🇺🇸Today I give you the unmistakable recipe as well as all my little secrets for a successful baghrir. Baghrir or in French “thousand-hole crêpes, they are indeed pancakes cooked on one side, made from semolina. They are honeycombed, so light and delicious. It is truly the ancestral Berber recipe, a recipe handed down from generation to generation. They are called baghrir or ghrayef in Algeria and are also very common in North Africa. I prepare them very often during Ramadan. In Algeria we like to sprinkle them with a sweet sauce called “cherbet” made of water orange blossom, cinnamon, honey and butter, and in Kabylia they are brushed with olive oil and a little sugar and it’s really good that way.
