Ways with leftovers - Sausage Roll Scrolls. Being Boxing Day I find myself at 6am elbow deep in sausage roll mix and pastry. . . I ended up with mot enough sausage mix for one more mini roll of sausage rolls so thinking on my feet I started to spread the leftover sausage meat across the puff pastry instead. I also used the last less than a handful of grated cheese sprinkled over the sausage meat and rolled up as usual. . . I actually made this less than a cup of sausage meat make 15 more bubbly things for the visitors and that makes me happy. . . Upgraded Depression Meals -  Re-fried Baked Bean Quesadillas - From 25c per Quesadilla - 10  mins - (V)

Ingredients
Baked Beans (25c per can)
Wraps (€1.75 for 8)
Cooking Oil
Salt
(Optional)
Onions, Stock, Butter, Tomato Paste, Dried or Fresh Herbs and Spices [Parsley,Oregano,Coriander,Paprika,Thyme,Cumin] Chilies in whatever form, Nuts, Fresh or Frozen Veg, Lime Juice, Leaves.
1. Preheat a neutral oil on high in a saucepan. Use roughly a 10 to 1 ratio of beans to cooking fat. Light and start pre-heating the grill. 
(Add Diced Onions or Stock to the oil at this point)
(Add Butter to make the mixture creamier and richer)
2. Drain the beans of all of their sauce. 
3. Add the beans to the oil and mash them with either a potato masher or a fork. Keep going until you have a thick paste which still has bits of beans visible. This should only take a few minutes. The beans should look shiny and glossy. If their texture and appearance is still a little powdery just add more of the cooking fat a little at a time until the mixture is rich but not oily. 
(Add your Spices and Dried Herbs at this point. Be generous.)
(Add Tomato Paste to amplify the savory flavors)
(Add Lime juice, this will help balance any spice in your mix. This is a great way to save the mix if you make it too spice. You can buy shelf stable lime juice pretty cheap in most supermarkets, its perfect for a dish like this.)
4. Taste, adjusting the salt and spice until the mix is rich and strong. Take the mixture off the heat.
(Once the mixture is off the heat, you can add Frozen or Fresh Herbs, Soft Fresh or Frozen Veg like corn or peppers including leftovers, Crumbled nuts)
5. Add the bean mixture to the wraps. Fold over the wraps and grill each side for a few minutes. Brush some extra oil over the top to get them nice and crispy. 
(Add cheese, just melt it under the grill for a minute before you fold the wraps.)
(Add some salad leaves here, just not anything that will taste bad if it wilts. Rocket and Spinach will do well)
(Add extra Hot Sauce or Lime Juice here.)
You can make the basic version of this recipe super cheap, quick and easy. The recipe and the suggestions are just meant to give you some inspiration and motivation. The aim here is, if you feel like you don’t have the spoons to cook for yourself to find the way to use the least spoons to feed yourself as well as you can. These are easy to make in bulk, just fold them and stack them in the fridge. The bean paste keeps great in the fridge and is a surprisingly versatile base to throw into a lot of meals. You can use any tinned bean for this, but baked beans are just cheap, handy and versatile.

Good morning guys. Do you cook ad hoc from leftovers? I did make a quick dish in my oven. Just mixed up some stuff and voila. So, I’m going to try to name this dish now. Let’s call it Chicken Kiev in veggies and spices by Kristof :) s o it takes between 20-30 minutes in the oven. You use half of butternut squash and one potato 🥔. Dice them both. Put everything on the baking tray , use spices like garam masala, shawarma, tarragon, diced garlic cloves (I used two), salt, black pepper, and splash a bit of olive 🫒 oil. On the top or aside place 2 chicken Kievs. It cost me £1.50 @coopuk to get two of them with 30% discount. Cook for 22 to 30 minutes in 180-200’C Dish is really cheap especially if you use leftovers from previous cooking as me. This little number was the new favorite of my school chums. It's Pineapple Chicken Teriyaki on coconut rice with sesame cucumbers. To keep to the budget I used ground chicken. It made the meal stretch to satisfy every kidlet that wanted a bowl full. The joy of the day was how they mowed through the cucumbers. I even made a few jars of dressing for the kiddos to take home. 😊 It was so well received I made it for dinner. I’m not allowed to go anywhere. Hooray high risk! All the grocery delivery spots have been gone for a month, and we just got waitlisted for sometime this weekend via Instacart delivery. Our produce delivery was also 5 days late and JUST arrived today. In the meantime it’s been clear the fridge and pantry week 😂 here’s the best #QuarantineCooking attempt I’ve had all week. It still doesn’t look that great!? Life be real 😂 This is a tuna salad made w avocado topped with pistachios , a side of cheese, and a teensy mandarin orange. The tuna salad has fresh avocado (the tiniest one from the produce delivery 😂) and fresh diced cucumber. Pro tip: the oil packed tuna smells less gross and is much richer in flavor and gets a creamy texture when mixed with the avocado and a touch of high quality mayo. I won’t eat canned tuna. I was a pet sitter of one too many felines 😂 can’t stand the smell. It’s cold, it’s wet, it’s miserable and dark at 4.30pm. We need comfort food for dinner!!! . . So after rummaging through the cupboards and fridge I found a 500g pack of belly pork pieces, 2 brown onions, 4 celery sticks, 6 soggy looking carrots, 2 tins of chopped tomatoes, 1 tin of veg soup, a squeeze thingy of tomato paste, 2 Tablespoons of mixed herbs and let it all bubble away before adding 2 litres of hot water from the kettle and added in bestest favourite pasta ever from @yorkshirepasta this time I used the penne and it’s utterly Perfick!!! . . All done in the slow cooker in 1 1/2 hours ready for a Tanny to get home. Leftover rice from a curry dinner at a restaurant that I popped in my tiffin, mixed with hummus that was going to be thrown out after a class snack time, plus the floppy broccoli from the bottom of the fridge. #Lunch. I know some people find it embarassing taking food home from restaurants, or think it's only worth it if there's a whole meal. I carry a container with me 24/7 and will take home anything, even if it's just a few tablespoons of rice after a curry. It means I never feel the need to over-eat to avoid wasting, and I have all kinds of things to bulk out or add to meals.
