Salted Caramel Brownies 🍯🧂🍫

These salted Caramel brownies are fudgy & decadent. They were the second most popular bakes when I had @Kookybakes and even won a Great Taste Award. I’ve taken the recipe and down scaled it to a small batch bake that makes 6 generous brownies. These Salted Caramel Brownies will become the only brownie recipe you will ever want to make.

The base of the brownie is very versatile, you can bake it plain or top with what ever you like. Feel free to swap out to gluten free flour if you are GF.

The brownies are best if they are cooled over night so they set up nice and firm. A more detailed recipe can be found over on my @PinterestUK profile (link in the profile)

Ingredients

* 60g unsalted butter

* 50g @tateandlylesugars golden syrup

* 60g caster sugar

* 80g light brown sugar

* 300g 70% dark chocolate

* 2 large free-range eggs

* 1tsp vanilla paste

* Pinch of sea salt

* 50g plain flour

* 1 tin of @carnation_uk Caramel

* Flaket @maldonsalt

Steps

* Preheat oven to 180.

* Place the butter and golden syrup in a saucepan and gently heat till they are melted and combined.

* Add the caster and brown sugar to the saucepan and stir to combine. Continue to cook until the sugar is dissolved and starts to bubble. Set this caramel aside.

* Chop the chocolate and place it in a heat-proof bowl.

* Pour the warm caramel over the chocolate and stir to combine.

* Using a balloon whisk, mix the eggs and vanilla into the chocolate mixture.

* Fold in the flour and pinch of salt. Continue to mix until there are no more streaks of flour left.

* Pour into a parchment-lined pan and smooth into an even layer.

* Placed about 1/2 of the Carnation Caramel into a piping bag. Snip the tip off with scissors and pipe zigzags of caramel along the top of the brownie.

* Using a skewer, swirl or feather the caramel into the brownie. Sprinkle with flakey sea salt.

* Bake in preheated oven for about 20-25 minutes until the caramel is a bit bubbly and the edges of the brownie are crusted.

* Remove from the oven and let cool, then transfer to the fridge overnight before cutting.

Yay! Jianbing have officially landed in london. Sure you could get them before, but really loving these sexy little things from the @pleasantladytrading‘s mysterious hatch on Greek street. What I love most is all the theatrics when they are being made and the different textures. That wanton crunch in the middle gets me every time. Love the next level iberiacab Pork too, in a sweet and rich umamitastis sauce. I’m a sucker for anything lemon meringue and a sucker for good pastry, do this was a bit of a no brainier from @harrods. Buttery pastry filled with a tart lemon curd and finished with a mighty swoosh of torches meringue. It was sweet, but not overly sickly, tart but not puckery. I guess if I was Goldilocks, this would be just right. . Have you been to Harrods Bakery & Roastery department? I think it’s really slick. One month into my funemployment and I’m finally doing all the things I said I’d have tome to do. One example: edit and organise all of my travel pics (not like there have been loads) The Trevi Fountain was one of the main reasons I wanted to come to Rome. I’m a mega fan of cold brew, in fact I prefer it to hot @coffee coffee most days. So that means I’m a mega fan of what @sandows are doing. Was really intrigued by the new cold brew sodas (spice and citrus). The spice is a blend of ginger, orange blossom, black spice, mandarin, a touch of cane sugar and Sandows coffee obvs. It drinks like a light spiced cola with a slight coffee note. It’s a good drink on it’s own, and will really come into itself when used as a mixer. .
