Went to the grocery store for the first time in a few weeks so I can actually eat some vegetables and good protein this week- this turned into a solid three hours of meal prep 🤷🏻‍♀️.. Even though I’m working at home and have the capability to make my own meals.. at any time through out the day I found myself mindlessly munching or ordering takeout quite often over the last few months soo.. going strict this week and only eating food that’s in these containers (I’ll add condiments when eating them, obviously). Breakfasts are egg muffins made with eggs, salsa + paired with baby potatoes on some spinach. Lunches are - Salads in a jar with cucumbers, olives, pepperchinis and shredded chicken. Dinners are a mix of chicken sausage, with roasted frozen vegetables + 1/2 cup of sweet potatoes. I’ve been pretty silent on the current issues on hand and I no longer want to stay silent just because I am scared of offending others. I wish that the lives of George Floyd, Ahmaud Arbery, Breonna Taylor, and all others weren’t cut so short. I do wish that institutional racism, and the police violence it rises to, didn’t cause their deaths. I wish that all members of our Black community felt safe enough to move around our cities and states without fear. I wish that I didn’t have to try to find the words to write this or figure out how to explain myself in words/writing because I am not good at that. I’ve been given hope this week by seeing all of the peaceful protestors demanding change. I am committed to being part of that change. I believe that everyone has the right to move freely, no matter where they live or the color of their skin. But know that in reality a lot of Black Americans don’t feel safe doing so & that we still still have a long ways to go as a country. This is a reality we should not have to accept. We must do better, I must do better. I am committed to educating myself and being there for others that need a shoulder to lean on. I can’t control what’s going on in the world 🌎 - so I’m controlling what’s going in my mouth. Did a week/few weeks of #whole30 and felt amazing sooo trying to do it again cause it’s June 1st anyway, meal prepped egg muffins on a bed of spinach + potatoes, lunches/dinners the rest of the week are chicken sausage, vegetables + sweet potatoes.
