Zaatar Egg Salad
Easy to make, ready to enjoy...the only hard part was finding a mayo with no added sugar and I have in Duke’s Mayonnaise.  It’s on the shelves of my local grocers (Winco/Fred Meyer/Kroger).  So here goes how to make this tasty twist on the tried and true egg salad...
5 eggs, boiled, peeled, diced in an egg slicer
1 t. zaatar seasoning mix - also at my local grocer
1/2 c. mayo - sugar free if you can get it
1/2 t. fresh grated lemon peel
In a medium size bowl, add all ingredients mixing thoroughly.  Serve this on a toast raft (piece of toast) or on a bed of greens with cucumber and tomato slices on the side.  That’s all there is to it.  It’s the only way I can cook - simply.
Egg boiling tip - buy them already cooked to save the trouble or put the eggs into boiling water, cover, cook for 6 min., take off the heat letting sit for 6 min., drain off the hot water, give the eggs an ice water bath until they are cool to the touch to peel comfortably.
