Some truly gourmet low spoons shit here tonight, after getting in an evening grocery delivery. 😅
We've got a new tub of potato salad (which is actually pretty good premade here, contrary to my expectations!) of a brand I hadn't tried before which I added some chopped pickles into, some leftover pizzasallad from the other night that was in the way in the fridge, and chicken nuggets.
The "crispy" bag on the left has more panko-textured GF-by-default breading, made out of corn and rice. They've always been fine for me in past. The "original" version on the right with the usual finer crumbs is for him. They're the same price for roughly the same size packages, and I actually got 'em as a twofer deal.
Add some sauces of our choice, and that ought to stand in for a meal. ¯\_(ツ)_/¯

Satsuma and Apple Red Cabbage Salad (Vegetarian)

After the light dusting of snow we had yesterday, today was mostly sunny with gorgeous blue skies, and I fancied something vibrant, crunchy, full of colour and vitamins for lunch. This Satsuma and Apple Red Cabbage Salad, which also covers no less than three of your five-a-day, fills the brief beautifully! Happy Tuesday!
Ingredients (serves 1; or 2, as a side):
a satsuma
1 tablespoon caster sugar
1 tablespoon apple cider vinegar
1 heaped teaspoon Dijon Mustard
1 1/2 heaped tablespoon crème fraîche or sour cream
1/4 of a red cabbage
1 apple, rinsed
Cut satsuma in half like you would a grapefruit.
Thoroughly squeeze the juice of one of the satsuma halves, and pour into a medium bowl. Stir in caster sugar until mostly dissolved.
Then, add apple cider vinegar and Dijon Mustard, whisking well to combine.
Gently stir in crème fraîche until you have a smooth, slightly thick dressing. Set aside.
With a sharp knife, thinly chop red cabbage.
Quarter and core apple. Using the coarse side of a box grater, grate the apple.
Add chopped red cabbage and grated apple to the bowl, and toss well to coat in dressing.
Peel remaining halve of the satsuma, divide the quarter halves, removing pips if any, and toss into the salad, too. Spoon into serving bowl and chill, at least one hour in the refrigerator.
Enjoy Satsuma and Apple Red Cabbage Salad on its own, or as a side to Poached Salmon or Veal Schnitzel.

Another of my go to favorite salad recipes is my Asian cabbage slaw which is also really easy to make in a matter of minutes.
bag of pre-washed organic coleslaw mix tossed in toasted sesame oil, soy sauce, rice wine vinegar, powdered garlic, onion, ginger, and pepper and sesame seeds. Add bell peppers, snap peas, cranberries, mango, avocado, peanuts, and cashews for lots of really great flavor. Tonights dinner was the fast version skipping all the add ons except for mango and peanuts.
