I am on a Sydney kick. So many possibilities come with cracking Sydney open and exploring SYdney's background. I am confident that the writers will explore this because the show is masterful at answering our questions in the midst of all the chaos. Even on Reddit, there are questions about Sydney.
Since Storer used tattoos to tell the story of the character, as we learned about Carmy, his tattoos started to make sense because we explored his history. The question for Sydney's tattoo sits with us as viewers; it's an ample opportunity to see Sydney and why she wants to get a star, succeed, and how she landed at the beef ready to work with Carmy and reach that dream. What inspired her to stage with Carmy, and what did she mean when she told her father she was at a different place in her life?
Theory one: Sydney, unlike Carmy, experienced failure in her career; some will see she is a quitter, and others will see Sydney put her mental health first. Maybe before Sheridan Road Catering, Sydney had a breakdown dealing with pressure and abuse like Carmy experienced at Eleventh Madison Park
I wonder if, like Carmy, we'll see the cost of committing to your craft to the point where you miss out on life. I'm leaning towards Sydney experiencing a nervous breakdown in the past. Her father is adamant about Sydney not committing to the thing that caused her heartbreak. Maybe Sydney has gone through many ups & downs in addition to Sheridan Road Catering.
The past must be so sorrowful for someone to imprint a symbol representing heartbreak over her shoulder. Maybe putting her all into things is part of Sydney's nature, and her father witnessed such a mental health scare that he's worried when she says she doesn't have another one in her...
But when she shows her dad the potential of the bear on opening night, her dad validates her: this is the thing. Now that her dad sees her as a leader, someone who's stable and knows what they are doing, she's pressured to work at a place that could be the like other places, and this time, she's trapped.
When her dad asks her if she trusts Carmy, this could be in relation to someone in her past experience as a chef, someone who was supposed to be her mentor and someone she could trust who broke her heart. They weren't necessarily partners (whoever this past person was), but it was a power dynamic. A dynamic that's absent in Sydney's and Carmy's relationship. Here are other reasons she probably had a mentor in the past that used her-
When Carmy tells her he's her boss, she considers what to say next. Carmy pulling this power play made her speak up and tell him her needs. Most importantly, she can stand out at The Beef.
Her father gives her a book on leadership. Perhaps this person (a mentor) stole her ideas, kept her from having a voice, and drained her mentally.
To keep it short, Sydney put so much pressure on herself that she ended up having a nervous breakdown and maybe she didn't have a partner but someone who used her, perhaps a boss or mentor who exploited the power dynamic between them.
There's another question that remains: What's with the name of the Catering business she started?
I'm also confident this will be answered because it's written in the original script.
Siderbar/theory: what's up with Carmy asking Sydney about her favorite road? The only road in relation to Carmy that I can think of is Jimmy mentioning the car accident dream. He said they were driving around Lake Genova or something like that. Well, maybe it was Lake Michigan, meaning they were driving along Sheridan Road- maybe the dream was a foreshadow?
Ugh this is all over the place, but I got questions, and I don't know how I'm going to wait for 6 more months.

Carmy does not know how to do a chaos menu

They spent like 5 minutes working on it together. Carmy knows how to pair foods and what makes sense logically on a plate. But a chaos menu requires stepping outside of what's expected, experimenting, pairing two unlikely things together. We've seen Syd do that with the Etoufée and Coca Cola. Even her omelette had a bit of chaos with the potato chips. Carmy is used to cooking by the book. The closest thing they made to chaos was a savory cannoli and broth with grapes. Right now it's still looking very standard Italian. Sydney's touch is just waiting to be added. The thoughtfulness is not fully there yet, probably cause he had been avoiding thoughts of her. The menu is not done and is for sure going to get a revamp in Season 3. If my theory on her mom's family being from the Creole South is right, an Italian/Creole fusion chaos menu would make so much sense both for them and historically speaking as those two cuisines have already meshed. The muffuletta sandwich is famously a mix of those two and would fit perfectly for the window in the back. Also location wise, The Bear is on Orleans street and if Sydney's influence comes from New Orleans. It's just too perfect, yet thoughtfully unexpected.

i have a theory about the bear & carmy’s artistic talent and no one else (that ive seen!) seems to be talking abt this. gotta get it out there so if it happens i can say i predicted it
carmy is going to leave the restaurant industry. we see time and time again that carmy is not happy in the industry, and maybe never has been. he’s traumatized by the fancy restaurant he worked at. he wanted to work at the beef, but only to be with mikey. he took over the beef because he (felt he) owed it to michael — and because he had the skills — not out of some great love of cooking. he only got to his level of skill out of a self-professed “fuck you” to mikey! carmy’s not happy. “this shit’s not fun for me,” he says to richie. make no mistake — he’s really, really good at it. but he’s not happy. the industry brings out the worst version of him, every single time. the stress of the kitchen turns him into the bear from the 1x01 opening, into his mother.
contrast this with syd and richie, tina, even marcus. even under stress, even with everyone yelling at each other, the kitchen brings out the best in them. they’ve improved their skill levels because they feel they owe it to themselves. richie thrives under the pressure of being a concierge, he’s a new man, he wears suits now. tina is a transformed person because she’s begun to believe in herself (and knows others believe in her). marcus (although thwarted by his own hyper-focus sometimes) delights in the craft of being a pâtissier, creates spectacular, thoughtful dishes — he flourishes.
and sydney. sydney, under stress, opening night, is throwing up in the bushes, like we know carmy did in a job that was Bad for him. but it’s not the stress of the job per se that’s getting to syd, but the pressure she’s put on herself to do well enough that her dad will see the bear as she sees it — her very own place in the industry she loves above all else, a place to practice her beloved craft, to take care of people, to pour everything she has into this one thing. it’s not the job making her physically sick, like it did carmy, it’s the pressure of showing how much she loves the job, of her dad thinking she’s doing well enough to deserve to love and devote herself to it as much as she is. and in the kitchen, under pressure, with carmy locked in the fridge, syd doesn’t panic, doesn’t yell and scream — not really. she collaborates with richie, delegates as necessary, steps up — and leads. she shines.
carmy as a chef is doing what he’s good at, performing the skills he’s cultivated. it might be the only thing he feels he’s good at. it’s all he’s ever really known. but it’s not healthy. it’s killing him. it’s ruining his relationships with everyone important to him. he needs to get out.
i predict that sydney and richie will take over the bear. probably with nat’s help behind the scenes. they love it. it gives them purpose. it makes them thrive.
and carmy… will go to visual arts school. (or simply become an artist. do people still do art school these days? if so… like… he could do worse than SAIC)
i don’t think the show has been dropping all these references to carmy’s artistic talent for no reason. the pants he designed (thom browne’s!), the drawings of claire they mention and then flash during his panic attack, the speculative drawing of the bear he gifts michael in 2x06, and the menu drawings that sydney gushes over. the painting he hates that’s hung in the restaurant? could you do a better one, carm?? in the future, will that get replaced with one of yours, carm??? his artistic talent is lingered on too much to not be indicating something about what carmy really loves. a talent he innately has but doesn’t seem to realize the depth of. what he’d spend his time doing absently before he got caught up in the rat race of the restaurant industry. he talks about art like it’s something he’s compelled to do, like it’s something he loses himself in. a flow state.
carmy can flourish too. it’s just that he’s going to need to go somewhere else to do it.

Season 3: Sick Syd Theory
I don't want Sydney to be sick. Don't get me wrong it would make a good love angst story for fan fic but I think the show in general is already tackling a lot of heavy themes and I think having Syd hide an “illness” would be devastating. Sydney is supposed to represent light and hope. Hope for Carmy as a partner and a chance at happiness and for Syd’s chance at redemption and learning how to trust and rely on others.
The only way I can accept a sick Syd is if she overworks herself trying to “care about everything” about the restaurant and the stress caves in on her causing Sydney to stay home and rest. From there, Carmen will have to step up and run some of the dinners without her. It will be a reverse of s2e10. And of course, with a sick Syd, Carmy has to go check on her and from there is where we learn more about Sydney through Carmen’s POV.
Sydney will start trusting and opening up to Carmy more and Carmen will be more protective, proactive, and attentive to Sydney. He’s going to make sure his girl gets her star.
When Syd gets better, both of them work together to create a fire menu.

Season 3 Potential Spoilers in 3, 2, 1
Someone caught them filming a scene with Carmy, Claire, and Richie.
I hear Carmy saying "I didn't fucking do it! You know I wouldn't! I'm sorry!" and Claire says "Yeah you did! You lied about it! What are you doing?"
What could our resident Chill-Cool-Girl-That's-A-Friend be so heated up about that she would yell at Carmy like that accusing him of lying?? 🤔

She knew something was off the moment she walked into that building and saw Sydney. I am so ready for her to figure out all his emotional cheating and put the clues together. Carmy must suffer.
