Recently my mom was out of town and I had to prepare something quick and healthy!! Okay, I agree for half healthy!!
I had brought Soya chunks and got an idea to prepare Noodles Voila! Soya Chunks Noodles are ready!! It was wholesome and delicious!!
💕 Boil Soya Chunks by adding small amount of Salt before you mix with Noodles.
💕 I have added 1 chopped onions and 1 Cheese slice, and 1 chopped tomato apart from the Yippee masala.
TRY it once!! It's gonna be worth it!!

Rava Ksheera / Sheera
Today, my mom prepared ksheera made out of Rava. We call the recipe at home "Ksheera" But it is also known as sheera, Rava Kesari, Sooji ka sheera or sooji sheera
Let's have a look into it how to do it!!
Ingredients that would be required:
For roasting:
2 tbsp ghee
7 cashew
2 tbsp raisins
½ cup rava / semolina / suji coarse
Other ingredients:
1½ cup water
½ cup sugar
¼ cup ghee
3 drops orange food colour
½ tsp cardamom powder
How to do it?
In a pan add 2 tbsp ghee and roast 7 cashew, 2 tbsp raisins on low flame. Once it turns golden brown, keep it aside.
Take a Tawa and add ½ cup Rava and roast for 5 minutes on low flame. Keep aside.
In a large Kadai get 1½ cup water to a rolling boil.
Add roasted Rava slowly, stirring continuously.
The Rava will absorb all the water and turn into a lump-free mixture.
Then add ½ cup sugar and continue to stir.
Sugar dissolves completely and gets absorbed by Rava.
Additionally, add ¼ cup ghee and 3 drops of orange food colour. (Adding food colour is completely optional.)
Now mix well making sure everything is well combined.
Cover and simmer for 5 minutes making sure Rava is cooked completely.
Further add roasted cashew, raisins and ½ tsp cardamom powder.
Mix well making sure everything is well combined.
Finally, enjoy sheera

Raw Banana Bajjis

Recently, we had raw bananas at home and my mom thought to prepare a tea snack. and the outcome is here!!!
I loved it!! Do you?
What all do I need?
1 cup Besan
1/4 tbsp salt
1 pinch of Baking soda
1.5 tbsp of Chilli powder
1/4 cup water
1 Raw banana slices
Oil for frying
How will I prepare?
Take 1 Raw Banana and chop them into thin slices in a round shape. And keep it aside.
Take a mixing bowl, add 1 cup of Besan, 1/4 tbsp of salt, 1 pinch of baking soda, 1.5 tbsp of chilli powder and mix them well.
Further, add water little by little as you mix and prepare a thick batter without lumps.
Add raw banana slices for the batter and keep the oil hot for frying.
Coat well the batter on raw banana slices and fry in oil.
Tada! Raw Banana bhajis are ready!

Onion Pakora
It's one of the cold evenings again. It feels like having something hot and crispy snacks. So my mom and I thought to prepare Onion Pakoras. A simple snack that can give a satisfying feeling for a winter evening.

What all do I want?
3 onions thinly sliced
1-tbsp ginger powder
2 green chili finely chopped
Few curries leave chopped
¼ tsp turmeric powder
½ tsp  red chili powder
pinch of asafoetida
1 cup besan/gram flour
2 tbsp cornflour
½ tsp salt
oil for deep frying
Follow these instructions
In a large mixing bowl take 3 thinly sliced onions.
Add 1 tbsp ginger powder, a few curry leaves, ¼ tsp turmeric, ½ tsp chili powder, and a pinch of thing.
Mix them well with Onions.
Additionally, add 1 cup besan, 2 tbsp cornflour, and ½ tsp salt.
Combine well making sure to squeeze onions well.
Without adding any water squeeze out the onions till the moisture is released.
Combine till dough is formed. if onions do not release water, then sprinkle a few drops of water.
Take a ball-sized pakora dough and drop it in hot oil.
Do not overcrowd the oil as it won't get crispy.
Fry on medium flame till the pakora turns crispy and golden brown.
Finally, drain over kitchen paper and serve onion pakora with tomato sauce and chai.

Enhanced Informational tips:
You can also use Rice four for more crispy onion pakoras.
Add only a few droplets to the dough. Adding more water can make dough lose and can absorb more oil than usual.

Banana Cake
We had a lot of Bananas at home and I had to make something out of it! So I decided to prepare a cake. It turned out to be very well actually. This cake is prepared without frosting.

What all do I need?
3 bananas
¾ cup sugar
¼ cup buttermilk
1 tsp vanilla extract
½ cup oil
2 cup  wheat flour/atta
1 tsp baking powder
¼ tsp baking soda
¼ tsp cinnamon powder
pinch of salt
How do I prepare?
Firstly, blend 3 chopped bananas and ¾ cup sugar.
Add ¼ cup buttermilk, ½ cup oil, and 1 tsp vanilla extract.
Further, add 2 cups wheat flour, 1 tsp baking powder, ¼ tsp baking soda, ¼ tsp cinnamon powder, and a pinch of salt.
Sieve all together making sure there are no lumps. mix well.
Transfer the batter to the cake tray or bread mold.
Pat the tray twice to remove the air incorporated into the batter.
Place the cake tray into the preheated oven. Bake the cake at 180 degrees Celsius for 60 minutes.
Further, allow the cake to cool completely and later cut into slices and serve.
Finally, serve the eggless banana cake or store it in an airtight container.

Enhancing Skills
Use all-purpose flour or maida instead of Atta flour for more taste.
You can add choco chips or dry fruits of your choice.
Add one to two tbsp of Cocoa powder to give a chocolate touch.
We had a wonderful cake without frosting for our tea and all time we had it. It's a good companion especially when we are starving.

Cheese Maggi!
I know that majority of all know this recipe. And but I am new to this! I always thought that Cheese and Maggi are not a great combo and now I realize that I am such an idiot not to try them. It heavenly tasted when I tried them! Let's get into it, shall we?

What all I need?
Maggi 2 packet
Taste maker
Peri peri masala 1/4 tbsp
Water 3/4 cup
1 Onion finely chopped
1 Tomato finely chopped
1/2 tbsp of Chilli powder
1/4 tbsp of sugar
1/4 tbsp of Oregano
2 slices of cheese
Oil - 3tbsp
How did I do?
Take a Kadai fry 1 finely chopped onions with a the help of 3 tbsp of oil.
Once it turns to Golden color, add 1 finely chopped tomato and cook them.
Add 1/2 chili powers, 1/4 tbsp sugar, 1/3 tbsp of oregano 1/4 Periperi masala mix, and stir them well. Close a lid for two minutes and let them cook.
Further, add 3/4 cup and get it to a boil.
Add Maggi along with a fast maker and cook them.
Once they are prepared, add cheese slice stir well for two minutes.
The Cheese Maggis is ready!

Cabbage Manchurian!
I always had thought that cabbages are meant to be salads. I don't know why whenever I picture cabbages, I get a bowl of salad's picture too as a link. Didn't happen like that with you?!! Anyway, today's recipe is all about Cabbage Manchurian made with Wheat flour!!! Possible?!!! The proof is in front of you!!!

Let's start?!!! What all I arranged before?!!
2 cup cabbage finely chopped
1 carrot grated
½ tsp red chilli powder
½ tsp finely chopped ginger
2 tbsp corn flour
½ tsp salt
½ cup wheat flour
2 tbsp water
oil for deep frying
Other ingredients for Manchurian Masala:
2 tbsp oil
2 garlic finely chopped
1 onion finely chopped
1 green chilli chopped
1 tsp chilli powder
2 tbsp vinegar
¼ tsp salt
2 tbsp tomato sauce
¼ tsp Pepper powder
1/4 tbsp Chaat masala
1/4tbsp. Oregano
1/4 tbsp. Chilli flakes.
4 tbsp coriander leaves finely chopped.
What did I do with all preparation?!!!
Firstly, take 2 cup finely chopped cabbage and 1 grated carrot in a bowl.
Add ½ tsp chilli powder, ½ tsp ginger finely chopped , ½ tsp salt, ½ cup wheat flour and 2 tbsp corn flour.
Combine and prepare a soft dough. Form a small sized balls.
Deep fry cabbage balls in hot oil till cabbage balls turn crisp and gets cooked well completely from inside. Keep them aside.
Now in a large kadai heat 2 tbsp oil and saute 2 garlic finely chopped.
Saute finely chopped onion, and green chilli.
Further add 1 tsp chilli powder, 2 tbsp vinegar, 2 tbsp tomato sauce, ¼ tsp salt, ¼ tsp pepper powder. 1 tbsp. chilliflakes and 1 tbsp. oregano.
Saute on high flame till the sauce thickens.
Now add fried cabbage balls and mix gently.
Finally, cabbage manchurian is ready to serve by garnishing with chopped coriander leaves.

Extras for Extra flavour!!
Add capsicum for more extravagant flavour.
You can add your favourite veggies for the same recipe.
Don't add too much water to the dough since carrot and cabbage itself watery and it is enough to form a soft dough.
Serve the manchurian hot!!

Karadakaddi! ( Spicy Sticks )
I know that most of you haven't heard of this recipe or there are another names for it! But at our home, this recipe is just getting better and better since childhood. Simple, quick and wonderful snack for rainy days! Shall we start?

What all do we need?
2 cup Besan or gram flour.
1/4 tbsp salt
Pinch of baking soda
1/2 tbsp of chilli powder
1 tbsp of Carom seeds (Oma seeds/ Ajwin)
Water for Dough
Oil for frying

How we do it?
Take a mixing bowl, add 2 cups of Besan, 1/4 tbsp of salt, 1/2 tbsp of chilli powder, 1 tbsp of carom seeds, and pinch of baking soda and mix well.
Add water as required to the dough. The mixture will become slightly sticky. But it is normal and prepare a smooth dough.
Grease the small holed mould with some oil and stuff the dough into it.
Press ans spread the dough in hot oil forming a circle in the oil.
Flip over and fry the other side as well.
When it is golden brown, take out the snack and drain them in a kitchen paper to absorb the excess oil.
Finally, Our home recipe special Karadakaddi is ready!!
Serve hot and store the rest in air tight container.

Enhancers
Add Rice flour to the dough if you need more crispy.
Add turmeric powder for the dark yellow touch up.
