Even at the end of winter Echinacea purpurea 'Rubinstern' (purple coneflower) can still be providing a display with the previous season’s flower heads. It will soon be time to cut these back as the new foliage begins to grow from the base.

Fernleaf yarrow (Achillea filipendulina) is a tall perennial that blooms early to late Summer. It's easily grown in zones 3-8. With it's spicy scent, it's popular amongst pollinators and is deer resistant. Its foliage adds an interesting texture to the landscape with pops of bright yellow flowers. Yarrow is also used amongst herbalists as an anti-inflammatory and antiseptic.

A Clockwork Orange is a blend of 10 local varieties by a winemaker who is passionate about using indigenous grapes.
A vibrant orange hue despite only spending a week on skins, it is quite textured and very clean. An autumn/winter orange - oily, waxy and herbaceous with a little oak.
Tasting notes: quince, satsuma, rosemary, orange peel
Pairing: charcuterie, mushrooms, roasted meats (pork/pheasant)

In early spring Adonis amurensis graces the cool glasshouse. This spring ephemeral is an herbaceous perennial from mountainous grassland meadows and forest edges in alpine and subalpine zones in China, Japan, Korea, and eastern Siberia. The plant requires moist, rich soils and a lightly shaded location.

Merlot
Pét-nats are sparkling wines made with minimal intervention from the winemaker during production. It is a technique that predates the so-called “traditional method” used in Champagne (and for most other sparkling wines). Rather than induce a second fermentation in the bottle to create the bubbles, makers of pét-nat simply bottle the wine before the initial fermentation has ended. The result is softly fizzy, sometimes lightly sweet from residual grape sugars, usually hazy with unfiltered yeast particles, and typically sealed with a crown cap instead of a cork.
There are no added sugars in pet nat making it a healthier alternative to Prosecco.
It’s not everyday you stumble across a natural sparkling Merlot. Ripe red-fruited, herbal and spicy pet nat with a long round, fresh finish. Surprisingly herbaceous and balanced. A great aperitif to get the tastebuds tingling.
Tasting notes: fresh herbs, red fruit, redcurrant
Pairing: aperitif, poultry, snacks, lean fish, shellfish
