with some garlic. Beans with roasted onion aïoli We always have beans knocking about in our freezer. My partner will periodically make a large batch, dividing them in old margarine and Philadelphia tubs to be served at a later date, next to a steaming mound of rice, of course. This time it was lemony beans served upon a delectable roasted onion aïoli with soft boiled eggs and charred onion petals. Toasted bread slathered in wild garlic butter was just the thing to mop up any remaining aïoli. This is a really satisfying meal that’s quick and easy to put together (once the aïoli is already made). Giant cheese on toast with spring onion, honey an Urfa butter. I am back! Well, still somewhat broken but excited to take on some on the less labour intensive recipes from @ixta.belfrage ‘s Mezcla as part of the #GreatMindsCookOttolenghi cook along hosted by the lovely @oksanaritchie , @culyzaar , @tanya.mushanova and @teffe_kocht . Ixta describes this dish as ‘basically a giant, fancy cheese on toast’. ‘Giant’ is not an understatement, I cut the recipe by a third and between the two of us we could only finish half! Just as a good cheese on toast should be, it’s rich and filling, but in this take the honey and Urfa butter cuts through the creamy topping, bringing that perfect balance between sweet and savoury. Sweet and sour celery salad Firstly, I don’t really like celery and I don’t think I’m alone in this. It seems that Ixta is well aware of the public’s general disdain for this particular vegetable as the headnote reads ‘if you’re thinking of giving this salad a miss, think again’. A bold statement that I 100% stand behind! The only adjustment I made was to use chopped cashews instead of pine nuts, prices are going up and I can’t afford such luxuries anymore 😄💸 One last thing - I noticed all the recipes call for X twists of freshly ground pepper. I’m calling for an international ban on ‘1 tsp of freshly ground pepper’ in all cook books! Mackerel Udon I grew up eating tinned mackerel. When I was younger I would often indulge in my own concoction of mackerel fillets straight out of the can on hot buttered toast. (It’s very good - as far as I can remember). I haven’t had tinned mackerel in a long time so was happy to see @ixta.belfrage showcasing the humble shelf staple in this absolutely delectable udon dish.
