Hello everyone. I hope this week has been good to you so far! I've been working 10hr days, and it has left me with little daily time to bake. Seems as soon as I'm done cooking I have to get to bed to start all over again. Last night I made this rice skillet meal. It's more of a sidedish, but I ate it as a main dish along with saltine crackers. I love rice bowls and the leftovers go a long way. The rice is seasoned with beef broth, soysauce, salt and pepper. I mixed in Canelli beans, corn and Albacore Tuna and parsley. This is actually pretty healthy, and it is super fast and easy to make. Garnished with a lettuce chiffonade.

Sometimes I not in the mood to put much effort into lunch or dinner, there's nothing made ahead (surprise!) so what to do I ask myself. One of my fall backs is a layered salad. It's just romaine lettuce sliced thin, cottage cheese, fruit - pears, cantaloupe, berries, topped with sunflower seeds or what ever seed variety is to hand. Stack it up, grasp your fork and dig in. A healthy meal with little to no effort. Tip - the romaine and fruit can come already bagged/chopped so there is not even that chore for you - nice!
Romaine greens, sliced thin across the leaves
1 c.+ cottage cheese
1 - 2 pears, cored, sliced with skins
1/2 c.+ sunflower seeds
On a dinner plate, layer romaine, cottage cheese, pears, sunflower seeds to then grab up your fork and enjoy! Yes, it can be just that easy to make a healthy meal for yourself with little effort...sounds good to me and it is.

8 minute smoked haddock kedgeree 🐟💫 This is my cheats version of a traditional smoked haddock kedgeree 🙌🏻 Packed full of goodness and smoky curry flavour - who knew something so tasty could be cooked so quickly! Swipe for video 📹 Recipe below: ~ 2 eggs 2 smoked haddock fillets 1 onion, finely diced 1 tsp turmeric 1 tsp ground coriander 1 tbsp mild curry powder 200g baby spinach 1 pack microwave rice 2 heaped tbsp plain yogurt 1 lemon, juiced ~ 1. Using a two tiered steamer, boil the eggs for 8 mins with the fish in the steamer pan above it. 2. Fry the onion in a little oil in a large non stick pan, then add the spices and stir in - add a dash of water if it becomes a little dry. Add the spinach and rice to the pan, cover and cook until the eggs and fish are cooked. 3. Gently tip the cooked fish into the rice pan and stir to break apart into flakes. Stir in the yogurt and lemon juice. 4. Zaatar Egg Salad
Easy to make, ready to enjoy...the only hard part was finding a mayo with no added sugar and I have in Duke’s Mayonnaise.  It’s on the shelves of my local grocers (Winco/Fred Meyer/Kroger).  So here goes how to make this tasty twist on the tried and true egg salad...
5 eggs, boiled, peeled, diced in an egg slicer
1 t. zaatar seasoning mix - also at my local grocer
1/2 c. mayo - sugar free if you can get it
1/2 t. fresh grated lemon peel
In a medium size bowl, add all ingredients mixing thoroughly.  Serve this on a toast raft (piece of toast) or on a bed of greens with cucumber and tomato slices on the side.  That’s all there is to it.  It’s the only way I can cook - simply.
Egg boiling tip - buy them already cooked to save the trouble or put the eggs into boiling water, cover, cook for 6 min., take off the heat letting sit for 6 min., drain off the hot water, give the eggs an ice water bath until they are cool to the touch to peel comfortably.
