It emits an amber-hued glow through the light and in Chinese, it is known by the most lyrical moniker – some call it “the tears of peach blossom”. Its nutritional content is as rich as its appearance. It is Peach Gum (桃胶), surfacing on diners’ radar in recent years for the large amount of collagen it contains. Peach gum is the resin from peach and Chinese wild peach trees, already solidified when it is found. ✿ 银耳汤 | Tremella Soup ・銀耳湯(トラメラスープ)。银耳は中国語で「白木耳」ともいいます。「银耳科，银耳属」(シロキクラゲ科、シロキクラゲ属)のキノコの一種です。半透明の乳白色��クリーム色で、幾重にも重なった花びらのような美しい形をしています。四川省、河南省、湖北省などの地域では、原木に菌を植え付ける「段木栽培」が主流です。また中国各地では原木だけでなく代替材料に植え付ける「代料栽培」の室内栽培が盛んです。それを乾燥させたものが市場に出回っています。银耳には美肌効果と美容効果がある上に、中国医学的にも健康に良い薬膳の食材として愛されてきました。・银耳をじっくり煮込むと、とろみが出てきます。そこに相性の良い「红枣」（干しナツメ）や「雪梨」(梨)を「冰糖」(氷砂糖)を加えて加熱調理すると、滑らかでさわやかな口当たりのスープが出来上がります。
