So, one thing about my recovery is that for the first month of the treatment I had to exclude from my diet not only everything I'm allergic to (things containing lactose, gluten, and beef as well), but also all the common allergens, aaand everything that could trigger my reflux (fatty food, anything baked/fried, anything sour, coffee, chocolate, etc.), and the point of it was allowing my gut/stomach/esophagus heal first and then I could slowly reintroduce certain foods back: if I still have a reaction, I wait longer and then try again.
And that time has come! I CAN FINALLY DRINK COFFEE!!! It's been a minute!

I've also done some goofs with meds/supplements about a week ago. First, I took a loratadine pill that we had at home because my skin was itching very badly (dust maybe, idk), but I forgot to read the contents before taking it. And what do you know, it had lactose! Lemme tell you, the consequences were not fun 🤡
The second time was a couple days later. I was feeling great, and was like "fuck yeah, might as well try drinking coffee for the first time in god knows how long". So I did, and it was completely fine, I didn't feel anything unusual at all, so I was like "sick, awesome", but there's also one nuance that I learned the hard way last year: never mix coffee with gluten when you're allergic to the latter.
Fast forward to that same day, later in the evening. I decided to try lactase wafers, that we bought a couple days prior, with some butter and regular milk to see what happens. So I take the thing, I start eating, at the same time reading through the label on the bottle. My eyes suddenly widen in terror as I find a line that says "contains wheat".

But seriously, when I tell you for the next few days my whole digestive tract fucking hurt, it FUCKING HURT. And the most fucked up thing was that not a single mf, not a single pharmacy's website, not even the official distributor's website, or the translation sticker (that they covered the original label with) specified what exactly that supplement contained. I had to actually rip apart the protective film with the sticker first to then read the English label to find out that that expensive af thingy does tenfold more damage to me than it actually helps.
Oh but I didn't get bloated from the milk, how cool is that 🤡
Anyway... I do admit that I should've done more research though, but oh well, what's done is done
P.S. the award of "truly the most hyperfixation food of all time" goes to Swiss hard and Parmesan cheeses. It's been 2 weeks, I haven't been able to stop eating a whole pack a day since. Send help

Edit: oh, and remember I told you I was super sensitive to sugar and caffeine before? So apparently it was due to thyroid hormone imbalance that, in turn, was due to my (as the endocrinologist I went to suggested) covid-like sickness back in December, but as time goes by it should go back to normal, so that's cool 👍

things i wish someone told me about coeliac disease (UK edition)
apparently some doctors are still not telling coeliacs what they actually need to know so here’s some fun facts --
*coeliac disease is likely to go undiagnosed if you don’t have digestive symptoms. for a lot of folks, their first symptoms are odd things like weight loss, bloating, mouth ulcers etc that take ages for doctors to correctly diagnose as coeliac disease. I know someone whose only sign was tingling in her fingers (nerve problems are a Thing sometimes). I don’t wanna freak folks out but check this list of symptoms and if you’re worried, ask your doc for a blood test to check for coeliac disease. I went in and out of my docs for years with various symptoms (mostly from the anaemia) and no one caught it until I was finally having noticeable digestive trouble.
* coeliac disease an autoimmune disease. not an allergy. not an intolerance. when you eat gluten, your gut just screams NOPE and throws everything out of there.
* this means if you keep eating gluten you will have serious long-term health problems because your gut can't absorb shit 
* as I mentioned, anaemia is one of these associated health problems. a lot of people have this at diagnosis b/c your gut hasn’t been absorbing the nutrients it needs. it leaves you very weak and tired, and the longer it goes on, the worse it gets. 
* long-term anaemia / malnutrition causes so many fucking health problems I can't list them all. basically, if your body sucks, there's a good chance it's a side-effect of your coeliac disease going undiagnosed. I got shitty joints and a shitty heart and shitty bones and godknowswhatelse and every time my doc is like "hey, guess what? it’s coeliac disease!"
* you know what a common side effect is? LACTOSE INTOLERANCE. this is because, once again, your gut hates you from all that gluten you've been killing it with, so it starts to muck around and kick out other things too. but good news! most of the time this is reversible!!! lay off any lactose for a couple of months, reintroduce it to your diet slowly, and you -- like me -- might be a-ok 
*some folks with coeliac disease can’t digest oats either as they contain a similar protein. I found that I was kinda squiffy with them at first but as soon as my gut had calmed down I was a-ok with GF oats (this is good b/c 99% of good GF biscuits are made with oat flour, RIP to everyone that can’t eat them)
* so... your bones are probably fucked. if you were diagnosed early and your doctors are on it, you might be okay but for a lot of people it means osteopenia, and further down the line, osteoporosis (meaning it's v easy to break bones). you need to be eating, like, double the regular amount of calcium every day. most people are put on calcium tablets with combined vitamin D (to help absorb the calcium) but even on top of that, you need to be getting a lot in your diet. If you're still lactose intolerant then switch to lacto-free versions of dairy products or eat tofu like there's no tomorrow. It's super important that you get enough.
* relatedly, bone health!!! You should be doing MODERATE impact exercises like jogging to strengthen the bones but nothing high-impact like tennis. load-bearing exercises are good too. here’s some examples (in detail) given to me by the rheumatology dept
* people have different sensitivity levels. in the UK, certified gluten-free products have to be 20 parts per million or less, but in the US this is 100! marmite lives somewhere between these two and can cause some coeliacs to have a reaction. please be aware when you eat international gluten-free foods that they might have more parts per million than your body is used to
* because you're super sensitive to gluten, not only do you need to check the bold allergens on the ingredients, but the small print too. it might say "made in a factory that handles gluten" or "may contain traces of gluten" and that’s a no-go
* similarly, be careful in restaurants. Apparently it's still perfectly legal for restaurants to say a dish is "gluten free" and then put your nice GF bread in the same fucking toaster as regular bread and have you shitting your pants for days. Just because the ingredients are GF doesn't mean they're cooking it in an allergen-conscious manner. If its not a Coeliac UK certified restaurant, always ask about their methods. Is that milkshake made in a GF blender? Is your fry-up cooked in a separate pan? The first time I got glutened after my diagnosis it was because my GF naan bread shared a tray with a regular one. A lot of places won't even fucking think about this stuff.
* if you're in a gluten-eating household, you've got a big expense coming up. you need to buy a GF toaster at the very least and I would recommend also a separate baking tray (because pizzas, garlic breads etc stick to that shit like no tomorrow) and a saucepan (or anything else that regularly contains pasta/noodles/etc). You'll also need a separate bread knife and board. Separate butter. Separate strainer if you're the type to drain your pasta. Line anything suspicious (e.g.your sandwich toaster, a communal baking tray) with baking parchment. Don’t use bare rungs in your oven or hob. And buy separate spreads and condiments, unless your household is very well trained in not dipping their crumb-covered knives into those things. I've even got separate plates, kitchen utensils, and cutlery. It seems extreme but I haven't had a cross-contamination incident since. Just think: has gluten touched this? And if so, do your best to minimise the risk.
* living GF is expensive long-term too. GF bread costs twice as much as regular bread. Restaurants often charge extra for GF alternatives. I had to switch from having toast in the morning to cereal because it's much more reasonably priced. I eat more fruit than I ever have before just because GF snacks cost so much. I used to have breakfast bars lol say goodbye to that shit unless you wanna be broke
* things I didn't realise I couldn't eat: crisps (a lot of your standard crisps are made with ??? production methods), candied nuts (most of these are made in factories that handle gluten), soy sauce, strawberry laces and a whole bunch of fave sweets (contain wheat starch to bind them - check this list for safe sweets), marmite (you can buy a GF yeast extract that is only 50% worse than the original)
*good food you actually can eat: most cadburys but not most nestle, GF beer which tastes exactly the same, schar pretzels are actually the shit, so are their BBQ pringles and those little chocolate bars with hazelnuts, Morrisons free from frozen mini hash browns will cure your depression, M&S do these bacon tortilla rolls which... OH BOY. Quiche alternatives are pretty damn good but I've yet to find a pizza that doesn't make me want to cry.
*speaking of supermarkets... Morrisons stock a good range of stuff and tend to have everything in one aisle, M&S have many yummy (and expensive) treats, Sainsbury's has good own brand things including bread, Tesco's are fairly decent and stock a lot of baking things, ASDA are the king of GF cake, if you're still lacto-free then Waitrose sell LF cheese including halloumi, and check your your local hippy food store because I found the best goddamn bread in mine (Incredible Bakery Company - you are £4.50 a loaf but I have no regrets)
*party risks: if there's a BBQ, insist that your things go first or have a separate BBQ, or, if worse comes to worse, just eat cold snacks. (Beware of sausages! Many aren't GF!) If its a chip and dip situation, either everything has to be GF (easily done) or have your own dip. BUFFETS ARE LITERALLY OUR WORST NIGHTMARE. the amount of coeliacs I know that have been glutened at one are INSANE. even if those tasty treats are labelled 'gluten free' they've probably be contaminated. everything at a goddamn buffet is contaminated. Dinner party? Well meaning friends will want to cook for you but unless their kitchen is set up as above, it's safer to bring your own food -- if you're very lucky, you will have friends who take the time to learn about allergens and will clean every item in their kitchen before cooking and serving an entire GF meal. these friends are to be treasured -- nay, worshipped.
*fast food. there’s no good way to put this but you’re never having that guilty pleasure 2am burger again. mcdonalds fries are miraculously GF though. (a lot of takeaways recycle oil so even if the ingredients are GF it’s often not safe but mcdonalds always use a separate fryer for chips). indian takeaway is great as most dishes don’t contain gluten. on the flip side, you’ll only be able to have about 5 items on the chinese menu (soy sauce is in everything, yo) so be prepared to learn those 5 items by heart. dominoes do Coeliac UK certified GF pizza!!! (buuuuut not during covid). chains like pizza express have got our back and will even serve you GF doughballs
*coeliac UK are your best friend! most of the things I’ve mentioned are described in detail on their website. they also have a barcode scanner app that will tell you if foods are safe, and they have a restaurant guide, and useful things like translation guides for when you go abroad.

For many of us, our action-packed days are a series of decision-making sessions that leave us exhausted and deplete our willpower—leading to “decision fatigue.” Decision fatigue can make us more likely to lounge on the couch and order takeout after work than hit the gym and cook a wholesome meal. By deciding on all your meals in advance, meal prepping reduces decision fatigue and frees up some of your willpower, helping you stay on track with your diet and your other health-related goals.

Five Steps to Successful Meal Prepping
While meal prepping pays off, it does require some planning on your part. In this section, I've provided you with handy guides, tips, and tricks to make each of these steps as painless and straightforward as possible.
Step 1: Clean Out Your Kitchen
The first step towards successful meal prep is to get rid of foods in your fridge, freezer, and pantry that aren’t serving your health. Toss or give away items like processed foods, industrial seed oils, and refined sugar. Get rid of items that have already been opened and donate unopened items to a food pantry. And before you panic that your shelves will be bare, remember that you’ll be replacing these foods with healthy staples!
Prepping for the Thirty-Day Reset Diet
If you’re brand new to the Paleo lifestyle and are unsure about the types of foods you can tolerate, I recommend trying a Thirty-Day Reset, as outlined in my book The Paleo Cure.
To start, you eliminate unhealthy foods and potentially problematic foods for 30 days. Then you systematically reintroduce those possibly problematic foods to determine which ones you can tolerate. This diet is specifically designed to reduce inflammation, identify food sensitivities, and reduce allergic reactions—in addition to improving your overall health.
If you’re beginning a Thirty-Day Reset, eliminate these foods (at least temporarily):
Alcohol
Coffee
Dairy products like butter, cheese, yogurt, milk, and cream
Grains, including rice, wheat, oats, quinoa, barley, and couscous
Beans, legumes, and related products like peanut butter and soy sauce
Chocolate
Processed “health foods” like whey protein and energy bars
All sweeteners, whether they’re real or artificial
What to Do If You’re on a Paleo Template
Not everyone needs to follow a Thirty-Day Reset. If you already have a good idea of which foods you can and can’t handle, a Paleo template might be a better fit for you.
Under a Paleo template, your main focus should be on getting rid of packaged, processed food. Eliminate foods made with industrial seeds oils and goods that include hidden sweeteners or food additives. While there are some healthy packaged foods out there (and you should check the ingredient label if you’re unsure), a good general rule is if it comes in a bag or a box, throw it out.
Here are some common items to toss:
Sugary beverages like juice, soda, energy drinks, and sweet teas
Seed oils, like vegetable, peanut, or canola
Margarine and Crisco
Packaged meals like pizza, french fries, and frozen dinners
Imitation meat or seafood
Boxed pastries and other packaged baked goods
Canned soups, unless they’re free from preservatives, processed ingredients, and other additives
Breakfast cereals and snack bars
Dips, dressings, seasoning mixes, marinades, and gravies
Chips and crackers
Candy, cookies, cakes, pudding, and other desserts
Syrups, including processed pancake syrups, sorghum syrups, etc. (Note: real maple syrup is okay)
Processed honey (Note: raw, local, and organic honey is fine)
Step 2: Restock with Healthy Staples
Once you’ve eliminated those foods from your kitchen, it’s time to restock with healthy staples.
Non-Starchy Vegetables
Non-starchy vegetables are a nutritious and affordable staple in the Paleo lifestyle. Stock your fridge and freezer with fresh or frozen broccoli, cauliflower, brussels sprouts, green onions, bell peppers, and leafy greens.
Whole Fruits
Whole fruits such as berries, apples, pears, bananas, mango, pineapple, and citrus fruits are excellent sources of vitamin C and phytonutrients. They make a great snack on their own or can be added to smoothies. However, avoid fruit juice because its lack of fiber allows fruit sugars to be absorbed more rapidly, resulting in spikes in blood glucose levels. In fact, diets heavy in fruit juice are linked to an increased risk of insulin resistance and type 2 diabetes, whereas whole fruit consumption does the very opposite, reducing the risk of type 2 diabetes. (1)
Starches
Starchy plants such as sweet potatoes, white potatoes, plantains, winter squash, taro, cassava, beets, turnips, and rutabaga are affordable, nutrient-dense, satiating foods to include in your diet. Stock up on these vegetables when they’re available seasonally; many of the tubers and root veggies will keep for quite a while when properly stored in the refrigerator. If you have trouble finding some of the more exotic tubers at your grocery store, consider checking out Asian markets, which frequently stock taro and cassava.
Protein
High-quality protein is a staple of the Paleo diet and can be prepped ahead of time. Purchase grass-fed and organic beef, bison, chicken, turkey, and eggs from your grocery store or farmers market or directly from local farms. Check out EatWild to find farms near you offering grass-fed and organic meats. I also recommend eating wild seafood several times a week as a source of omega-3 fatty acids, vitamin D, selenium, and many other micronutrients. Thrive Market and Vital Choice both offer excellent selections of wild, sustainable seafood.
Healthy Fats
As you may know by now, Paleo encourages the consumption of plenty of healthy fats such as olive oil, coconut oil, red palm oil, avocado oil, pastured tallow and lard, and duck fat. Select a few of these fats and keep them on hand for sautéing, roasting, baking, and dressing salads.
Nuts
Nuts and nut butter make for a great Paleo snack. If possible, buy soaked and sprouted nuts because these processes remove much of the anti-nutrients from nuts, making their nutrients more bioavailable. You can also soak and sprout raw nuts yourself at home. Avoid buying roasted nuts covered in vegetable oils, as the roasting process causes the fats to go rancid.
Spices
Spices can quickly add interest to any Paleo dish. Invest in a spice rack and stock it with staples such as oregano, thyme, rosemary, cinnamon, and turmeric.
Baking Ingredients
If you’re planning to do any Paleo baking, then you’ll want to stock your pantry with a few Paleo flours and sweeteners. Try cassava, almond, coconut, and tigernut flours for baking Paleo cookies, brownies, or cake. Coconut flakes are a nice addition to homemade Paleo granola. Keep cans of full-fat coconut milk (preferably a BPA-free version such as Native Forest Simple Organic Unsweetened Coconut Milk) on hand along with Paleo-friendly sweeteners such as raw honey, maple syrup, stevia, coconut sugar, molasses, and monk fruit sweetener.
Other Paleo Template-Friendly Foods
Depending on your personal Paleo Template, you can also stock up on things like white rice, buckwheat, full-fat dairy products, legumes, and chocolate. Just look for organic products that aren’t processed or refined.
Step 3: Plan Your Meals
Now that you’ve eliminated unhealthy foods and restocked your kitchen with healthy staples, it’s time to start planning your meals! This part of the meal-prepping process is fun, will save you time in the kitchen, and will even tempt you to try new tastes and flavors.
Start by planning your meals on a weekly schedule. You can do this in one of two ways.
Old-School Style
Take a pen and paper and figure out how many breakfasts, lunches, and dinners you will need for the upcoming week. Factor in things like date nights, meals with clients, and travel. Once you know how many meals you’ll need for the week, decide what to eat for those meals. See the sections “What makes a good meal?” and “Which foods work best for meal prepping?” below for ideas. Make a grocery list based on your notes.
Use a Meal-Prepping App
There are many useful apps that will help you with meal prep—and some are even tailored specifically for Paleo. These apps provide you with recipes, chart out your meal schedule for the coming week, and automatically generate a grocery shopping list based on your meal plan. (Check out Step 4 below for an overview of my favorites.)
Once you’ve laid out your meal plan for the week, display it in a place where everyone in your household can see it. This way, you can get input from them and ultimately create weekly meal plans that will make everyone well fed and happy.
After the first few weeks of planning meals regularly, I realize it can be easy to fall into a rut, using the same few recipes repeatedly. But dietary diversity is crucial for meeting our nutrient needs and for feeding our gut microbes, so I recommend introducing new foods and recipes regularly. Start by adding one new vegetable per week and work your way up from there.
What Makes a Good Meal?
What exactly should the meals on your meal plan look like? First and foremost, choose nutrient-dense, whole foods. To learn more about how to select nutrient-dense foods, read my article “What Is Nutrient Density and Why Is It Important?”
Secondly, try to create meals that contain a balance of carbohydrates, fat, and protein. Eating well-balanced meals promotes satiety, modulates your body’s blood sugar response, and even enhances nutrient uptake from food. For example, eating protein with carbohydrates moderates the spike in insulin caused by dietary glucose, and consuming fat with vegetables enhances the absorption of fat-soluble nutrients such as carotenoids. (2, 3)
While I typically don’t advise people to count calories or obsess over macronutrient ratios, some people need to do so for health reasons. If you are one of those people, I highly recommend using a meal planning app to make the process easier.
Step 4. Use an App
The amount of planning involved with meal planning is significant, but fortunately, there is a way to make it infinitely easier—meal planning software and apps. I’ve taken the guesswork out of selecting the best ones for Paleo meal planning by creating this list.
AnyList App
AnyList collects and organizes recipes and adds them to a meal plan calendar. It then generates a grocery shopping list that you can easily edit and share with friends and family.
Cook Smarts
In addition to creating weekly meal plans, Cook Smarts also offers helpful cooking guides, infographics, and online cooking sessions.
eMeals
eMeals lets you choose from a variety of different meal plans (including a Paleo plan, of course). Each meal plan includes recipes with main and side dishes, a shopping list, and step-by-step instructions.
Mealime
Mealime produces weekly meal plans with over 200 personalization options.
Keto Diet Tracker
The Keto Diet Tracker app is helpful for tracking net carbs and storing recipes for those following a keto diet.
Nom Nom Paleo App
The Nom Nom Paleo app has nearly 150 recipes, 2,000 step-by-step photos, and a Whole30-friendly monthlong meal plan and generates customizable shopping lists, all for a low cost.
Paleo Leap Meal Planner
This app includes only Paleo-friendly recipes—every single one is free of gluten, grains, legumes, sugar, soy, and corn. The app offers over 1,500 recipes, generates grocery lists, and lets you set your own food preferences and restrictions; for example, you can indicate if you’d like low-FODMAP, egg-free, or autoimmune protocol-friendly recipes.
Paleo.io
The Paleo.io app answers a simple question: Is it Paleo? It helps users determine whether a given food is Paleo or not using a database of over 3,000 foods. It also includes hundreds of Paleo-approved recipes. This app is particularly helpful for those who are new to Paleo.
Paprika
The Paprika app helps you organize recipes, make meal plans, and create grocery lists. Paprika’s built-in browser allows you to save recipes from anywhere on the internet so you can create your ideal meal plan.
Plan to Eat
Plan to Eat allows you to add your own recipes from anywhere on the internet into a recipe book. You can then drag and drop recipes into a calendar to plan out your meals for the week. The app also generates a grocery list for you based on your planned recipes.
RealPlans
RealPlans creates and organizes recipes, develops a weekly menu, and generates grocery lists so that you can get healthy, delicious food on the table. If you need to track your macros, Real Plans has you covered. A subscription will give you access to all the app’s meal plans (Classic, Dairy-Free, Gluten-Free, Paleo, Keto, autoimmune protocol, and more) and over 1,500 recipes. You can add on recipes from well-known food bloggers for an additional fee.
Yummly Recipes and Recipe Box
Yummly takes a cue from Instagram, allowing you to browse through a photo gallery of recipes and save them to your own digital cookbook. Yummly also uses a proprietary program called Food Genome and a patent-pending technology called Food Intelligence to recommend recipes to users based on their allergies, tastes, and more.
Step 5: Cook Your Meals
You’ve cleaned out your kitchen, restocked it with healthy foods, and created a meal plan—now it’s time to start cooking! Here are a few simple strategies that will make it easier for you to follow through on your commitment to stick with Paleo.
Set Aside Time for Grocery Shopping and Meal Prepping
For many people, Sundays work best. You may also want to consider doing your shopping and main meal prep session on a Sunday and a second, smaller meal prep session mid-week to keep your fridge stocked with fresh options. Use a list when grocery shopping and check off items as you add them to your cart.
Organize Your Recipes
Organizing the recipes you intend to use in meal prepping will save you time in the kitchen. The meal prep apps I mentioned above make organizing your recipes easy, but you may also want to keep a few cookbooks in your house and print out recipes from blogs and websites and collect them in a binder. Find 15 to 20 recipes that you really enjoy and rotate them throughout the weeks (and check out some of my favorite Paleo-friendly recipes).
Keep Things Simple
You don’t need to cook an elaborate meal to satisfy your nutritional needs and appetite! Uncomplicated meals should be a staple in your weekly meal plans. For example, a high-quality protein source; steamed or roasted veggies with salt, pepper, and some healthy fat; and a sweet potato can make for a wholly satisfying and effortless meal.
Incorporate Leftovers into Your Weekly Meal Plan
Don’t be afraid of leftovers! Eating leftovers is an easy way to cut down on meal prep and prevents food waste. Label and date leftovers so you keep track of what’s in your fridge and freezer. And speaking of the freezer, use it! When you batch cook (see next item), you’ll have extras that you can stash away for later.
Batch Cook
Batch cooking, including doubling and tripling your favorite recipes, is a critical component of food prepping and can be applied toward many types of foods. For instance, bake several batches of egg muffins at a time to have around for breakfasts or roast a bunch of sweet potatoes to use as sides throughout the week.

Which Foods Work Best for Meal Prepping?
Some foods are more suitable for meal prepping than others; for example, roasted sweet potatoes hold up well to reheating, whereas pre-dressed salads quickly wilt in the refrigerator. In this section, I’ve outlined some of the best foods to include in your meal prepping process.
Meat
Cook chicken, turkey, beef, bison, or game meat in a slow-cooker. Shred the meat and set aside to use in stir-fries, in Paleo tacos, on top of salads, or in soup.
Sauté ground turkey, chicken, or beef in a pan with garlic, onion, and sea salt. Use the ground meat in Paleo “taco” salads, on top of spiralized vegetables, or in hearty stews.
Bake chicken breasts, wild salmon fillets, burgers, or meatballs in batches. Use them throughout the week with roasted or sautéed veggies, salad, and starchy vegetables as sides.
Eggs
Hard-boil a dozen eggs. Hard-boiled eggs are ideal for a quick and easy breakfast and are also an excellent portable snack.
Vegetables
Roast sweet potatoes, white potatoes, winter squash, and root vegetables in batches. These vegetables hold up well to reheating and are nutrient-dense sources of carbohydrates.
If you tolerate white rice, make large quantities in a rice cooker or Instant Pot.
Cruciferous vegetables, such as broccoli, cauliflower, and brussels sprouts, also hold up well to reheating throughout the week.
Sauces
Make several sauces to use throughout the week. Salsa, guacamole, gremolata, and chimichurri are just a few examples of Paleo-friendly sauces that can be made ahead of time and quickly spice up any meal.

Four Meal Prepping Tips and Tricks
Now that you know the basics of meal prepping, you’re well on your way towards saving time in the kitchen and eating well.
To build on your new skills and help you stay on track with Paleo eating, here are more ideas you can use, including strategies for how to shop Paleo on a budget, where to buy healthy staples and fresh ingredients, how to shop seasonally, and—when home-cooking isn’t on the menu—recommendations for Paleo meal delivery services.
1. Stick to a Budget
Shopping Paleo can be expensive if you don’t know how to grocery shop to your advantage. With the tips I’ve outlined here, you can successfully shop Paleo on a budget while still filling your cart with high-quality, nutrient-dense foods.
Buy conventional instead of organic (for some produce). Organic produce is ideal because it reduces our exposure to harmful pesticides and herbicides. However, costs can really add up when buying nothing but organic foods. If this is a problem for you, check out the Environmental Working Group’s Clean 15 and Dirty Dozen lists to determine which conventionally grown fruits and vegetables are lowest in pesticides and thus safe to buy conventional rather than organic.
Whether you buy organic or conventional produce, thoroughly wash your produce before eating. Almost no food is completely free of pesticides. The most effective way to remove pesticides from produce is by washing produce in a baking soda bath. (4) To wash vegetables, fill a large bowl with water and add a teaspoon of baking soda. Add the veggies and soak for 10 to 15 minutes. Scrub with a scrub brush and then rinse under clean water. For leafy greens, soak in a baking soda bath for a minute, thoroughly rinse, and then spin dry in a salad spinner. Wash smooth-skinned fruits (like apples and nectarines) in a baking soda bath like you would for veggies.
Here are some more money-saving tips:
Buy frozen produce. Buying frozen produce saves money while still providing you with nutrient-dense food; most fruits and vegetables are flash-frozen immediately after picking, thus preserving the nutrients they contain.
Buy in-season produce. Out-of-season produce is typically shipped from distant locations, including other continents, increasing costs. It’s also generally picked before it’s allowed to ripen (so that it can be transported without bruising or other damage), and that can impact its nutrient content if it’s improperly stored or subjected to temperature extremes.
Start a garden. Growing your own produce takes some work, but it ultimately is a really low-cost way to obtain organic fruits and vegetables.
Buy lower-quality cuts of meat. You don’t need to buy expensive cuts of meat to eat Paleo. For example, ground beef and brisket are cheaper than filet mignon but have the same nutritional value. In fact, some of the so-called “less desirable” cuts of meat may actually have higher nutritional value than pure muscle meat; for instance, nutritious gelatin-rich cuts of meat such as chuck roast and beef shank are often cheaper than cuts such as sirloin.
Choose more affordable species of wild fish, such as wild sardines instead of wild salmon.
Make eggs a staple in your diet. Eggs are a very economical protein source, including high-quality, farm-fresh eggs from a local source.
Buy in bulk. Many bulk grocery stores now offer many healthy options, including organic produce, wild seafood, and pastured meats, at lower prices than regular grocery stores. Consider buying a quarter, half, or or whole animal for meat directly from a rancher or farmer instead of single cuts from the grocery store; while you’ll need to invest in a chest freezer, this strategy can significantly reduce the cost of meat.
2. Shop Around for Healthy Food
Contrary to popular belief, Whole Foods is not the only place you can buy healthy food! All the stores listed here have excellent selections of healthy, Paleo-friendly foods. Even your local grocery store is likely to have some options.

Water Filter
For drinking and cooking water, I recommend investing in a high-quality water filter. Berkey water filtration systems sit conveniently on your countertop and remove viruses, pathogenic bacteria, cysts, and parasites to undetectable levels. They also reduce heavy metals without eliminating beneficial minerals. Additional white filters can be added to remove fluoride. If you want to filter your home’s entire water supply, you may want to consider a reverse osmosis filter instead.
Food Storage
Once you’ve prepped your meals, you’ll need containers for storing everything. Since plastic containers contain chemicals that are known endocrine disruptors, I prefer people use glass storage dishes with BPA-free lids.
For wrapping up foods, use unbleached parchment paper or beeswax-coated reusable food wrap (such as Bee’s Wrap) instead of conventional plastic wrap, which may leach endocrine disrupting chemicals into your food. (5) Finally, try reusable silicone storage bags (such as Stasher bags) instead of plastic freezer/storage bags, which may also contain endocrine-disrupting plasticizers.

I’ve been living on a boring Low FODMAP diet for months now, purging myself of anything that might cause me grief. Reintroducing foods one at a time, starting with dairy (because a life without cheese is a life not worth living!). Tried gluten-free pasta with alfredo sauce, and this is all I have to say about it:

Daily Check In #2- Eat food when you are hungry
Physical- I am feeling collected and satiated I started the day in a very scattered place and found unity from connection time and cooking! 
Mental- In the transition from narrow to broad prospective. I have come into a knowing that I wasn’t seeing a big trigger in myself about my health and wellness. I wasn’t aware of my overall state of being focused very too close to the present
Emotional- The storms feel calm. The waves in my pool are tiny ripple of the once tsunami of feeling. I feel content and clear. This state create optimal learning a growth atmosphere for Me!
Spiritual- New plan following the flow of my purpose, creating Visionary and Intentful Orientation inside of myself. This looks like responding more to the energy in the morning to find the flow for the day. Tapping in to my genius right out of the gate instead of forcing a routine or letting my mind seek out external pleasure sources. 
In this go around with my big f*cking sads and mads I really struggled with cooking myself food.  I can’t do takeout or other simple common fixes because of my lifestyle and diet. So I get creative, surviving on mainly chocolate, oatmilk chai, bananas, ice cream and cheese puffs. That isn’t sustainable long term for many reasons- nutrition and cost mainly. There is a process to starting to eat again after you go grave dancing and shadow walking.  
How to reintroduce yourself to cooking and eating-
 Step 1: Eat foods you can make with your electric kettle. This includes many delicious options like instant mashed potatoes, oatmeal, those amazing curry cup noodles or any cup noodles. Plus whatever fruit is on sale. Maybe grab some peas or spinach, you can put them in your cup noodles/mashed potatoes for extra nourishing yum. This step expands on the foods you have been consuming adding variety in texture, temperature and of course nutrition. While expanding your pallet you are only using 1 dish, a serving bowl! So easy no though clean up usually a rinse with hot water is all you need. I love using disposable chopsticks so I don’t have to wash utensils. 
Step 2: We graduated to pasta! We can boil pasta and have many meal options. To create your perfect easy pasta you pick options from 3 categories sauce, pasta, add ins!  Sauce’s: marinara, alfredo, pesto, broth! Pasta shapes: stars, angel hair, penne, honestly any pasta that you love the texture of will work Add Ins: greens of any kind, broccoli, peas, cheese- parm or whatever you like, proteins- meatless beef crumble or crumbled tofu, seitan, or white beans, cream/nondairy cream, basically anything that you like that can cook quickly in boiling water/ simmering sauce. Then you just go along a pick 1 sauce, 1 pasta shape, and as many add ins as you want. Examples of this might look like; marinara, kale, meatless beef crumble/ tofu crumble and spaghetti OR pesto, peas, and angel hair OR broth, stars, parm, spinach, cream and white beans Or alfredo, broccoli, seitan, and penne. You have so many options and can make this very affordable just by buying the same type of pasta, greens, and a few different sauces. You cook all in 1 pot + a strainer by boiling the pasta and adding any add ins that need serious cook time like kale, frozen veggies, broccoli. Straining all of that and setting it aside, try reserving a little pasta water by not rinsing or shaking your stariner.  Add your sauce to your hot pot plus any other add ins like beans, spinach, crumbles, seitan this will simmer very quickly. Add your ingredients from the strainer stir and simmer (avoid this simmer if using pesto) for a few moments then eat! You can eat this right out of the bowl you made it in because you made it for you! 
Step 3: Stir fry noodles. Simple ingredients so many options very fun! I use a ramen noodle packs and a combination of these things coleslaw mix, peppers, peas, frozen broccoli, kale, tofu, eggs. And a simple sauce you make by adding 3 pt soy sauce, 1/2 pt vinegar, and 1 pt sugar together mixing and adding more of whatever you like. You boil water in your kettle and make your noodles. Then you do your chops tofu, peppers, whatever you want like onions, garlic, ginger. Heat up a skillet or a griddle add your chopped stuff and other stuff like coleslaw mix or peas. You can add oil or water depends on how you are feeling oil makes the dish richer and more filling and water makes it like and easy to digest. Drain your noodles. Then you can take a break and sit down on your phone till you smell your pain cooking. By not stirring you allow the veg to develop color from long contact with the pan. Then put your noodles on dump on half of your sauce, wait for it to sizzle then incorporate it into your noodles and other stuff by stirring! add more sauce until your noodles are the darkness that you desire. turn off your heat dump the noodles and company in a bowl grab those disposable chop sticks (which are great for cooking with too) and go to town on your delish dinner! 
Step 3 is the finally step after you have accomplished this meal you are ready to move on to your regularly scheduled diet of whatever vegetarian food you prefer to cook. For me that includes, stews, soups, curries/Indian food, quiche, stir fry, breads, desserts, etc. 3/9/2022

Covid has hit our household. Though, I'm a little late in typing this here, because I don't like typing blog posts on my phone very much, and I've been in bed trying to take it easy. I've been (until recently) the sickest. Thankfully, nobody in this household had to go to the hospital despite my parents refusing to vaxx themselves.
My husband is double-vaxxed and boosted, and as a result he's had the least severe, short-lived symptoms. But when he had the symptoms, he went and got a PCR test. The other day, he received a notification that said test came back negative.
I'm double-vaxxed, but won't be able to get boosted until the end of February at the earliest (had to wait for the 6 months since my second jab, plus I don't wanna deal with the side-effects while on my period). The second day of symptoms, when they were probably at their worst, my husband had brought home 2 packs of take-home rapid tests. I took mine and it came back negative.
The next day, my mom had symptoms, and she took the second test from the first kit and it came back positive, then went to a rapid testing station the next day for kind of a second opinion through a second test so we're not blasting through these expensive things at home, and that, too, came back positive. The fact that she tested positive but my husband and I have not might be due to our vaccinations causing a much lower viral load that couldn't be detected.
Currently, my dad is weak, having trouble catching his breath, is cold, just all around miserable. He refuses the test and gets very uppity about it very quickly, and when my husband went for the PCR test, he threatened my husband that he'd break his arm if he came anywhere near him with a test swab. (My husband didn't even mention to my dad about getting tested, my dad just outright said that unprovoked.)
I'm currently fine with a little cough and a runny-ish nose lingering, but this could also be due to the weather and how dry the air is, since I'm usually like this every winter. But I suffered the worst of the symptoms for some reason (up until dad got sick), having nothing higher than a 101.4 F fever (axillary/armpit thermometer measurement) at one point, a bad headache, some high blood pressure, fatigue, a cough, sore throat, and a fucked up appetite.
Currently, I pray and hope that the vaccine and my vitamin D supplements have kept me from getting any sort of long-term health damage from this. At one point, my left eye was hurting while my left ear felt muffled with roaring tinnitus. I was prepared to accept my fate of losing hearing in that ear, sight in that eye, or both, if that were to be the worst long-term health damage. Such a result does not warrant regular medication I'm not guaranteed constant access to, which was why I would be fine with it. But so far, it seems like ocular roseacea and an inner/middle ear + sinnus issue and that pretty much all went away.
Since I plan to see more doctors after I get my booster shot anyways, I intend to requests tests for any micro-clots, damage, etc. from covid to catch it early and be on the safe side.
I'm still confident I'll be able to garden this year, but I've had to come to a compromise and make the decision to prepare to raise chickens (I'll elaborate in a separate post). By that point, I should have seen a doctor already about my diet, about what all I can and cannot eat, and then adjust our grocery list accordingly. My lack of strength largely stems from my lack of eating a lot, since we are poor, and I'm sticking with what I know is safe for my body. I would love to get soy into my diet since soy milk and tofu would help a lot, but after having endometriosis diagnosed (and not sure if I have any left), I'm not sure how my body would handle it. I also would like to reintroduce some cheese back into my diet, since I need the fat from dairy cheese to help put some weight on me, but I need to find out if that will be safe, and what amounts I should start with. (I'm fine with having nothing but swiss cheese, just as long as it's something to help my body.)
My lack of eating decently might have contributed to the severity of my symptoms when I actively had covid. Unfortunately, a KN95 mask is a luxury my husband and I cannot afford. We'll have to stick with the cloth masks we still have because we literally have no other option. I'll finish hemming my first neck gaiter soon to wear over my cloth mask for an added layer to prevent me spreading anything.
Covid sucks, but capitalism sucks more because the ruling class cares more about the stupid fucking piece of shit economy than they do human lives.

I ate like normal people today? That’s new...
So, as most of you that are reading this know, I had a gastric bypass back in June. A number of factors have made me stray from the path that I’ve been intended to take.
Before I came to Spain, I was keeping relatively small. My days consisted mainly of string cheese, peanut butter, deli meats, sugar free popsicles, sugar free pudding, and water mixed with Mio Water Enhancer. Sounds captivating doesn’t it?
Well... coming to Spain introduced a number of different factors that made my overall new diet a tad trickier. If you aren’t aware, and I think I explained this in my first post, but a gastric bypass changes the size of a person’s stomach by like 85-90%. The stomach is normally about the size of a football. Now, my stomach is roughly the size of an egg. That being said, I clearly can’t eat very much. Today I was given maybe an egg’s worth of a Spanish omelette, and I was out for the count.
I’m getting slightly ahead of myself here. Anyway, as this blog has shown, I’ve developed a baking hobby. For someone in my current condition, this is a dangerous hobby to develop. For someone who is not supposed to have things with a lot of sugar or fat, I make an awful lot of things with a lot of sugar and fat.
The other tricky factor is the overall difference in available food products. I’ll start with peanut butter. It’s not impossible to get. Mind you, the available options are much more limited than in the U.S. I purchased a jar when I first arrived in Spain to indulge in at my AirBNB. As I took the first spoonful, I looked at the nutrition facts and proceeded to put it right back in the cupboard. The fat content was through the roof. Not to mention, the PB itself was super oily as well. Not a fan...
I have not seen sugar free popsicles since I’ve been here. Those were basically my life this past summer. I felt withdrawals at first, but I’m getting used to it. But I sure miss them though. The Popsicle brand ones though. Generic brands taste like cough syrup. You can’t change my mind.
String cheese and deli meats are probably the closest thing to normal that I can find. I can’t necessarily find “string cheese” but I’ve gotten mozzarella cheese, and honestly, that’s basically all string cheese is, right? Spain is famous for its “jamon” or ham. Being the timid tourist that I am, I often opt for “jamon cocida” or cooked ham. The kind most similar to the ham that I’m used to.
I have a predisposition to throwing food away prematurely. If I feel in my mind that I’ve had it for too long, even if it’s not the case, I throw it away. I know the main reason this is, but I’m not discussing that here.
Europe, in addition to introducing a baking hobby, also reintroduced me to my Kryptonite. Croissants and European Nutella. 
So, two things to note about this. First of all, it isn’t my EXACT Kryptonite. My exact Kryptonite is Italian cornetti and European Nutella. “What’s the difference?” you may ask. When one thinks of a croissant, you think of the buttery, flaky French pastry that you see everywhere. Italy went above and beyond this, and developed a croissant of their own. It’s a sweet bread that is flavored with lemon and/or orange zest, and it’s incredible. If you ever have the chance to try a panetteria cornetto (one made and sold from a bakery), I’d highly recommend it. I’m not a fan of mass produced ones. It doesn’t have the right kick to it. We’re supposed to be getting a bigger refrigerator pretty soon. Once that happens, I might try to make them. So potentially stay tuned for that.
The second thing to note about this is that European Nutella and American Nutella are most assuredly not the same thing. Before I had ever stepped foot on European soil, I loved Nutella. Correction: American Nutella. But then I tried European Nutella. Now American Nutella tastes horrible to me. It’s genuinely a difficult difference to explain. I had European Nutella imported to the US and had people try it, and they had the same phenomenon. “It’s hard to explain, but I see what you mean.” So yeah, if you’ve only ever had American Nutella, you’re missing out.
After my little hospital excursion a while ago, along with the deficiency of Vitamin K, I’ve realized that I need to have more of a normal people diet. Because of the aforementioned small refrigerator, this proves to be a difficult thing to shop for. I’ve strayed towards baking over cooking because the results can be stored at room temperature. A normal person diet also needs to consist of a lot of refrigerator and freezer foods, which are currently difficult to accommodate for. So in my last shopping adventure, I got ground beef to attempt taco meat, and small filets called “Solomillo”, as well as a bunch of things that I COULD actually store at room temperature.
Well, the ultimate reason I wanted to write this blog post stems from those Solomillo things. I cooked one tonight, and it was fantastic. Before you translate, I already did. They’re filet mignons. But anyway, I need to eat more protein and add things of that nature into my diet, so I cooked one. I only added salt, pepper, and garlic powder, and I can honestly say that it was probably the best beef product I’ve ever cooked in my life. It was juicy and flavorful. Aside from being basic as all hell, I don’t think Gordon Ramsay would have much bad to say about it. It was a beautiful medium rare and it was a 10/10, would most definitely recommend.
Side note: I ordered Vitamin K supplements, and I’m already starting to feel semi-normal and not like I’m falling apart at the seams, so that’s nice. I’m still sore because I’m still bruised, but yeah...
