Lemon and Mint Creamed Cucumbers

A fragrant and refreshing Summer Salad, these Lemon and Mint Creamed Cucumbers can be eaten on their own, as a side to ss with toasts, or as a side to grilled meat!
Ingredients (serves 2):
1 large Green Onion
half a dozen large leaves fresh mint
half a large lemon
a pinch of salt and freshly cracked black pepper
1 1/2 tablespoons canola oil
2 heaped tablespoons sour cream or crème fraîche
half a large cucumber, rinsed
Finely chop Green Onion, and add to serving bowl, saving a bit of its green part for garnish.
Roll mint leaves together, and chop finely. Add chopped mint to the bowl.
Grate in about two teaspoons lemon zest. Season with salt and black pepper.
Stir in canola oil, mixing well.
Then, add sour cream, and give a good stir.
Finally, thoroughly squeeze in the juice of the lemon halve, stirring until well-combined.
Cut cucumber into thin slices. Add cucumber slices to the bowl, tossing well to coat generously.
Place in the refrigerator, to chill, at least one hour.
Serve Lemon and Mint Creamed Cucumbers cold, sprinkled with reserved chopped green part of the Green Onion.

An unintended consequence of partial hydrogenation of the alkene groups in polyunsaturated oils is the isomerisation of a small proportion of the cis alkenes to trans alkenes. These are known as trans-fats and are of concern as they are believed to increase the risk of coronary heart disease. These trans-fats do occur naturally, although only to a small extent. Canola oil naturally has a relatively high level of trans-fats, but most other natural oils have very little trans-fat. Lamb and mutton also naturally contain moderate levels of trans-fats.

Cheesy Black Bean Quesadilla
Chef’s Note: I made the mistake of no avocado. It just needs something added to it. Very simple, might argue too simple, but it has good ratios
Ingredients
15 ounces black beans, drained and rinsed
1/2 cup shredded Monterey jack or pepper jack cheese
1/4 cup + 1/4 cup salsa
4 medium (8-inch) whole wheat tortillas
2 tsp canola oil
1 avocado
Mexican crema or sour cream, for serving
Instructions
1. In a medium bowl, mix together black beans, cheese, and ¼ cup salsa.
2. Arrange tortillas on a work surface. Spread ~1/2 cup filling evenly on half of each tortilla.
3. Fold tortillas in half, gently pressing to flatten.
4. Heat 1 tsp oil in a large nonstick skillet over medium heat. Add 2 quesadillas and cook, turning once, until golden on both sides, about 4 minutes total. Transfer to a flat plate and cover with foil to keep warm.
5. Repeat with the remaining 1 teaspoon oil and quesadillas.
6. Serve the quesadillas with avocado, the remaining salsa, and Mexican crema/sour cream

Chilli and Manuka Honey Lamb Chops

These mouth-watering Chilli and Manuka Honey Lamb Chops make a beautiful and delicious lunch on a warm and sunny Sunday! Have a good one!
Ingredients (serves 2):
1/2 teaspoon dried thyme
1/4 teaspoon dried sage
1/4 teaspoon dried marjoram
1/4 teaspoon ground hot chilli
1/4 teaspoon salt
1/2 teaspoon freshly cracked black pepper
1 heaped teaspoon pure raw Manuka Honey
1 1/2 tablespoon canola oil
2 beautiful (180-gram/6.35-ounce) lamb shoulder chops
In a large, shallow plate, combine dried thyme, dried sage, dried marjoram, ground chilli, salt and black pepper. Give a good stir, to mix.
Add Manuka Honey and canola oil, whisking well, until well-blended.
Add lamb chops to the plate, and thoroughly coat them and rub them in the marinade.
Place in the refrigerator, and allow to marinate, at least one hour (but the longer, the better!)
Heat canola oil in a large frying pan over medium-high heat. Once hot, add marinated lamb chops, and cook them, about 5 minutes on each side, turning them and glazing them with leftover marinade often, until well-grilled.
Serve Chilli and Manuka Honey Lamb Chops hot, with Lime and Manuka Honey Mint Sauce and Lemon and Mint Creamed Cucumbers, and a full-bodied red like a Waiheke Island Pinot Noir.

Apple Walnut Cake
Chef’s Note: Reminds me of carrot cake, but isn’t.

Makes: 9x13-inch, about 24 pieces
Ingredients
Cake
1 2/3 cup white sugar
2 large eggs
1/2 cup canola oil
2 tsp vanilla extract (4 tsp imitation)
2 cup all-purpose flour
2 tsp baking soda
1 1/2 tsp ground cinnamon
1 tsp salt
1/2 tsp ground nutmeg
4 apples, unpeeled, chopped (~4 cup)
1 cup chopped walnuts
Frosting & topping
3 ounces cream cheese, softened
3 tbsp unsalted butter, softened
1 tsp vanilla extract
3/4 to 1 1/2 cup powdered sugar
(opt.) 1/2 cup chopped walnut, for topping
Instructions
0. Chop up your apples.
I cut into 12 slices, top to bottom, then each slices into 4 or 5 pieces. Makes for a lot of apple
0. Preheat oven to 350°F
1. In a large mixing bowl, beat sugar and eggs together.
I used a hand whisk, and that worked fine; you don’t need electric beaters
2. Add oil and vanilla. Mix well.
3. Add in the flour, baking soda, cinnamon, salt, and nutmeg to the mixture. Mix well.
4. Stir in apples and walnuts.
You do have enough batter to coat everything. Try to make sure there are no large spots of pure dough, but that most dough is stuck to apple.
5. Pour into a greased 13x9-inch baking dish
6. Bake at 350°F until a toothpick comes out clean, 50-75 minutes. Cool on a wire rack.
Baking time will depend on the moisture in your apples. My apples, gala, needed the 75 minutes
7. For frosting, beat cream cheese, butter and vanilla in a bowl. Gradually add powdered sugar until the frosting has reached desired sweetness / spreading consistency.
8. Frost cooled cake. If desired, top with additional chopped walnuts
