From the first couple’a runs this week. (I actually did FIVE! Yay me!) Bernal is nice and green. My fave. The Wharf was cloudy with a little rain but nothing substantial. Definitely lucked out! Took a short NYE hike and long NYD one along the Quail Trail last week. Man, it gets dark real quick out in the country! Still, we saw two teenaged young bucks (twice!), a beautiful, but sadly deceased little snake, the foothills dotted with black cows, loads of twisty oak trees and a couple stunning sunsets. Also managed to capture Dylan actually looking at me for a change while keeping warm by the fire and grandma and grandpa’s house! Some of last week’s dinners included my recreation of NYT’s Baked Romanesco Broccoli with Mozzarella and Olives, where I turned it into a vegan pasta dish by adding extra wide yolk-free ribbon pasta, all vegan cheeses (Violife Mozzarella, Feta and Parm) and a little cashew cream before baking it. It was phenomenal! I still want to try a couple more tweaks, but once I get it just right, I’ll type up the recipe and share it. Because, honestly, who doesn’t love romanesco?! LOOK AT IT!! 😍I also made “traditional” vegan maztzo ball soup which is a household fave, a Buddha Bowl featuring baked tofu and broccoli over rice then slathered with the delicious cheese sauce from Veggie on a Penny (thanks, Jenn!) which is incredible! I also made Olive Pasta Even a Toddler Will Love from The Plantiful Table cookbook – another fave around here, followed by another Buddha Bowl, this one with roasted tofu, broccoli and delicata squash over wild rice and slathered in a lemony-spicy tahini sauce with roasted pepitas on top, YUM! And last but not least, I made the Black Eyed Pea Pot Pie from the Sweet Potato Soul cookbook that I gave myself for Christmas. So good and a new way to enjoy black eyed peas in the new year! It’s not super pretty, in fact, it reminds me of many meals I ate growing up in the ‘70s, but trust me, it was great! I added No Evil Foods Comrade Cluck No Chicken in it too for a little more meatiness. It held up perfectly! Ahh, all good stuff. Now I’m hungry. Lovely Aquatic Park, Russian Hill, Marina, Fort Mason loop yesterday that took us up Hyde (there Cage’s house for sale) and back down Chestnut to Palace of Fine Arts where the swans were extra extra and back to Aquatic Park witch remains closed because of the government shutdown so there’s trash everywhere, including the rubber ducky tied to another rubber sunbather in an inter tube next to the beach. Cute but sad. People are gross. Some noteworthy dinners from the last week or so were this Dill Pickle and Potato Chowder from @connoisseurusveg that was so freaking delicious that I’m making it again next week! Pictured next are the delicious Thai-Spiced Rice Bowls from @cookieandkate. So easy and super flavorful! Next I made a Buffalo Jalapeño Popper Pan Pizza using the cast iron skillet pan pizza method from @nytcooking, using @violife_foods cheeses, @franksredhot buffalo sauce and @followyourheart ranch dressing. SO good and the crust was RIDIC. Next, I made a BBQ Bowl using @noevilfoods Pulled ‘Pork’ BBQ that was awesome! Can’t wait to try their other stuff! And last, but certainly not least was a nice bowl of spaghet featuring homemade sauce @jennypalare made! She sent us back to SF with a giant jar of it and we’re loving it! I’ll be so sad when it’s gone and I’ll have to make my own sauce again! Tuesday and Wednesday’s shorties on the north end of town we’re kinda picturesque, I guess. 🤷‍♀️ Started IL top at @erinmarysimpson’s twice a week gym, Lyon Street Steps then went down into the Presidio and some weird Blair Witch-y fort by the Woodline that was cool and creepy before circling back around to those damn steps! (There’s 292. I counted.)
