How this first-generation Mexican American college grad paid off her loans in just over two years.
In an effort to help younger generations learn how to be debt-free and combat money taboo among the Latinx community, Sofia Bastida, a 24-year-old first-generation Mexican American, created @savingwithsofie. Through this platform, she shares her experience paying off $120,000 in student loans within the span of 26 months on an income below six figures.
Like many college students, Bastida wasn't aware of many of the basics of finance until she got into student loan debt and felt obligated to pay it off on her own. Without a college fund, Bastida took out federal student loans to attend Drexel University and a Parent PLUS loan to cover the large remaining balance of tuition, which ultimately became a big bulk of her debt load. Unaware of the impact that interest rates have on loans, it wasn't until her first payment was due that she realized how much her debt had increased in comparison to what she had initially taken out.
What started off as a Parent PLUS loan of $75,000 increased to about $90,000 — just while Bastida was in school.
Through her own research, Bastida learned about refinancing as a method to lower the interest rate of her Parent PLUS Loan. She also realized that paying off her loan as quickly as possible was the best way to go about paying less overall, rather than delaying the process, which allows for more interest to accrue. This became her motivation to develop a system to act fast.
The experience itself has taught her how to manage her expenses, and she's now motivated to help future generations of college students take control of their debt. Here are a few lessons she learned along the way.
Research and plan out your expenses
Refinancing student loans doesn't always make sense, but it did for Bastida. She was able to lower her interest rate from 7.8% to 4.98% with a private lender and therefore save thousands of dollars in interest.
Each month, Bastida made at least two loan payments immediately after she received each paycheck. "That way I wouldn't be tempted to spend the money on something I didn't need," she says.
Prior to refinancing, Bastida saved money in a savings account throughout her years in college and though she gave herself permission to tap into this pot of money while paying off her debt, she made sure to keep three months' worth savings in the account.
With a plan (and a healthy dose of urgency) to motivate her, Bastida went about getting her monthly expenses together. She paid less than $1,000 in rent living in Philadephia while sharing an apartment with her roommates. Then, when she landed a job as an early talent recruiter with TD Bank in New York, she managed to keep her rent cost the same by continuing to have roommates.
As for the other expenses, Bastida is a bargain shopper. She worked to keep her fixed expenses low by finding deals on clothes and goods and searching weekly ads. She walks and takes the subway whenever possible to avoid ride-sharing costs and meal preps instead of spending money for lunch. For her social life, Bastida opts for free outdoor meet-ups with friends, making sure they are on board with helping her stick to a budget.
Take accountability of yourself and your debt
Bastida knew she wanted to attend a private university out of state for her own independence. Although unaware of how much the debt would build up throughout the years, she understood it was a challenge she had to face.
"While it's very overwhelming having such a high debt amount, I learned that I am the one who chose to take out those loans and therefore, I must take accountability for those choices I made when I was younger," Bastida says.
But accountability doesn't mean doing it all alone. Debt can take a major toll on your mental health, and it's important to reach out and find support. For Bastida, one of the most important aspects of paying off her debt was being her own cheerleader and having her mother and close friends encouraging her throughout the process.
"Being in debt did take a toll on me when I first graduated from college. I felt stuck and hated hearing negative things from people. I quickly learned that tackling six-figures wasn't going to happen overnight and it sure wasn't going to be easy if I kept allowing myself to hear the negative things others would say."
Don't stop there
Bastida found that there's more to learning about finances than what's taught to you in school and that there are plenty of others who are sharing their knowledge in the space. As ambassador for Snowball Wealth, a platform designed to help those with student debt develop a system to pay off their loans based on their financial background, she continues to share her journey with others.
Just recently, Bastida landed a new job as associate campus recruiter for Black Rock. She wrote on her Instagram account that this came as a result of sharing her successes on LinkedIn — she also managed to negotiate a 30% increase to her base salary. Her goal continues to be teaching others about finances and how they can develop generational wealth.
"Now that I'm done with the loans, I'm keeping my strategy the same in terms of me living below my means and essentially just investing the rest, because I do hope to reach F.I.R.E," she said. "I don't know if I want to retire early because I do enjoy what I do, but I think building wealth is what I like, especially because in my family that doesn't exist."

But, in fittingly Italian fashion, protesters revolted holding large bowls of penne pasta instead of signs. They chanted, “We don’t want fast food … we want slow food!” Today, the Slow Food organization has chapters in more than 150 countries and a presence in almost every state in America.
Our local chapter, Slow Food Middle Tennessee (SFMTN), emerged in 2017. Founded by members of our community who had a vested interest in Nashville’s food scene, they were linked by a desire to connect like-minded people and get involved in the food community. Together, over the course of a year, they worked on their application, created a mission statement and determined the areas they would serve. The board is now comprised of seven Nashvillians who work together to spread the Slow Food movement across our city and beyond. Their chair, Katie Quine, tells us, “Prior to joining the board, I had no formal relationship with food other than the fact that I loved it. I moved to Nashville from out of state in 2017 and felt like it was my responsibility to understand where my food was coming from.”
Slow Food Middle Tennessee’s mission is threefold: to facilitate accessible educational programs; to provide awareness of and equal access to good, clean and fair foods; and to advocate for a healthy, delicious, sustainable and diverse food system for the community of Middle Tennessee. Each of their initiatives touches on one or more of these missions.
The Snail of Approval program honors restaurants committed to “good, clean and fair food for all.” Currently, eight Middle Tennessee restaurants have been stamped with the snail, including Henley, Henrietta Red, Nicky’s Coal Fired, Husk, Margot Café and Bar, The Old School, Pinewood Kitchen and Mercantile and Two Ten Jack. “Being able to shine the spotlight on change-makers in the food community is my favorite part about what we do,” Katie shares. The application for a Snail of Approval is extensive – not just taking into consideration the origin of ingredients (the closer, the better!) but also the wages paid to employees and the environmental impact of the restaurant itself, among other factors. With an ongoing application and nomination process, the Snail of Approval concept continues to grow in our market and is a great marker of the restaurants you can feel great about supporting and enjoying.
In order to facilitate educational programs, Slow Food fundraises year-round for their Community Enrichment Grants, awarded to local organizations with Slow Food ideals. These grants allow smaller organizations to grow and educate others on the paradigms of sustainable food. This year, seven organizations received grants. Green Door Gourmet, an organic produce farm and agritourism center, received the Blossom Award. This award means lower field trip costs for 500 Title 1 school students and the opportunity to educate our youth on everything from the life cycle of a vegetable to farm technology to flavor balance in cooking. Plant the Seed also received the Blossom Award to create an after-school gardening program for third-grade students. SFMTN identifies the organizations with good, clean, fair food for all at their core and supports them both financially and physically.
SFMTN also hosts its own educational events. Members of the organization are invited to one event per quarter that focuses on a different informative topic. Past events have included a “Grow Your Own Cocktail” class with Sara Gasbarra at Nicky’s, a “Slow Wine” tasting with Tavola Wine at The Old School and more. These classes tie in Slow Food ideals as well as Snail of Approval restaurants so that members get a taste (figuratively and, of course, literally) of where the organization is involved in the community and how it is driving its mission forward.
Right now, the team is most excited about their upcoming fermentation workshop benefitting Slow Food Middle Tennessee. Sandor Katz, one of the biggest names in fermentation and a James Beard Award-winning author on the subject, will teach attendees how to prepare traditional Thai sour ribs at The Green Pheasant. Workshops like these provide education to members and non-members alike, all while raising money to put back into other educational opportunities.
“We believe this is an especially important time for the local food movement as the Middle Tennessee region is challenged with adapting to rapid growth and changes,” explains Katie. Actively promoting local, organic and accessible foods, as well as educating our community on why those foods are important, Slow Food Middle Tennessee is an organization that has Nashville’s best interests at heart. World Food Day 2018 has four objectives:
Don’t waste food
Produce more food with fewer resources
Advocate for #ZeroHunger by 2030, and,
Adopt a healthier, more sustainable diet.
All four of these pillars play a role in health, but I’ll focus today on the fourth: the role of food as a major social determinant of health.
Hunger is the ultimate health risk. An unhealthy diet contributes to nearly 700,000 U.S. deaths each year, attributable to heart disease, cancer, and Type 2 diabetes.
Six in ten patients who are admitted to U.S. hospitals are malnourished, according to the Academy of Nutrition and Dietetics.
U.S. hospitals can learn from a German hospital that recently hired a star chef who had been serving up ten-course meals for Berlin’s “gourmands.”
At Berlin’s Havelhoehe Hospital, Chef Patrick Wodni is re-imagining what goes onto an inpatient’s food tray looking beyond broth, boiled potatoes, and Jello.
According to a profile on Wodni in the New York Times international edition this week, Wodni, tiring of cooking for the city’s “upper echelons,” saw an opportunity to cooking healthy food for sick people…and he took it.
It’s interesting to note that Havelhoehe is part of a network of “anthroposophic hospitals” that are embodied in the teachings of Rudolf Steiner, who you may know through his schools or philosophic writings.
This mindset translates into a more integrative medicine approach for patients….with food as a key component to whole-health therapeutics.

Today, October 16, is World Food Day. At Health Populi and THINK-Health, we celebrate the birthday of the Food and Agriculture Organization (FAO), allied with the United Nations. FAO was founded to address malnutrition and bolster a sustainable, healthy food supply for people.
World Food Day 2018 has four objectives:
Don’t waste food
Produce more food with fewer resources
Advocate for #ZeroHunger by 2030, and,
Adopt a healthier, more sustainable diet.
All four of these pillars play a role in health, but I’ll focus today on the fourth: the role of food as a major social determinant of health.
Hunger is the ultimate health risk. An unhealthy diet contributes to nearly 700,000 U.S. deaths each year, attributable to heart disease, cancer, and Type 2 diabetes.
Six in ten patients who are admitted to U.S. hospitals are malnourished, according to the Academy of Nutrition and Dietetics.
U.S. hospitals can learn from a German hospital that recently hired a star chef who had been serving up ten-course meals for Berlin’s “gourmands.”
At Berlin’s Havelhoehe Hospital, Chef Patrick Wodni is re-imagining what goes onto an inpatient’s food tray looking beyond broth, boiled potatoes, and Jello.
According to a profile on Wodni in the New York Times international edition this week, Wodni, tiring of cooking for the city’s “upper echelons,” saw an opportunity to cooking healthy food for sick people…and he took it.
It’s interesting to note that Havelhoehe is part of a network of “anthroposophic hospitals” that are embodied in the teachings of Rudolf Steiner, who you may know through his schools or philosophic writings.
This mindset translates into a more integrative medicine approach for patients….with food as a key component to whole-health therapeutics.
Among Wodni’s innovations in reinventing hospital food, he’s figured out how to incorporate local ingredients like organic vegetables, grass-fed beef and sustainable seafood into the inpatient menus — while keeping costs low, the NY Times noted.
Hospitals have an ally in some innovative food manufacturers who have made a strategic decision to lead at the intersection of medicine and food. Danone (known as Dannon in the U.S.), has honed its portfolio of business to focus on health and well-being, which I’ve discussed here in Health Populi.
Danone works on medical nutrition designed around patients in various stages of diseases including allergy, metabolic disorders, oncology and stroke. The company has quantified cost savings based on fewer complications in these patients, ultimately lowering the risks of mortality. One example of direct cost-savings to the healthcare system is lowering a patient’s length of stay in hospital; in the case of using oral nutritional supplements like the company’s Fortimel, Danone calculated a two-day savings of inpatient costs.

I was in a car accident where the other driver was at fault (under 18 yrs old, no drivers' liscence, no car insurance, failed to yeild). My car was in the shop for 3-4 weeks, I just finished chiropractic care, and my ins. adjuster is going to meet w/ me soon. I have full coverage insurance plus 'uninsured drivers insurance'. So anything my regular car insurance doesn't cover my uninsured insurance pays for anything else. But he also let me know I will be getting 'pain and suffering money. How much should I ask for?!?! I don't even know an estimate of what I should ask for. The worst thing about it is, since the other guy doesn't have insurance, my dealing with my own insurance company. They said after my claim is settled, they will turn around and sue the other driver. I don't want to end up sueing my own car insurance company either. this is my first car accident.""
