On one of my visits to Thamee’s (@thamee_dc ) BIPOC pantry I picked up some Za’atar by @zandzdc While I think I’ve tried Za’atar before, I’ve never cooked with it. I was told Za’atar crackers were delicious, but for my first try I went with Za’atar Roasted Chicken. ⠀ ⠀ I found my spatchcock chicken at Whole Foods, along with some colorful carrots and potatoes. I rubbed my chicken with Za’atar, and a couple of my favorite seasonings. I roasted my chicken for about and hour. ⠀ ⠀ Everything in one pan worked out great. I love anytime I can put out my cast iron. My first Za’atar chicken was a hit! The Za’atar flavor was nice and bright while the the chicken was nice and juicy.
