Gravadöring (Cured Trout)

My little Midsommar celebration might be a solitary affair (this year!), but I’m still enjoying my favourite Swedish treats, like this beautifully pink and delicately tasty Gravadöring!
Ingredients (a small fillet):
1/3 cup coarse sea salt
1/3 cup caster sugar
1 teaspoon pink peppercorns
4 sprigs Garden Dill
1 (130-gram/4.5-ounce) fresh trout fillet
In a small bowl, combine coarse sea salt and caster sugar, stirring well to mix.
Roughly crush pink peppercorns with a pestle in a mortar, and stir into the salt and sugar mixture.
Finally, finely chop Garden Dill, and stir into the mixture as well, until well-combined.
Unwrap a large portion of cling film, without cutting it. Arrange about a third of the dill salt and sugar mixture onto it, and sit trout fillet halve, skin-side down firmly onto it. Top with remaining two thrids of the Dill curing mixture, fold cling film over and wrap tightly. Place in the refrigerator for at least 24 hours, up to 48 hours.
The next day, remove cure, and wash trout fillet under cold water. It now has taken a deeper pink hue, and the flesh is harder to the the touch. Pat trout dry with paper towels.
Serve Gravadöring with Senap och Dillsås, and Rye Bread or toasted Brioche and a glass of Citron och Dillsnaps!

Trout and Dill Cream Spaghetti

It has been raining cealesslly from the morning, and it doesn’t seem the weather has any intention to improve today! I don’t mind a rainy Summer day --as long as there are not too many of those. First =, it takes care of watering the garden, which, on hot days, is easily thirsty. Also, one can curl up with a book, a hot cocoa even, perhaps, or spend the afternoon watching films or the evening playing board games (or vice versa) without feeling one ought to be outside, enjoying the fine weather! And there is comfort food, too! Like this hearty, albeit light and bursting with fresh, Summer-y flavours, Trout and Dill Cream Spaghetti!
Ingredients (serves 1):
1/3 cup double cream
2 or 3 fluffy sprigs fresh Dill
200 grams/7.05 ounces whole-wheat spaghetti
1/2  teaspoon freshly cracked black pepper
60 grams/2 ounces Gravadöring (Cured Trout)
In a large, deep skillet, heat double cream over medium-high heat until it starts simmering. Tear in Garden Dill, and allow to boil, 1 minute. Remove from the heat, and cover with a lid. Set aside to infuse, at least 30 minutes.
In a large pot of salted boiling water, cook spaghetti according to package’s directions, generally 9 to 11 minutes until al dente.
Return skillet over a medium flame, and bring Dill cream to a simmer. Season with black pepper.
Once the spaghetti are cooked, drain quickly and stir immediately into the skillet, along with 1/4 cup of its starchy water, coating into the Dill cream.
When the sauce has reduced, cut Gravadöring into thin slices and stir quickly into the spaghetti. Remove from the heat.
Enjoy Trout and Dill Cream Spaghetti immediately, with a glass of chilled dry white wine, such as a Chenin Blanc, Chardonnay or Sauvignon Blanc.

Crab and Trout Sandwiches

These hearty and tasty Crab and Trout Sandwiches are a wonderful treat for a lake-side picnic. Lovely on a sunny Summer day! Happy Friday!
Ingredients (serves 2):
a small fillet Gravadöring (Cured Trout)
60 grams/2 ounces white crab meat
a pinch of salt and freshly cracked black pepper
3 sprigs Garden Chervil
3 sprigs Garden Parsley
2 heaped tablespoons sour cream
4 slices Wholemeal Loaf
Remove the skin off Gravadöring, and cut half of it into large chunks. Place Gravadöring chunks into a small bowl, and using a hand-held blender, roughly chop. (You can also use a small food processor.) Add crab meat, black pepper and salt. Finely chop fresh Parsley and Chervil, and add to the bowl, along with sour cream. Give a good stir until well-blended.
Generously spread Crab and Trout mixture onto all four Wholemeal Loaf slices. 
Cut remaining Gravadöring thinly, and arrange slices onto two of the ladden Bread slices.
Sandwich each two crab-and-trout-ladden Bread slices together, pressing gently.
Wrap each sandwich tightly in cling film, if you’re going on a picnic, and chill, until serving time.
Enjoy Crab and Trout Sandwiches on a picnic, with ripe tomatoes, crisps and a lovely view on a Pond or a Lake...
